Philippe Milan Pommard AOC is 100% Pinot Noir
This wine has been aged in Oak (25% new Oak)
This is a little more structured and the style goes more toward the
"vin de garde", or wines meant to age. This wine needs some food, or sometime
in the decanter right now. It is well structured and reminds me of a Volnay. As
a matter of fact, the parcel is located right next to Volnay. The finish is
long and still quite juicy with chewy tannins lingering.
Pierinvaletta Barbaresco is made from 100% Nebbiolo

Made from 70 years old vines planted on clay soils.
Aged 30 months in French and Slovanian Oak barrels.

Produced with Nebbiolo grapes from one of the highest plots in the area, at over 500 meters above sea level.
This is an elegant Nebbiolo - fresh and fruity with simple tannins (thanks to the white calcareous soil) and good minerality.

Tasting Notes
Rich and complex, black cherry, confectionary strawberry and dusty rose waft up from the glass. An expressive palate follows with juicy black cherry and pomegranate alongside notes of tropical mango and coconut in a slightly gamey, smoky finish.

Inky purple-red in color with intense depth to the rim. Aromas of sweet rich fruit and lifted cedar oak fill the glass. Abundant blackberry, violets and cigar box roll through the profile adding complexity and interest. The palate is round and silky with dark plum, liquorice, briar and blackberry primary fruits. The rich, toasty oak, and fleshy rounded tannins complete the palate of this dense, flowing wine. This poised and powerful wine is drinking amazingly well but with it's density and presence will cellar impeccably well.
Selected parcels of estate fruit were de-stemmed into our open fermenters and seeded with yeast. The ferments were pumped over twice daily to maximise color, tannin and flavor extraction. The temperature controlled fermenters allowed the ferments remain in the 22-25 °C range giving amazing fruit expression in the wine. Each parcel was pressed after a minimum of seven days fermenting on skins. The wine completed both primary and ML fermentation in tank before being filled to American oak hogsheads (300Ltrs) to mature. Cabrieres Chateauneuf du Pape Rouge L'Esprit is made from 50% Grenache, 15% Syrah, 15% Mourvèdre, 10% Cinsault and 10% remaining: Muscardin, Counoise, Picpoul, Terret noir, Vaccarèse, Clairette, Bourboulenc, Roussanne, Picardan.
The vineyard is situated on the high tablelands, which are characteristic of the northern area of Châteauneuf-du-Pape. The terrain consists mainly of alpine diluvium and chalky Miocenian soil, with large flint pebbles covering the surface. These pebbles conserve the heat of the day during the night, thus avoiding too much evaporation.
85-year-old vines. Aged 12 months in French oak. Intense ruby color, with a dominant nose of black fruits (blackcurrant and blackberry) evolving into smoke and grilled notes. Robust tannins on the palate with a long finish.
Pair with choice red meat, prime rib and game, or try with strong cheeses and chocolate dessert.
