Macabeo is a white wine variety grape that is created and often blended with white wines and various types of French and Spanish red wines. The variety is able to be blended into sparkling and rose wines, but it may be difficult to cultivate the variety. The grape is mostly used to create acidic and young white wines that are consumed typically early. Macabeo is the main grape variety used in white Rioja wines and is sometimes mixed with Tempranillo wine and red Garnacha wine. Because Macabeo needs to be picked early in order to maintain moderate acid levels, harvesting the grapes early can also affect the taste of the wine. Thus, growers decide if the wines will either be dry wines, or sweet wines with honey or floral tones--harvesting them later in the year. The grapes are typically grown in Spain, France, and warm regions in North Africa. Macabeo grapes were introduced in France from Spain, but it is unknown how the variety made it to Spain. In Catalonia, the Macabeo variety is used with Parellada and the Xarel-lo variety to create Cava, which isSpain's most popular sparkling wines. Macabeo wine pairs well with grilled shrimp, a lovely tart green mango salad, or California rolls.

Torello Corpinnat Special Edition Brut Reserve is made from 44% Xarel.lo, 37% Macabeo, 11% Chardonnay, 8% Parellada.
The estate soils have been formed from sediments from the Garraf Massis, deposited thousands of years ago. One of the most characteristic features of the estate’s soils is the presence of accumulations of calcium carbonate. The movement of water through the soil dissolves the carbonates and takes them to a certain depth. The continuous repetition of this process has ended up producing the accumulation of these deposits. When these become massive, after thousands of years, they bind together and form a hard stratum called a petrocalcic horizon. This hard stratum limits the availability of water to the vine and the production, but is a factor that gives the grape quality
The wine offers a straw yellow color, clean, transparent, fine, and persistent bubbles with a rosary formation. In the nose fresh pear aromas stand out along with delicious notes of pastry cream, white flowers, and candied fruits. On the palate, good balance and acidity. Powerful and flavorful with white flowers and notes of brioche, almond and great length.
Special Edition is very versatile and matches with many different kinds of dishes; pasta, pork, chicken, fish, seafood, rice, cold cuts, desserts.

Patricia Raquin Santenay 1er Cru Beaurepaire is made from 100 percent Chardonnay.
The animals shown on the label are dogs. The breed is called Borzoi, also called "Russian Wolfhound", which means "fast" in Russian. Patricia and Alain are proud owners of 2 Borzois and they designed this label so that the dogs will be guardian of the vaulted ageing cellar inside their house.
The Santenay Santenay is coming from the Premier Cru called Beaurepaire.
The wine is showing a great pale yellow color with gold highlights. The nose is very delicate displaying aromas of white blossoms with just a hint of oak. In the mouth, the wine is very soft with a great deal of minerality, superb length and a tangy finish.
Named after Joe Donelan’s mother, the Nancie Chardonnay is our take on cool-climate, timeless Chardonnay. We love the way Nancie captures the classic qualities of Chardonnay while also exhibiting the unique traits of the unusual sites we source from. This Chardonnay is an emphasis on Old Vines, dry farming, and California heritage clones and selections. Every vintage embodies elegance and class, but no vintage is the same. The assemblage changes every year, so Nancie does not have a recipe. This wine lets us sit shotgun while the cool climate and the terroir do all the navigating, and they never steer us wrong. It is truly an inimitable wine made from a blend of incredible fruit we farm throughout Sonoma County, from the Coast to the Sonoma/Napa border.
On the nose, the Nancie Chardonnay opens with nutmeg, ginger snap, and chai spice leading to high-tone fruit like red apple skin, orange blossom, orchard fruit, and green pineapple. Judicious acidity makes this a great candidate for pairing with food. It’s very fresh on the palate, engaging, and invigorating, and it has quite a finish for Chardonnay. This is a stand-out wine among its peers, with one foot in California, and one foot in the old world.

"Named after proprietor Joe Donelan’s mother, the Nancie Chardonnay is crafted from a blend of exceptional vineyard sites across Sonoma. Key sources include Farina Vineyard on Sonoma Mountain, the 45-year-old vines at Lazy W Ranch in the Russian River Valley, along with fruit from Allen Family Ranch and Dehlinger–Garbro Ranch. Winemaker David Milner notes that sites offering mineral tension and naturally high acidity are essential to shaping the blend. The wine is aged for 10 months in 24% new oak. In 2023, the aromatics are superb, with a freshness factor that feels almost unparalleled. Citrus notes and hints of underripe pineapple mingle with ginger spice, flinty minerality and a distinct sea-salt character.
