Thorn Clarke Shotfire Shiraz 2014

WEBSITE ONLY CLOSEOUT SALE

Last of the vintage!

On release Thorn Clarke Shotfire Shiraz has a deep purple colour with a red hue. The wine has a lifted nose of clean blackberry fruit accompanied by mocha and spice. The palate displays sweet fruit characters dominated by blackberry and plum, complimented by cinnamon, clove and nutmeg characters. The wine is full bodied with natural tannin and oak maturation adding texture and complexity to the wine.

Spring rainfall was well below average with several days reaching 30°C. The growing season had even temperatures and little rainfall. Ripening was slow and steady leading to the development of good tannin structure and fruit characters.

The grapes were de-stemmed into fermenters. Ferments were pumped over twice daily to maximize color, tannin and flavor extraction. Cooling is used to ensure ferments remain in the 22-25°C range which allows maximum fruit expression in the wine. Pressing occurs approximately seven days after fermentation commences and the wine is then filled to American oak to mature (14 months in 40% new American hogsheads with the balance going into 2nd and 3rd fill barrels).

"Offers fresh spearmint overtones to the chocolate-laced plum and black cherry flavors. Features fleshy tannins and plenty of gusto on the finish. Drink now through 2026. 18,000 cases made. –MW"

Review:

(aged in new and used French oak for a year): Youthful purple. Expressive aromas of ripe blueberry, dark chocolate and incense, with a peppery nuance adding urgency. Densely packed but lively as well, with hints of lavender, mocha and black pepper complementing pliant black and blue fruit flavors. Closes with building sweetness, a touch of smokiness and even tannins that fold slowly into the wine's plush fruit. - Josh Raynolds

Thorn Clarke Terra Barossa Shiraz 2010

Thorn Clarke Terra Barossa Shiraz 2010 is made from 100 percent Shiraz.

HARVEST DATE: March 2010
BOTTLING DATE: March 2011
pH: 3.45
TA: 6.87g/l
ALCOHOL: 14.5%
VINTAGE CONDITIONS: The 2010 vintage followed good winter rainfall in 2009 and allowed the vineyards to commence the 2010 season with good soil moisture levels. This soil moisture, combined with moderate weather conditions throughout most of the growing season allowed for good fruit set and canopy development. In summary an excellent vintage, with very little extreme weather resulting in fantastic color and flavor in red varietals, and excellent acid and flavor
profiles for whites.
WINEMAKING: The grapes are crushed and de-stemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice
daily to maximise color, tannin and flavour extraction. Cooling is used to ensure ferments remain in the 22-25 degrees Celcius range which will allow the fruit to display maximum fruit expression. Pressing then occurs approximately seven days after crushing and the wine is then put into predominantly American oak to mature.
BARREL AGING: 12 months in American oak.
TASTING NOTES: The color is a deep inky purple. The nose is a complex mixture of ripe blackberry and plum fruit with a dash of creamy vanillin oak. The palate is medium to full bodied which starts with some sweet plummy fruit, the flavor then builds in the palate to provide an explosion of raspberry flavors. There is some lovely mouth coating tannins which combine with dark chocolate oak and fruit to provide a great depth and length of flavor.

Review:

Seems to have looked to McLaren Vale and borrowed some of that region's dark chocolate signature, but also added the depth of Barossa Valley shiraz in a top vintage, and thrown in a bucket of firm, savoury/earthy tannins for good measure. Demands further time in bottle. - James Halliday"- Australian Wine Companion (Issue 2016), 93 pts

Supple  and expressive, with a layer  of firm  tannins,  showing tea leaf and tar overtones to the dark berry and spice flavors. Comes together harmoniously on the long,  expressive finish. Best from

(raised in 40% new American oak barrels for 14 months): Inky ruby. Spicy, exotically perfumed aromas of cassis, cherry liqueur and fresh violet are complicated by a smoky mineral quality. Sappy, sweet and expansive, offering deeply pitched flavors of bitter cherry, dark berries, vanilla and espresso. The vanilla note lingers on a long, seamless finish that shows just a hint of supple tannins. - Josh Raynolds" - Vinous (March 2016), 92 pts

Ron Thorn Shiraz 2014

Deep red with a slight purple hue on release. The wine has a rich mix of dark chocolate infused with coffee bean and black liquorice, then scents of tar, aniseed, raw (pure) soy and black olive on the nose. The palate is expansive, and yet balanced and finessed. An amalgam of dark berried flavors and textural sensations. The 100% new oak is completely absorbed, meshed with ripe tannins, completing a palate of impressive length and youthfulness.

