The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. "Pretty cassis and blackberry fruits as well as notes of cedar pencil, spicy oak, and tobacco emerge from the 2016 Cabernet Sauvignon Oakville. Medium-bodied, it has a balanced, elegant texture, moderate tannins, and a good finish. It's a complex, classy wine to enjoy over the coming decade or more. This is a classic, workhorse styled Cabernet from winemaker Heidi Barrett with lots to love. The blend is 87% Cabernet Sauvignon, 7% Merlot, 4% Petit Verdot, and the balance Cabernet Franc, all aged 20 months in French oak."

This wine is deeply pigmented with ruby/garnet color. First sniff is Oakville Cabernet all the way. Nice layers of ripe berry and cherrylike fruit with a matching complement of toasty French Oak from an assortment of Coopers and different barrel ages. Gorgeous across the palate with a silky yet dense mouthcoating impression. Ripeness is key and the result is a wine with perfect balance and flow - just plain delicious. It’s a big, beautiful wine now but has tremendous aging potential. — Heidi Barrett
Product Description
Tamarack Cabernet Sauvignon 2011 is made from 86% Cabernet Sauvignon, 6% Merlot and 8% Cabernet Franc
Winemaking: Crushed gently and dropped by gravity into 1.5 ton bins, cold soaked for 24 to 72 hours, then inoculated with a variety of yeasts, hand-punched and pressed directly to barrel where the wine finishes both primary and secondary fermentations. The individual lots of wine that compose the Cabernet Sauvignon are kept separate for at least one year before they are blended.
Ageing: 100% French oak, 65% new and 35% 2nd and 3rd vintage barrels from select coopers and a variety of tight grain French oak forests with the wine aging in barrel for 22 months.
Vintage: A cold spring put the grapes way behind at bloom, set and veraison. A mild summer with weeks of ideal grape ripening conditions began to catch the fruit up but harvest still began 4 weeks later than normal. The weather was gorgeous through harvest, the first freeze not arriving until Thanksgiving, well after the finish of our harvest.
Tasting Notes: Full bodied with black currant jam, honey glazed dates and black peppered seasoned T-bone steak aromas intertwined with piercing boysenberry, rosemary rack of lamb, balsamic, blue cheese, bacon wrapped figs and intriguing tannins extended out over an intricate and balanced finish.

The Tamarack Cellars Vineyard
Grapes are purchased throughout the Columbia Valley and are crushed, fermented and blended in a small winery located in a World War II firehouse complex at the Walla Walla airport.

Matthews Cabernet Sauvignon Columbia Valley is made from 76% Cabernet Sauvignon, 15%Merlot, 6% Cabernet Franc, 2% Petit Verdot, 1% Malbec.
The 2021 Columbia Valley Cabernet Sauvignon is deep ruby in the glass with purple hues. The rich bouquet of spiced black plum and cocoa nib are balanced with aromas of fresh earth and crushed flint. Intense and opulent flavors of ripe blackberry, cedar, mocha, and black currant coat the broad and balanced palate and the ripe tannin creates a perfect frame for the lush fruit expression. Cherry cordial and cola linger on the long, quenching finish.

A wonderfully balanced Cabernet with tremendous purity of fruit and a brilliant freshness. A blend of sites across the Columbia Valley focused on the Horse Heaven Hills, Red Mountain and Royal Slope. Smoky violet notes and crushed stone follow graphite minerality and dusty berries. The palate is delightfully distinguished. Cabernet and savoury herbs mingle with red berries, black brambles, and a brilliant mineral tone.

Coming out strong out of the gate, the 2021 ‘Columbia Valley’ Cabernet Sauvignon is nearly all varietal. Dark chocolate shavings, baking spices and anise come together on the nose. The palate is beautifully balanced with a seamless texture and great sense of weight, with heady roasted date and black currant flavors. Generous and rich, this is a gorgeous showing from 2021. This is a serious value to purchase by the case.

The 2021 finishes with a pleasant crunch and a lingering licorice tinge.

Thorn Clarke Single Vineyard Mataro is made from 100 percent Mataro.
The Single Vineyard Selection range focuses on single site, small batch wines, highlighting the true characteristics of each individual variety. Each block is hand selected by our winemaker and viticulturist each year, choosing the wines that best reflect the strengths of each individual vintage.
Striking with its inky red color and purple hues, a hallmark of a classic vintage. On the nose, briary black fruits are in abundance. Notes of Chinese five spice and currants also shine through. On the palate, blackberries and winter spice are evident. The generous and silky tannins in this wine support a long and complex finish.
The grapes were destemmed and fermented in 4 tonne open fermenters for a period of 10 days. The wine was pressed off into 10 year old oak where it was matured for a duration of 18 months before being racked in preparation for bottling. This wine has no filtration.
