Tasting Notes

Strong typical Pinot Noir characters are the distinguishing features of this wine, together with the balance of flavour. Made from just one small portion of Pinot grapes that are carefully spur pruned in winter, then meticulously looked after over the summer to eventually be handed from the vineyard team to the winemaking team to carry on the intense care and attention to detail that is needed to make the best Pinot Noir.

Winemakers Notes

The favourite wine of our winemakers to make as it really extends all of their skills from working with the small open-top fermentation tanks, which allow for constant hand plunging of the grape skins ( a small wooden plunger constantly pushes the skins below the surface of the juice) to selecting a variety of different French oak barrels that the wine will mature in for more than twelve months. The real skill is in the blending, as not all the barrels will make the grade for our top Pinot Noir. Days are spent tasting and re-tasting barrels and blends looking for the elusive blend that conveys the smooth velvet texture of Pinot Noir.

Winemakers Notes

Most of the blend is tipped into open-top fermentation tanks for preferment soak prior to the fermentation starting naturally with indigenous yeast, another portion is tank fermented with pump over, then a very small portion is kept as whole berries and sealed for carbonic maceration fermentation. Once the fermentations have finished, a partial micro-oxygenation is started which helps the wine to remain softer and rounder earlier.

"The stunning 2021 WALT ‘Bob’s Ranch’ Pinot Noir is a masterclass by this winemaking team. This Sonoma Coast AVA property has a wide range of Pinot Noir selections and is in close proximity to the Pacific Ocean. Stored in roughly 30% new French oak, this shows off dense blackberry and black cherry notes on the nose with shades of cola. Very seamless on the mouth, this effortlessly glides throughout the drinking experience. The salty and savory aspects, as well as the length, all add to the enjoyment."

Walt Clos Pepe Pinot Noir is made from 100 percent Pinot Noir. 

Deep ruby in color, the wine carries luscious fruit aromas of blackberry preserves and dark cherry, infused with exotic notes of spice, black tea and pomegranate. The palate opens to a dense and velvety texture laced with flavors of barrel char and salinity, leading to a structured and focused finish.

Review:

Big and rich, with luscious spiciness to the plush dark fruit and berry flavors that are supported by medium-grained tannins. There's plenty of creamy and toasty accents on the open-textured finish.

Another Sta. Hills release, the 2019 Pinot Noir Clos Pepe Vineyard saw 10% stems and 10 months in 40% new French oak. It's a little more focused and firm, with classic ripe black raspberry, red plum, and cherry fruits as well as orange blossom, spice, and floral nuances. It too is medium-bodied, textured, and beautifully balanced.

Alain Jaume Rasteau Les Valats is made from 80% Grenache, 10% Syrah, 10% Mourvedre planted on clay and stones based soil.

Located in the northern part of the Vaucluse, the soils are mostly on slopes with limestone and rocks, at medium altitude (until 350 meters).

Grapes usually ripeness in late September. The soils are poor and the Mediterranean climate allows to produce concentrated and well balanced grapes. The place is well-known for producing wines with strong identity.
From the Cotes du Rhone Villages classification, RASTEAU has been upgraded to Cru level since the 2009 vintage.

The wine shows a deep red garnet color and a nose of fresh red berries. On the palate, the richness of the fruit and tannins harmonizes with the roundness of the wine. The finish is long, with spicy and mineral notes. Complete and authentic.

"A blend of 90% Grenache and 10% Syrah, the 2017 Rasteau Les Valats is a classic example of this terroir and offers a darker, smoky, earthy, and chocolaty vibe as well as a rich, mouthfilling style on the palate. The estate Cabernet Sauvignon is grown primarily along the southwest ridge of the vineyard. The vines produce small berries with bountiful flavor, concentration and intensity, but also a good degree of finesse, excellent structure and layers of complexity that will continue to develop during extended bottle aging for those who want to cellar and age their wines. The wine is powerful, elegant, full-bodied.

"The 2017 Cabernet Sauvignon Red Mountain Estate is another powerful wine from this team. Opulent notes of blackcurrants, graphite, chocolate, crushed rocks, wild herbs, and espresso all give way to a full-bodied Cabernet Sauvignon that has loads of fruit, a superstar of a mid-palate, ripe tannins, and a great finish. It’s another 2017 that’s going to benefit from at least 2-4 years of bottle age and have 20 years or more of longevity."

Reverdy Jean Sancerre Rose is made from 100 percent Pinot Noir.

Color: Pale salmon pink color
Nose: delicate aromas of roses and orange blossom that will transform into gooseberry and peach blossoms as the temperature in the glass rises. 
Mouth: The palate is crisp, lean and elegant, but the flavors are quite persistent with cherry, blackcurrant,apricot and red currant aromas.

According to the Sancerre AOC regulation, maximum yield authorized for the rosé is 55 hl/ha.

Pairs well with poultry and spicy food.