Parcels of fruit for this wine were identified in the vineyard by the winemakers. Daily fruit inspection led to the fruit being harvested at optimum flavor ripeness. The fruit was harvested at night and quickly transported to the winery. The fruit was destemmed to 6T open fermenters for fermentation. A Shiraz specific yeast was selected to ferment the wine and fermentation was carried out at a maximum of 28°C. The fermenter was manually pumped over twice daily in the first half of fermentation to give the winemakers control of color, flavor and tannin extraction. Pump over regimes were adjusted toward the end of fermentation to suit the tannin and flavor extraction of the wine. The cap was completely broken up on each pump over. The wine remained in fermenters for 6-8 days (dependent on parcel) before being pressed, inoculated with malolactic bacteria and filled to American oak (100% new barrels). The wine was racked post malolactic fermentation and returned to the same barrels. The wine was topped every month and after six months racked and returned to the same barrels again. Prior to bottling the parcels were emptied from oak and blended. Minimal fining and filtration was carried out prior to bottling.

Review:

Thorn Clarke has taken its Shiraz to a new level with this single-vineyard wine, bottled only in exceptional vintages. The 100% new American oak gives this a classic Barossa profile, starting with vanilla, cedar and maple syrup-like notes and flowing seamlessly through ripe blackberry and plum flavors. It's full bodied, lush and creamy in texture, with a long, velvety finish. Drink now–2025, possibly beyond. - Wine Entusiast 96 Points

Thorn Clarke Milton Park Chardonnay 2015

Thorn Clarke Milton Park Chardonnay 2014 grapes were crushed, destemmed and then pressed using a membrane press. Pressings were not used. Fermented using French Yeast at 12-15 degrees Celcius. The ferment was kept slow and cool to retain all the natural flavors of the grape. The wine was then racked and filtered. Bottling took place soon afterwards so the wine was a true expression of the grape and the terroir from which it was made.

The color is a rich vibrant green. The nose shows lifted clean, sweet fruit of apricot and peach. The palate is medium to full bodied and exhibits predominantly peach and nectarine flavors, with cloves and cardamom evident from the use of a small amount of French oak. The wine finishes full and long with a nice balance of sweet fruit and creaminess.

Thorn Clarke William Randell Cabernet Sauvignon 2014

‚ÄčThorn Clarke William Randel Cabernet is made from 100 percent Cabernet

Deep red in colour. The nose is lifted and expressive with lovely Christmas cake and mint characters along with black olives and tobacco leaf adding complexity. The palate is medium to full bodied with blueberry and hints of cassis as the primary fruit flavours. The palate has great poise with the vibrant fruit, spicy French oak and fine tannin structure all wonderfully balanced, and the wine finishes with great length of fruit.

Review:

Eden Valley Cabernet Sauvignon from an excellent vintage. Deep, dark fruit crashes over firm, ropey tannin. To say that this will live and mature over a long period is an understatement. Mint, cassis, clovey oak, undergrowth. A substantial wine with a substantial future. - The Wine Front 94 Points

Raymond Chan, NZ, April 2016

Dark, deep, near saturated black-red colour with a touch of garnet on the edge. The nose is very firm and tightly bound with concentrated aromas of blackberry fruit harmoniously entwined with layers of menthol and cedar, revealing nuances of eucalypt, black olives and cassis. The aromatics build in intensity with aeration. Full-bodied, the palate features a firm and tightly concentrated heart with layers of rich and lusciously sweet, blackcurrant fruit with cassis, blackberries, menthol. mint and cedar. The palate is well-constructed with plenty of fine-grained tannin extraction forming a firm and dense core, with integrated acidity lending tension and drive, and enhancing the fruit sweetness. The structure carries the flavours to a long, lingering finish. This is a finely concentrated, firm, but fine-grained Cabernet Sauvignon with sweet blackcurrant fruit and layers of cassis, menthol, mint and cedar. Serve with lamb and beef, and with hard cheeses over the next 7-10 years. Fruit from ‘Milton’ Park, Eden Valley, fermented to 14.5% alc., the wine aged 16 months in French oak hogsheads. -18.5/20 Raymond Chan, NZ, April 2016

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest. 2011 Vintage The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed vineyards. The dry and sunny weather of the second half of August brought the grape good maturity. The harvest began on September 2 under clement skies.
