Tamarack Firehouse Red is 29% Cabernet Sauvignon, 22% Syrah, 22% Merlot, 11% Cabernet Franc, 5% Malbec, 3% Sangiovese, 2% Grenache, 2% Cinsault 1% Petit Verdot, 1% Counoise, 1% Mourvèdre and 1% Carmenere.

Combing the best of both cooperage techniques, the combination of aging in stainless steel highlights the fruit while the aging in neutral French oak provides an added complexity to the wine.
Aged 60% in neutral premier French oak and 3% in new premier French Oak 37% stainless steel.Dropped by gravity straight to the press, the juice is pumped directly to barrel or tank and chilled, inoculated with Chardonnay 3079 yeast, primary fermentation started and finished, secondary fermentation started but completed to preferred taste, typically around 50% completion. All fermentation is done in a 58 degree Fahrenheit barrel room.

Keermont Amphitheatre Red is made from 32% Cabernet Sauvignon, 23% Cabernet Franc, 22% Merlot, 17% Petit Verdot, 5% Malbec and 1% Syrah.
Starting with the 2015 vintage, this new cuvée replaces the Keermont Estate Reserve. It is now the winery's flagship red blend. With this blend they aim to bring to life the nuances of both the terroir at Keermont Vineyards and the particularity of each vintage. Venetian red in color, this wine exudes complex aromas of dusty, ripe strawberry complimented by hints of baked pudding, vanilla, and sweet citrus blossom.

"The maiden 2015 Amphitheatre has an intense bouquet of dark cherries, star anise, camphor and wild heather scents, all well defined and expressive. The palate is medium-bodied with supple tannins and fleshy ripe red fruit laced with white pepper and sage, fanning out wonderfully toward the finish. My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Tenuta di Arceno Arcanum is made from 74% Cabernet Franc, 10% Merlot, 10% Cabernet Sauvignon and 6% Petit Verdot.
The dark and intense fruit aromas jump out of the glass with ripe plums, blackberries on the vine, and tones of sweet mint. The mouthfeel is full, balanced by gentle acids and rich tannins. Flavors are reminiscent of dark chocolate covered cherries and spicy black pepper. The long finish shows cigar box and cedar spice. A vintage that will age well into the next decade.

It would be impossible to exaggerate the grandeur and majesty of the overachieving 2015 Arcanum. The blend is 74% Cabernet Franc, 10% Merlot, 10% Cabernet Sauvignon and 6% Petit Verdot. This full-bodied wine is mostly defined by its texture that is exceedingly rich and smooth with significant infusions of blackberry, plum, spice, tobacco and cured leather. The wine achieves beautiful balance, yet it remains intense and powerful all the while.

Tamarack Merlot is made from 100 percent Merlot.
Dark aromas of cherry, mocha and blueberry lead to ripe plum, blackberry pie and flavors of a savory red wine reduction steak sauce, layered with intense chocolate and rich, velvety tannins.
Crushed gently and dropped by gravity into 1.5 ton bins, cold soaked 48 hours minimum, then inoculated with a variety of yeasts, hand-punched and pressed directly to barrel where the wine finishes both primary and secondary fermentations. The individual lots of wine that comprise the Merlot are kept separate for at least 12 months before they are blended. 50% new oak, the majority being American with some French and Hungarian oak from select coopers & a variety of forests with the wine aging in the oak for 19 months.

Grapes are purchased throughout the Columbia Valley and are crushed, fermented and blended in a small winery located in a World War II firehouse complex at the Walla Walla airport.

Paul Hobbs Edward James Estate Chardonnay Russian River Valley is made from 100 percent Chardonnay.
This small five-acre estate named after Paul's great-grandfather, Edward James, rewards us with a chardonnay that is pale straw in color with inviting aromas of lemon zest, red apple skin, gardenia, and honeysuckle. A creamy mouthfeel on the palate evolves into poached pear, ginger spice, and brioche that come together with a crunchy acidity and lively finish.

The 2021 Chardonnay Edward James Estate takes on a lightly savory tone with a delicate perfume of smoky incense, fresh green pear. There’s a silky texture in this medium to full bodied white, with bright notes of preserved lime, ripe white peaches, and fresh flowers, and it has a clean, fantastic finish.

• 100% pure Sauvignon Blanc, crafted from grapes grown in the most notable and warmer regions of California’s coastal hills. Each block contributes a distinct element to the blend, resulting in a layered and complex style.
• The harvest dates were determined by physiological maturity, which varied widely in the 2023 vintage due to the wet winter leading to a cool summer. Nevertheless, the extended hang time reduced grapes with low sugar, firm acid, minimal pyrazines, and intense flavor expressions.
• Upon arrival at the winery, the whole clusters underwent a gentle pressing, and the juice underwent a cold settling process for two days. Subsequently, it was racked off the heavy lees into stainless steel tanks, where it underwent a chill fermentation with native yeast – which contributed to the balanced mouthfeel, set against a backdrop of minerality and acidity.
• Following fermentation, the wines remained in tank, with the lees being stirred weekly for nearly four months before the final blend was assembled. No malolactic fermentation was allowed, preserving the vibrant fruit and floral notes, alongside the natural tension characteristics of this blend.
