L'AME de Vermont represents the culmination of 10 years of dedicated work, derived from select grapes of Chateau Vermont's best parcels, chiseled to be the ultimate extraction of their terroir and Spirit. This cuvée is the Winemaker's soul. It is a reflection of the requirements, precise work and desire to achieve perfection.
A rare and confidential wine, vinified and matured in new oak barrels. Fine wine, elegant and well-balanced, with vanilla notes coming from the oak aging and subtle scents of ripe black and red fruits. A beautiful structure and great aging potential.
Chaume Chablis is made from 100% Chardonnay.
Light yellow color. The wine displays aromas of white flowers, honeysuckle, linden, citrus as well as white and dried fruits.
In the mouth, the wine is well balanced with tension and a nice classic minerality found in Chablis.

Chavy-Chouet Bourgogne Blanc Les Saussots is made from 100 percent Chardonnay. A medium yellow straw color in the glass. On the nose, you will find layers aromas of cured lemon and hints of coconut and mango. On the palate, the juice has clean flavor, fresh acidity, and excellent balance. Vanilla notes follow through to the slightly creamy finish.

Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.
Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.
Average age of the vines: 70 years old.
Density of planting: 10,000 vines per hectare.

100% distemmed.
Very little intervention. Less pigeage (punch down of the cap) but some remontage (pump-over)

The Special Club concept started in 1971. A dozen wine growers from some old families of Champagne had an idea to familiarize people with the originality of the “Champagne de Vigneron” (Champagne of wine grower), thanks to prestigious vintages.
In the beginning, they created an association called the “Club des Viticulteurs Champenois” and chose a bottle with a special shape, created exclusively for them & used only by then. In 1988, they changed the bottle and the label. In 1999, the Club changed its name to “Club Trésor of Champagne.”
The Club Trésors comprises 28 artisan wine makers, selected from the finest areas of the Champagne region, each one recognized for the quality of their work. The Club Trésors is the only organization in Champagne to select its members according to a set of unrelenting quality standards:
- Each wine maker must make their champagnes entirely in his, or her, own premises and cellars. Furthermore, the champagne must be made exclusively from grapes harvested in his, or her, own vineyards.
- Each wine maker is devoted to his work and passionately protects the quality and the unique character of his own terroir.
- The jury of oenologists and wine professionals who select the champagnes demand irreproachable quality in both the work in the vineyard and the wines.
- Each champagne is subject to two blind tastings (once at the still wine stage before bottling and again after 3 years ageing in bottle) by a panel of passionate and distinguished oenologists and wine makers. 4 years aging minimum is required.
- A Special Club champagne may only be made in outstanding vintage years.

Verite Le Desir Red is made from 83% Cabernet Franc, 8% Merlot, 5% Malbec, 4% Cabernet Sauvignon.
2019 Le Désir has a rich violet hue, ringed by a slender rim of incandescent purple-ruby color. Beautifully characteristic of Cabernet Franc, the aromatics of this wine are expressive and exotic, showing fresh rose petal perfume, fresh cherry blossom, California bay laurel, crushed pomegranate, blackberry coulis, and well-integrated French oak aromas of ground cinnamon, and brown buttered toast. On the palate, a robust structure defined by powdery tannins and lively acidity delivers a very fine balance, with an exceptionally long finish.
Review:
Sublime cabernet franc aromas of currants, flowers and citrus. Full-bodied with incredible purity of fruit and length. You don’t feel the tannins, but they are there. The acidity gives you dynamic reality and perfect length. A truly great wine. 83% cabernet franc, 8% merlot, 5% malbec, and 4% cabernet sauvignon. Best from 2026.

The 2019 Le Désir is just as stunning as the first time I tasted it from bottle. It's pure and layered, with alluring scents of Morello cherries, dried mushrooms, cigars, sage and aniseed wafting from the glass. The palate strikes a fine balance of concentrated fruit, loads of powdery tannins, and energetic bursts of fresh acidity. It has a deep core of concentrated, perfumed fruit with the first faint touches of umami character and a long finish driven by floral and iron tones. I can't get enough of this wine!
