Harvest: Occurs in 3 stages. Macabeo within the first fortnight of September, Xarello during the second fortnight in September and Parellada within the first fortnight of October.
First fermentation and vinification: This is a "Methode Traditionnelle" with
soft pressing of the grapes to obtain 60% of the must (flower must). It is decanted and fermented with controlled temperatures of 18ºC for 20 days until it fully develops the primary aromas of the grapes.
Secondary fermentation: takes place in the bottle for 40 days at a temperature of 16ºC and final ageing for 20 months. Residual sugar: 7 gr. per litre.
Color: Pale yellow with green tones. Shiny and clear.
Aromas: Powerful in the nose, clean. Ageing aromas.
Taste: Soft and well structured, long aftertaste and good balance of acidity and sugar contents.
Gastronomy: It should be served chilled between 5ºC and 7ºC. A flute type glass is recommended. Excellent with pasta, red and soft meats and white fish.Painous is unique in that it is a Cava-Joven style sparkling wine, meaning, the wine receives the minimum aging of 9 months. This allows crisp, fresh aromas and flavors to be expressed. It is delicious for aperitif.

The Louis de Vernier Painous Estate
It was at the turn of the century when the Masachs family started to cultivate grapes in their estate located in Vilafranca del Penedès, a wine area par excellence, where the growing of grapes had been already introduced in times of the Roman Empire. This family owned winery was founded in the 1930's. Today the third generation of Masachs (Painous is the maiden name of the current owners mother) run the operation. Currently, Masachs ranks fourth in production at 208,000 - 240,000 cases of Cava yearly. The export 15% and sell 85% in Spain. Mr. Josep Masachs Llorach, a man with strong convictions, great character and dedicated since his childhood to the growing of grapes, founded Cavas Masachs within the decade of the twenties producing cava in the best tradition of craftsmanship and with a limited production meant, basically, for his own consumption and to make it known to his closest friends. Later, his son, Mr. Josep Masachs Juvé, went on with his father´s job under the same policy of very limited production and craftsmanship combined with hard work with the aim to improve the quality of his cavas. In 1977 Josep and Joan Masachs start a new guideline and launch a new line of cava to the market based on the experience and know-how of their ancestors. Little by little, the excellent quality of the cavas made by these young producers is known both in the domestic and international market, thus rewarding their efforts and dedication. As a result of these achievements and the growth in the demand for their products, the production facilities used by their grand father become too small and outdated. This compels Masachs to set up new facilities in 1985 in the Montsarra estate, situated in the municipality of Torrelles de Foix, and provided with the ideal structure for the making of the best cavas. Nowadays, Cavas Masachs continue the production of cavas and wines in their Montsarra estate with the same enthusiasm in order to improve the quality initiated by its founders.
The Louis de Vernier Painous Vineyards
Cavas Masachs owns 43 hectares of grapes: Maccabeo, Xarel.lo, and Parellada, which they use for part of their production, about 30%.
The Catalan country of El Penedès, which breathes the Mediterranean air and spreads over the north-west towards the Montserrat mountain range that protects it from the north cold winds, is situated about 40 Km. south of Barcelona and is the cradle which holds the 42-hectare estate, in the centre of which the Masachs cellars are located.
An area which, thanks to the generosity of nature, is endowed with all the factors which favour wine-growing in the best of conditions. The characteristic of its Mediterranean location, combined with those of the soil and subsoil, an especially benign climate both in Winter and Summer and an average annual rainfall of 525 mm., make the Montsarra estate a true paradise for wine-growing. A privileged location which, year after year, allows Masachs to harvest its most prized fruit: its reputation and consideration as a great brand. The mild winters protect the vineyards in lethargy from the frost and the north cold winds, which can severally damage the grapes. The winter rains help a regular sprout of the grapes, later intensified thanks to the water retained in the subsoil. As the Summer approaches, the sunshine and the low humidity regulated by the mild winds from the Mediterranean help the balanced enrichment of sugar, acid and primary aromas, basic for the making of Cava
This organic natural cider from Astigarraga in the Basque Country is produced from freshly pressed juice that is fermented by native yeasts in large wooden casks (kupelas) for a minimum of 4 months. The cider is uncarbonated and unfiltered.
A typical golden color, intense, deep and fruity aromas, the cider is medium-bodied and fresh on the palate with tangy flavors and a slight fizz.
Pairs with cheese, quince paste, shellfish, grilled beef. Serve chilled.
Rubus Brut Blanc de Blanc NV is made from 1/3 Ugni Blanc, 1/3 Airen, 1/3 Muscat .

Elegant pale yellow color with fine bubbles. Floral and fruity on the nose, with aromas of fresh butter and cake. On the palate, the wine is crisp and harmonious - a delightful sparkling wine.
Machine harvest. The base wine is fermented at a low temperature. The second fermentation takes place at 14°C for 2 weeks, followed by dosing.
Rebuli Prosecco is a noble wine with a bright straw color, made from a selection of Prosecco grapes, which highlights the flavors and perfumes of the area. It is ideal for important occasions and as an aperitif. It is also excellent with risotto and noble meat.

