The full spectrum of Barossa Shiraz's aromatic capability is here on show: from scorched earth, bitter couverture chocolate just-dried raisin, sweet red licorice and cola bean, all heady, defined and un-wound for all to see. Here. The fine line between luxurious fruit and energy is walked gracefully, it's warming and full-blooded nature tethered by lifted acidity.

Pair with marbled steak or rich beef stews, roast beef, grilled bbq meats.

Siegel Unique Selection Red is made from 45% Cabernet Sauvignon, 35% Carmenere and 20% Syrah

Aged in French oak barrels for 14-16 months.

Viña Siegel Unique Selection is the utmost expression of our best Los Lingues vineyards located in the Alto Colchagua region. 
A deep violet color. There are aromas of cassis and cherries with hints of spices, chocolate and violets. This wine is characterised by its complexity and harmony, with a robust tannic structure.

After carefully selecting the optimum harvest date, the grapes are hand selected, then they are de-stemmed and cold macerated for 5-6 days. Alcoholic fermentation occurs at 26-29°C, during this period pump overs are performed daily at the winemaker’s discretion. Post-fermentative maceration occurs for 2 to 3 weeks. The wine is smoothly clarified. Cold stabilisation only occurs when necessary.

A slope (un talud) leading up to a mountain where centuries of rock falls have left the soil beneath full of large angular rocks, and therefore useless for most agriculture. Deposited hugger-mugger amongst the clay and sand however, they offer perfect drainage and allow vines to grow, forcing their roots ever downwards in search of water, picking up minerals along the way. If you wanted to explain to someone what Cabernet Sauvignon tasted like, you could do a lot worse than showing them this beautiful expression of the variety which demonstrates great purity, concentration and elegance.

Review:

Talud is from the oldest cabernet sauvignon vineyards on Tabalí’s estate in the coastal Maipo zone, 50 kilometers from the Pacific, planted in 1999. The soils are colluvial, which often deliver firm, pointed tannins, and those are present here, but they’re very nicely accompanied by juicy red fruit and bright acidity that allows this wine to put its fresh, vibrant facet in the foreground. Take note, however, there are deep, dense flavors here. It’s still a very young cabernet, so make room in the cellar.

Intense ruby red color. Aromas characterized by hints of ripe red fruits, and hints of spices. On the palate it is warm, soft, and full with strong but velvety integrated tannins. Good persistence.

Pairs with meat, cheese, and game.

Inky purple-red in color with intense depth to the rim.  Aromas of sweet rich fruit and lifted cedar oak fill the glass. Abundant blackberry, violets and cigar box roll through the profile adding complexity and interest.  The palate is round and silky with dark plum, liquorice, briar and blackberry primary fruits.  The rich, toasty oak, and fleshy rounded tannins complete the palate of this dense, flowing wine.  This poised and powerful wine is drinking amazingly well but with it's density and presence will cellar impeccably well.

Selected parcels of estate fruit were de-stemmed into our open fermenters and seeded with yeast.  The ferments were pumped over twice daily to maximise color, tannin and flavor extraction. The temperature controlled fermenters allowed the ferments remain in the 22-25 °C range giving amazing fruit expression in the wine.  Each parcel was pressed after a minimum of seven days fermenting on skins.  The wine completed both primary and ML fermentation in tank before being filled to American oak hogsheads (300Ltrs) to mature.  The wine was aged in a combination of new, 2nd and 3rd use barrels for up to 2 years.  Prior to bottling the parcels were emptied from oak and

Aromas and flavors of milk chocolate and coconut, blackberry syrup, eucalyptus, and pepper bbq sauce with a round, dry-yet-fruity full body and a hot, interesting, medium-long finish that exhibits notes of black berry bbq sauce, mint and eucalyptus, and chocolate sauce and vanilla with chewy, drying, coating tannins and light oak flavor. Knows that it is Barossa Shiraz and wears that moniker proudly tattooed as a sleeve; 10 out of 10 typicity here."

Tinel Blondelet Pouilly-Fume Genetin is made from 100 percent Sauvignon Blanc.

The soil is made of "caillottes" (limestone stones).
"Genetin" is a name given in homage to the original name for Sauvignon Blanc: Muscat Genetin. The Genetin bottling is normally reserved for the most powerful Cuvées in the winery. No oak.
Produced from 25 year-old vines coming from the Villiers limestone terroir, situated in Bouchot.

Traditional vinification in thermo-regulated stainless steel tanks. Following a gentle pressing the juice is then fermented at controlled temperatures before being left to mature on its fine lees to gain extra depth and concentration before bottling in the next spring.
Matured on fine lees bringing finesse to the wine and bottled late in order to let all its roundness evolve.
Yield: 55 hl/ha

A golden colored and mineral wine with elegance and finesse. Can be cellared for 2-3 years.
A mineral-laced smoky accent and citrus aromas. Elegant and powerful on the palate.
Food pairing: shellfish, goat cheese such as “Crottin de Chavignol”. Perfect also as an aperitif.
