Wolfberger Cremant Reverence IX is made from 100% Pinot Blanc.

This Crémant shows a brilliant and shining gold color. The bubbles are fine and form a persistent ring.

The complex nose presents a floral character of acacia flowers, with light tones of brioche and a roasting hint. This racy character comes from the high quality of this cuvée carefully selected and aged 30 months on lees.

Xavier Vignon Chateauneuf du Pape XV Rouge is made from 50% Grenache, 45% Mourvèdre and 5% Syrah. From 100 year old vines. 

It shows a bit of toasty oak up front but balances that with ample black cherry fruit and soft, dusty tannins. Long and harmonious on the finish, it should drink well on release in 2019 and for a decade or more after that.

Pairs with beef with mustard sauce - Pork tenderloin with winter vegetables - Roasted duck - Malaysian pork chop and spice tea.

Deep dark ruby color with crimson reflects, the wine offers on the nose some hints of black fruits, Provencal spices and garrigue. The mouth is ample with a great freshness yet some concentration. Medium finish with hints of red and black fruits.

The rest of the blend was aged in concrete to preserve the fruit purity.Some grapes (Grenache & Syrah) are co-fermented for more complexity. A small batch of extremely old Syrah has been aged in barrel.
Most of the time, Ventoux offers superb climatic conditions especially in the higher altitude parcels. In 2016 for instance, grapes were harvested in a perfect sanitary state. Both technological and polyphenolic ripeness were close to perfect.

Bold and intense, this Cabernet Sauvignon from the Meteor Vineyard in Coombsville is full-bodied and berry-driven, with rich spice undertones and a firm structure.

After 20 years of marketing Napa Valley and its wines, Karen Cakebread launched her own project in 2008 with two major goals in mind: to create beautifully structured wines that reflect the vineyards from which they come, and to be involved in every aspect of making the wines.Karen started ZIATA, named in honor of her mother, Mary Annunziata, in 2008 with three varietals: Cabernet Franc, Sauvignon Blanc and Pinot Noir, which she chose for their food-friendly qualities. She hired Anne Vawter, a protégée of Heidi Barrett, as winemaker and sourced grapes from sustainable sources, working closely with the grape growers through the growing season, knowing that efforts made in the vineyard would create better wine than those manipulated in the cellar. Jennifer Williams : I find winemaking to be both an art and a trade—you learn by doing and working the vineyards, ensuring the fruit is the best it can be long before it’s picked is at least half the work of the winemaker.

Aiurri Salas Rioja is made from 80% Tempranillo and 20% Field Blend

Aroma: Very expressive on the nose, with good complexity, red fruit and fresh black fruit, spices and wild herbs. Flavor: Combination of freshness and complexity. Pleasant tannins, lots of fruit, long finish with great persistence. Color: Black Cherry with a Violet rim.

A blend of Grenache, Syrah and Mourvedre produced from the oldest vines of the estate and only in the years of highest grape quality. Aromas of prune, chocolate, spices, fruit brandy and plum. Rounded tannins and a long finish.

"I was also able to taste the late-release 2020 Gigondas Cuvée Prestige, which is 50% Grenache, 30% Syrah, and 20% Mourvèdre that was brought up in barrel. It has a rocking nose of Provençal spices, saddle leather, dried flowers, and assorted strawberry and raspberry fruit. It's medium to full-bodied, has fine tannins, beautiful overall balance, and a great finish. Count me in as a fan. Enjoy bottles any time over the coming 7-8 years."

Cazaux Gigondas Tour Sarrasine is made from 75% Grenache, 15% Syrah, 10% Mourvèdre. 45 year old vines on average.

This strong, warm wine comes from a selection of grapes planted on exceptional soils. The vineyards in Gigondas are situated on the arid hills of the Dentelles de Montmirail. The Mistral blows regularly on these slopes which limits the amount of treatment needed to the vines. The vines grow on stony soils and produce wine that can be kept easily for 10 yrs.

Intense, persistent red and dark fruit aromas. Raspberry, pepper and spice flavors. Silky tannins.

Fayolle Crozes-Hermitage Rouge Cuvee Nicolas is made from 100 percent Syrah. 

Deep ruby red color. Nose of red and black currant fruits, pepper, spring flowers, new leather and mineral/earthy nuances. Medium bodied palate of red fruit and spice. Nice balance. Long finish and velvety.

Good match with red meat (beef, lams) or white meat (veal) in sauce, poultry and game meat. Perfect with most cheeses.

Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.

Deep ruby red color. 
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality. 
The finish is long, clean and juicy and offers some white pepper spiciness typical of the best Crozes-Hermitage.

Soil type is red brittle granite and white soil.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed). 
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.

Graviere La Rouge Cuvee les Terrasses is made of 70% Merlot and 30% Cabernet Sauvignon

Deep red color with a narrow purple rim. Attractive aromas of ripe, juicy cherry and blackberry over spice, integrated toasted aromas. The palate is balanced and full-bodied with supple tannins, displaying rich cherry flavors combined with gentle toasting characters and a touch of spice. The finish is lasting with a bitter almond aftertaste.

Average age of the vines is 25 years. 
 Upon arrival at the winery, only the best grapes were selected using a sorting table.
Skin contact maceration during 2 weeks in temperature controlled vats. 
75% of the final wine was aged in stainless steel tanks with French oak staves and blended with 25% of wine aged in barrels.

Serve with red, white meats, poultry and fine cheeses.

Luccianus Amphore Lussac St. Emilion is made from 100% Cabernet Franc.

Luccianus is the name of Gallo-Roman origin designating the town of Lussac and its vineyard dating from the 4th century. This 100% Cabernet Franc is produced from the estate oldest vines of 100 years of age and is a return to ancestral aging techniques. The amphora aging gives out a very expressive wine with a superb aromatic radiance and very silky tannins all without a woody note.

The wine shows a beautiful deep purple color. The nose is complex and rich with intense notes of fruits and spices. The palate is round and powerful with silky tannins.

Mas Redonne Bandol Rose is made from 55% Mourvèdre, 35% Cinsault, 10% Grenache.

Nice light salmon color, typical of Bandol.
The wine expresses some citrus, Pomelos (a delicious type of grapefruit) and lots of white fruit aromas and minerality.
The flavors are fresh, fruity and very aromatic with tons of apricot and mango.

Grilled salmon, chicken dishes as well as salads, sushi and sashimi.

Mas Redonne Bandol Rose is made from 55% Mourvèdre, 35% Cinsault, 10% Grenache.

Michelet Courtault Chablis AOC is made from 100% Chardonnay.

Golden colored and very aromatic with white flowers, fresh fruit, lime, citrus aromas as well as a bergamot. Pleasant mouthfeel, supple, crisp, fruity flavors. There is a touch of acidity, revealing a deliciously integrated minerality.This Chablis is produced from vineyards located on slopes benefiting from a mainly south, southwest sun exposure in villages of the Northwestern part of the Chablis area (Lignorelles, Beine, Villy and Chablis).

Ideal as an aperitif, the wine is an excellent companion to seafood, smoked salmon for example.
