Pecorino

Pecorino is an ancient Italian white wine grape primarily grown in the Marche and Abruzzo regions of Italy. Though it was nearly extinct by the mid-20th century, dedicated winemakers in the 1980s and 1990s brought it back from obscurity. The resulting wines are often compared to Sauvignon Blanc or Chardonnay but with a more distinct character.
Pecorino characteristics
Color and aroma: Pecorino wines are typically straw-yellow and offer a floral bouquet with notes of jasmine and acacia. Some wines also have aromas of yellow fruits, lemon blossom, and herbs like thyme and sage.
Flavor profile: These wines are dry, with vibrant acidity and pronounced minerality. Flavors often include apricot, pear, peach, and lemon, with some styles showing tropical fruit notes like pineapple.
Body and aging: Pecorino tends to be a medium to full-bodied wine with a slightly richer mouthfeel. While many are best enjoyed young, more complex examples can age for several years.
Where it's grown
While Pecorino is most prominently grown in the central Italian regions of Marche and Abruzzo, smaller quantities can also be found in Umbria, Tuscany, and Lazio.
Marche: Considered the birthplace of the grape, this region's limestone soils produce Pecorino wines that are typically richer and more concentrated. The Offida DOCG is a key appellation for Pecorino here.
Abruzzo: This region's mix of high mountain altitudes and coastal hillsides also provides an ideal growing environment. The wines from Abruzzo tend to have a crisper style compared to those from Marche.

Verite Le Desir Red is made from 83% Cabernet Franc, 8% Merlot, 5% Malbec, 4% Cabernet Sauvignon.
2019 Le Désir has a rich violet hue, ringed by a slender rim of incandescent purple-ruby color. Beautifully characteristic of Cabernet Franc, the aromatics of this wine are expressive and exotic, showing fresh rose petal perfume, fresh cherry blossom, California bay laurel, crushed pomegranate, blackberry coulis, and well-integrated French oak aromas of ground cinnamon, and brown buttered toast. On the palate, a robust structure defined by powdery tannins and lively acidity delivers a very fine balance, with an exceptionally long finish.

Sublime cabernet franc aromas of currants, flowers and citrus. Full-bodied with incredible purity of fruit and length. You don’t feel the tannins, but they are there. The acidity gives you dynamic reality and perfect length. A truly great wine. 83% cabernet franc, 8% merlot, 5% malbec, and 4% cabernet sauvignon. Best from 2026.

The 2019 Le Désir is just as stunning as the first time I tasted it from bottle. It's pure and layered, with alluring scents of Morello cherries, dried mushrooms, cigars, sage and aniseed wafting from the glass. The palate strikes a fine balance of concentrated fruit, loads of powdery tannins, and energetic bursts of fresh acidity. It has a deep core of concentrated, perfumed fruit with the first faint touches of umami character and a long finish driven by floral and iron tones. I can't get enough of this wine!

Continuum Red Blend 2022 is made from 45% Cabernet Sauvignon, 43% Cabernet Franc, 8% Petit Verdot, 4% Merlot.
2022 tells a story of subtle drama of the seasons. Aromatically effusive, 2022 Continuum is a seductive wine with an upright and regal core. Elegantly interwoven notes of black plum, black cherry, cacao, forest floor and tobacco leaf mingle with our sage mountain garrigue and volcanic minerality. Energetic and expressive, 2022 Continuum is a harmoniously integrated wine with structural complexity wrapped in a velvet robe.
WINEGROWING- Continuum is estate grown on our Sage Mountain Vineyard. It’s location, high on Pritchard Hill along the eastern ridge above Oakville, overlooks Napa Valley and the San Francisco Bay. The rocky, volcanic soils of the site focus the vine’s energy keeping yields low yielding fruit of depth and complexity. 38 acres of mature estate vineyard, planted in 1991 and 1996, with additional plantings in 2004, 2010, together comprise 38 distinct vineyard blocks. Cabernet Sauvignon, Cabernet Franc, Petit Verdot, and Merlot are grown from 1300 to 1600 feet in elevation, on western and southern facing aspects with slight northern and eastern slopes in places. This diversity of plantings on our volcanic soils are the essence of the complexity of Continuum.
PRODUCTION- Continuum is 100% estate grown, produced and bottled. All fruit is selectively hand-harvested at night. The fruit is then sorted before and after de-stemming, and gravity fed into French oak or concrete tanks. A threeday cold soak is followed by fermentation, receiving three to four pumpovers daily, and délestage two to three times in total during the most active period. The wine remains on skins in tank for 20 to 40 days. All lots are then drained, basket pressed, and transferred with lees for malolactic fermentation and aging. Continuum spent 22 months in barrel. 63 percent of French oak barrels were new and 35 percent were once used. A single concrete amphora was also used for aging. The wine clarified slowly and settled naturally in our cold barrel room, was racked sparingly and bottled without fining or filtration. Each vineyard lot was tasted and carefully considered many times to assemble the blend.

Perfumed aromas of subtle currants, roses, lavender and sage, following through to a medium body with super-fine tannins that caress the palate and leave it fresh and inspired.
