"Sous la Velle" takes its name from its location 'under the village' of Saint Romain. The vineyards enjoy a steep and south facing exposure, planted on marl scree with the vines taking root in the limestone and offering a beautiful minerality to the wine. The nose expresses small red and black fruits, blackcurrant, cherry, raspberry and violet. The mouth provides a rich, supple and elegant wine with a good structure, pure fruit and vibrant acidity.
After destalking the grapes, the juice, skin and pulp are put into the vat for cold maceration. It lasts from 15 to 18 days. The alcoholic fermentation will follow, lasting from 5 to 6 days. These steps may be punctuated by push-downs. Aging in oak for 12 months.

Château Fombrauge 2020 has a dark red hue, intense fruit aromas and elegant tannins that offer a generous mouthfeel rarely seen in wine so young.
The nose reveals aromas of cherries, blackberries and raspberries, along with spicy notes.
On the palate, the wine i round, soft and silky. Its deep richness, matched with a nice freshness and a long and mellow finish, make it already a great Château Fombrauge, with a long ageing potential.

DAOU Vineyards Soul of a Lion is made from 80% Cabernet Sauvignon, 13% Cabernet Franc, 7% Petit Verdot .
The 2020 vintage presents an alluring profusion of black cherry, mulberry and Oregon blackberry aromas with notes of leather, cigar box and dark chocolate. Hints of desert sage and crème de menthe accent the rich fruit. The palate is silky and voluptuous, delivering loads of currant, cassis, black raspberry and ripe cherry. Notes of fig and baking spice are underscored by earthy tones of dates and truffle. Mature, ripe tannins yield a weighty, velvety texture integrated with a limestone minerality and subtle oak. Le Jade Viognier is made from 100 percent Viognier
The wine comes from sun-drenched vineyards planted on the best terroir - specially selected for its physical and geographical characteristics - on clay and limestone hillsides called "costières" (coastal region). The vineyards are only a few miles away from the Etang de Thau, a coastal lagoon that is situated between the port of Sète and Marseillan.
The color is a wonderful brilliant yellow with pearl tints. Intense and seductive aromas of ripe fruits, especially apricot, and floral notes with a hint of rose petals. The texture is very harmonious, generous, round and long. The finish is long and balanced with a good freshness.
Perfect as an aperitif, or great with richer dishes like langoustines, smoked or marinated salmon. Great too with guinea fowl in creamy or curry sauce. Serve it also with a broccoli and Roquefort soup or for dessert with a mango and pineapple tarte Tatin. An extremely versatile wine!