This large Spumante estate with just over 100 acres of vines produces high-quality Prosecco. The non-vintage Rebuli Prosecco di Valdobbiadene Extra Dry is light-bodied and flowery with plenty of white peach, orange and pineapple notes in its exotic aromatics and flavors. Reverdy Jean Sancerre Rose is made from 100 percent Pinot Noir.
Color: Pale salmon pink color
Nose: delicate aromas of roses and orange blossom that will transform into gooseberry and peach blossoms as the temperature in the glass rises.
Mouth: The palate is crisp, lean and elegant, but the flavors are quite persistent with cherry, blackcurrant,apricot and red currant aromas.
According to the Sancerre AOC regulation, maximum yield authorized for the rosé is 55 hl/ha.

Boizel Grand Vintage Brut is made from 50% Chardonnay, 50% Pinot Noir.
BACKGROUND
In 1834 the Boizel House was established in Épernay, the heart of Champagne, by a family passionate about the wines of its region. TERROIR & VINTAGE NOTES
Pinot Noir and Chardonnay grapes for the production of the Grand Vintage wines are sourced from Grands and Premiers Cru vineyards within the villages of La Montagne de Reims (Pinot Noir) and the Côte des Blancs (Chardonnay). Pinot Meunier is sourced from the best sites within the Vallée de la Marne.
All wines are aged sur lie in Boizel’s historic chalk cellars beneath the Avenue de Champagne for a minimum of 3 years, climbing to 15 years and above for the best vintages.
WINEMAKING & AGEING
A unique expression of the vintage, the Grand Vintage is only produced in the best years. This cuvée is a blend of 50% Chardonnay from the Côte des Blancs (Mesnil sur Oger, Oger, Avize, Vertus) and 50% Pinot Noir from the Montagne de Reims (Mailly, Bisseuil, Chigny les Roses).
The wine was aged 8 months in stainless steel vats. Post second fermentation, the wine was aged for 8 years on its lees.
TASTING NOTES
Due to the long lees aging, almond, frangipane, candied orange and brioche aromas are rich and balanced. The palate is complex and mature, with the silky perlage supplying acidity and lift. Elegant pastry notes rounds out the finish.

Disgorged in October 2014, this smooth, now mature, wine has flavors of yeasty toastiness and a tight, mineral structure. Sliced apple and lemon zest still give freshness. Behind the fruit, crisp texture and a steely edge await. It is beautifully balanced, rich while dry and ready to drink. ROGER VOSS

This sparking wine is fresh and fruity. Rich and easy to drink, which makes it a wonderful aperitif. For the aficionados this is an excellent food friendly wine. Its quality makes it a great alternative to Champagne.

Cheurlin Thomas 'Celebrite' Blanc de Blancs Extra Brut
An elegant soft gold color with a refined ring of bubbles. The nose reveals fruity aromas of a complex wine. The mouth is fresh and balanced with a woody finish. A great character with a perfect balance.
Cuvee harvested on the south facing land. The limestone base of the seat is emphasized by a thin bed of Kimmeridgian marl leaving a grayish underground, earth colored by white marl, ground vineyards par excellence. The wine is matured in oak barrel and pipe, second fermentation in the bottle with a minimum of 18 months aging. Reflects the white varieties of the Barrois hillsides.

Ageing: This wine spends a minimum of 45 months on the lees at a consistent temperature of 14C before degorgement.
Tasting: Delicate light gold color with a lime-green hue. The nose is fresh, lemony and floral with notes of green apple, followed by yeasty and biscuity aromas brought by the lengthy maturation on the lees. Very fine bead of bubbles with a persistent mousse. Opulent on the palate, this wine shows a harmonious balance between fresh zestiness, mineral complexity and a warm breadth of leesy creaminess. It promises to develop great texture over time.

A blanc de blanc with the heart of Chardonnay, the NV Brut Chardonnay has focused citrus tones on the nose with notes of yellow pear and green apple. The oak is subtle here, with a solid beam of acidity through the mid-palate. The wine is thoughtful and focused, and the finish leaves my mouth watering; there is serious acidity here, and they are doing it right. Colmant is the little guy doing some really great things— quietly focused wines, with serious aging potential. Keep this small producer on your radar. Exceptionally aromatic with aromas of violets, hints of blackberry, blackcurrant and black plum on the nose. There is some spice that is balanced with fresh acidity and minerality. A long finish with ripe but firm tannins.
Dow's Senhora da Ribeira can be enjoyed anytime and pairs wonderfully with chocolate desserts and soft cheeses like creamy Stilton or Roquefort.

Rich and fruity, this wine is packed with intense black-currant flavors. It is perfumed, ripe with a good tannic background. The density of the wine and the firm structure point to a long aging process. Drink this beautifully structured wine from 2026.

