This fine sake is crafted by the Yoshia Brewing Company, which is a renowed and award-winning brewery that crafts elegant sakes. This brewery is located in the village of Yasugi and was founded in 1743. This particular brewery has crafted sakes using almost two centuries of tradition that has been handed down through the generations. Since these sakes are crafted by a sake master, the production is small, but extremely detailed. The water used to produce the sake is used from the springs around the region of Yasugi. The quality of rice, water, and skill are the perfect marriage to bring together an award-winning harmony of flavors. The technique of the brewing master is so cherished that the Japanese government has asked the brewery’s master to share his skills with the next generation. The Sake Gassan Junmai Ginjo Mountain Moon features wood-like aromas that include beets, mushrooms, and fruits. Pio Cesare Ornato Barolo is made from 100 percent Nebbiolo.
Vineyards
The very first Single Vineyard Barolo produced by the Pio Family, for the first time in 1985. Great structure, power, concentration, with a very long life. Produced in small quantities.
Vinification
In stainless steel tanks at high temperatures. Maceration for 30 days. Ageing In large oak “botti” for about 30 months; a small amount in French oak barriques for the first 12 months.
Review:
Complex on the nose, offering a blend of ripe red berries, nutty minerals, orange-peel and spice. Some savory, almost meaty notes, too. Full, compact and intense, yet there’s a graceful feel to the palate, thanks to the really fine web of tannin. Super polish and promise here. Classy. Needs some time.

Opus One 2022 is made from 80% Cabernet Sauvignon, 8% Petit Verdot, 6.5% Cabernet Franc, 5% Merlot, 0.5% Malbec
Opus One 2022 exudes charm and sophistication from the glass. Primary aromas of blueberry, cassis, and dried rose petals with underlying notes of olive, cigar box, and graphite create a rich and inviting bouquet. On the palate, bright red-fruit flavors, cocoa, and fresh orange peel waltz together into a harmonious and balanced profile. Long and elegant, the finish delivers touches of wet stone, vanilla, and a hint of coffee. Fine-grained tannins and juicy ripeness signal the promise of a long future in the cellar.
Review:
Chocolate, cherry and rose petal aromas on the nose. Very open and alive - this has a great energy from the aromatics alone with soft cedar shavings, vanilla bean and bramble fruit. Juicy and lively, this is full of fun - fruity and concentrated. The tannins are just wonderful, creamy and slightly grippy, extending the flavours vertically. Tons of juicy, succulent fruit - this feels quite modern but still with that flash of sunshine and ripeness. Long lasting with purity and delicacy that make it so enjoyable. A wonderful creation from Michael Silacci. This is not your typical blockbuster at all, this is a darling of a wine. 0.5% Malbec completes the blend. The Opus team chose to pick early and quickly given the heat spikes in 2022, starting with the Merlot on 24th August. Ageing 18 months in French oak.
