Burgundy is a region in France that is located 100 kilometers from Paris, stretching another 360 kilometers to Lyon. The tiny vineyards are dotted along the narrow valley and divided into the Chablis, Cote d'Or (divided in Côte de Nuits and Cote de Beaune), and Cote Chalonnaise, Maconnais, and Beaujolais districts. The region has many different soil types and microclimates and has been identified into 400 separate classifications. The soils are predominately clay-limestone, limestone, and marl. The vineyards cover 25,000 hectares and are divided into 99 wine appellations that are made up of 5,200 wine growers. 85% of the vineyards are no larger than 10 hectares. 180 million bottles of wine are produced annually. The Pinot Noir grape produces 90% of the wine that is grown in the region. The most common white grape grown in the region is Chardonnay. The Cote d’Or is where Burgundy's most famous and most expensive wines are found, and is split into two parts: the Cote de Nuits, which starts just south of Dijon and extends to a few kilometers south of the town of Nuits-Saint-Georges, and the Cote de Beaune, which starts at Ladoix and ends at Dezize-les-Maranges. The region is 40 kilometers long, and in some places, less than 2 kilometers wide.

Elegant pale yellow color with fine bubbles. Floral and fruity on the nose, with aromas of fresh butter and cake. On the palate, the wine is crisp and harmonious - a delightful sparkling wine.
Machine harvest. The base wine is fermented at a low temperature. The second fermentation takes place at 14°C for 2 weeks, followed by dosing.
Sainte-Marie Bourgogne Blanc Vieilles Vignes is made from 100 percent Chardonnay.
The wine has a perfect light yellow color with green hues. Nose of white flower, sweet spice and bitter orange. Fresh and delicious attack. It shows roundness and a slight buttery note with a very saline finish that makes you slightly salivate.
Excellent with Seafood, grilled fish, clams and oysters of course. Also great with goat cheese or Comté cheese.
Aged on lees for 6 months in stainless steel vats. Adjustment of sulphites at the end of MLF and before bottling. Filtration on earth then on 1.2µ cartridge after bonding with bentonite.Machine harvest, and direct pressing with a pneumatic horizontal press. Static settling. Alcoholic and malolactic fermentation in stainless steel vats with native yeast and bacteria.
Harmonious, fresh and clean aromas of fresh apple, lemon, orange blossom, white flower. Pure, crisp, silky and fine texture. Ripe fruit flavors and good acidity.
The vines are 40-45 years old of age on average. All of the wines are 100% barrel fermented and 100% M-L fermentation
Excellent with poultry served with a creamy sauce. (The locals enjoy it with Poulet de Bresse / Bresse Chicken).

Orin Swift 8 Years In The Desert Napa Valley is a blend of Zinfandel, Petite Sirah, Syrah.
The Eight Years in the Desert pours a dark mauve core with a red amethyst rim and aromatic notes of ripe blackberry and raspberry bramble. Further hints of chocolate covered espresso bean, black pepper and allspice emanate from the glass. The entry is dominated by black plum preserves and freshly baked mixed berry morning bun with an energetic yet concentrated mid-palate. Soft and textured tannins give way to a lifted finish with a touch of pluot and dried tarragon.