Winemaking:
Senhora da Ribeira has one of the most advanced specialist wineries in the Douro, combining the best of traditional winemaking practice, evolved over centuries, and the latest state-of-the-art automated systems. Three granite ‘lagares’ for foot treading are complemented by three ‘robotic’ lagares, designed by the Symington family and installed in the quinta’s winery in 2001.
It has long been recognised that traditional treading produced some of the finest Ports, but there are some drawbacks involved in traditional treading; temperature control is difficult, there is a limit to how long people are willing to tread and they need to sleep. The winemaker’s options are therefore limited, he or she cannot order treading at different times through the night, or pull people off the picking team at will. Furthermore, emptying the traditional lagar takes a long time; in the meantime the fermentation process is accelerating away. A further handicap arose over recent years, when an increasing scarcity of labour obliged producers to look for less labour-intensive vinification solutions. The Symingtons opted to devise a mechanical means of replicating the proven method of foot treading. The result was the Symington ‘robotic lagar’, an automated treading machine which exactly replicates the gentle action of the human foot and which has revolutionised winemaking in the Douro Valley. This equipment is very expensive but the results have been so good that an increasing proportion of Dow’s finest wines are now made in these automated lagares. Approximately half of the wines for Dow’s much praised 2003 Vintage were vinified in them.
The Senhora da Ribeira’s Quinta Vintage Ports have amassed a highly impressive number of awards: three Gold Medals at the International Wine Challenge, (2008, 2006 and 2001, for the 2005, 2002 and 1999 Vintages, respectively) as well as seven Silver Medals and two Gold Medals at the International Wine & Spirit Competition (London, 2008 for the 2005 Vintage and 2002 for the 1998 Vintage). In September 2006, Jancis Robinson MW wrote, “One very exciting new bottling is Dow’s Quinta da Senhora da Ribeira 2004...this single quinta bottling demonstrates superb quality with wonderful vibrancy. Great wine in any context - not that unlike some California reds! This is definitely a wine to look out for when it is released.”
Wine Profile
The very hot climate through the summer at this vineyard results in highly complex and concentrated wines but very low yields. Colours of the musts in the fermentation tanks are always purple-black due to the very high skin to juice ratio. The old vines add further to the intensity of the wine as they make up a very large percentage of the vineyard. The resulting wine can be described as being the essence of Vintage Port, with powerful wild red-fruit flavours, leading into rich black chocolate notes, the whole balanced by complex, attractive and peppery tannins.
One of the Douro’s most beautiful vineyards, Senhora da Ribeira is located 24km (15 miles) upriver from Quinta do Bomfim in the remote Douro Superior. The vineyard commands a magnificent north bank position, overlooking a broad sweep of the Douro, directly opposite another famous Symington owned vineyard: Quinta do Vesuvio. Senhora de Ribeira was built close to an ancient river crossing, guarded by two 12th century castles on either side of the river built by the Moors during their centuries long occupation of Iberia. A small chapel dedicated to the ‘Lady of the River’ (literally: Senhora da Ribeira) has stood here for centuries and gave the quinta its name. Travellers would pause here to ask for a safe river passage and onward journey.
Senhora da Ribeira’s wines are some of the finest in the Douro and they complement those from Bomfim in the composition of Dow’s classic Vintage Ports. The quinta’s high proportion of old vines (45% are over 25 years old) is of critical importance. The old vines are very low-yielding, producing on average less than 1Kg of grapes each, giving intense and concentrated musts which are ideal for classic Vintage Port. The remainder of the vineyard was replanted as follows: 21% in 2001 and 34% from 2004, the latter involving mainly Touriga Nacional vines. This grape variety - very important for Vintage Port - now represents almost exactly a third of the total planted at the quinta. The entire vineyard has the maximum ‘A’ rating.
As with Bomfim, the consistency of the climate plays a key role, although the rainfall is only half of that experienced at Bomfim: 448mm is the 10 year average. This more extreme climate, hot dry summers and cold, equally dry winters results in wines with unique depth of colour and complexity.
As with Quinta do Bomfim, the best Ports from Senhora de Ribeira are used to make Dow’s Vintage Ports in the great and rare ‘Declared’ years. In the good year’s when Dow’s does not ‘declare’ a Vintage, the best wines of ‘The Lady of the River’ are bottled as Dow’s Quinta de Senhora da Ribeira Vintage Port. They will tend to mature a little earlier than the very rare ‘Declared’ years, but can be every bit as good as some other Vintage Ports.
Demoiselles Sancerre Blanc is made from 100 percent Sauvignon Blanc.
The name "Les demoiselles" (translate as "The young ladies"), refers to the beautiful migratory birds (Cranes) that fly over the town of Sancerre twice a year (in the Fall going South to spend the winter in the African continent, and in the Spring going back North to spend the Summer in Northern Europe). These graceful birds offer a unique and impressive show when they sometimes land on the banks of the Loire River. The Fleuriet family wanted to highlight this exceptional grace and express an elegant and refined bouquet in this Sancerre Demoiselles cuvée.
The wine shows a bright yellow color with green highlights, a fruity nose with aromas of white flowers and acacia. Light-medium bodied in the mouth, supple and well structured, its concentration and crisp acidity make it a harmonious and food-friendly wine.
Pairs nicely with fresh goat cheeses, oysters with lemon, grilled lemon chicken breasts and Mexican dishes. Serve these whites at 46 °F (8 °C).
