Chaume Chablis is made from 100% Chardonnay.
Light yellow color. The wine displays aromas of white flowers, honeysuckle, linden, citrus as well as white and dried fruits.
In the mouth, the wine is well balanced with tension and a nice classic minerality found in Chablis.
Chavy-Chouet Bourgogne Blanc Femelottes is made form 100 percent Chardonnay.
This is a charming, rich, focused and delightful white. Medium-bodied with a smooth texture, the wine has a fresh backbone of acidity, clean apple and citrus flavors, and an excellent balance. A most refreshing quaff and one that is great value. A delicate, expressive wine of exceptional quality.

Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.
Average age of the vines: 70 years old.
Density of planting: 10,000 vines per hectare.

Very little intervention. Less pigeage (punch down of the cap) but some remontage (pump-over)

Domaine Chavy Chouet Meursault Les Narvaux is made from 100% Chardonnay from extremely steep vineyards.
Les Narvaux in Meursault sits at the top of the slope on a steep, shallow, limestone plot.
TW Tasting notes: A lively and balanced wine with aromas of white-fleshed fruit. It offers hints of toasted almond on the nose and is very long on the palate. Mineral and energetic, it will only open up fully after a few years in the cellar. In the top 5 of my top Meursault picks.

Lismore Pinot Noir is made from 100 percent Pinot Noir
Complex bouquet of crushed rose petals, wild jasmine and fresh French herbs followed by a palate full of cranberry, raspberry and a long savory finish.
The grapes were picked at optimal ripeness. 30% whole bunch fermented in large 5000 liter vats with gentle pump-overs twice a day. The process allowed for a long extraction period which lends to the fruit expression and structure of this wine. The free run wine was drained off and the fermented grapes were then pressed in a traditional wooden basket press. The wine was racked into 225, 300 and 500 liter barrels where malolactic fermentation took place and the wine was aged for 10 months. 35% new French oak was used.

"The 2018 Pinot Noir comes from Walker Bay and Kaaimansgat and includes 30% whole-bunch fruit, aged for 11 months in 25% new oak. The bouquet sports vivid red cherry and raspberry fruit that is exceptionally well defined and beautifully integrated with the oak. The palate is medium-bodied with supple tannins, well-judged acidity and a slightly fleshy texture. There is just the right amount of salinity here, and the finish is kept on a tight leash, allowing the detail and precision to be fully expressed. "Walker Bay and Elandskloof are the twin sources of 30% whole bunch-fermented Pinot from Sam O'Keefe. Juicy, floral and charming, it's a graceful, fruit forward style with some clove and tobacco spice and refreshing acidity. Codirosso Chianti is made from 90% Sangiovese, 7% Canaiolo, 3% Colorino.
Vinification: fermentation in stainless steel at controlled temperatures for 7 to 8 days with an additional 7 to 8 days on the skins. The juice is pumped over daily for 10 days at the beginning of the fermentation. The wine is then racked and goes through malolactic.
Ruby red color with purple reflections. Intense vinous bouquet with hints of violets and dark cherry fruit.The flavor is full of ripe fruit and a hint of spice. It is well balanced and dry. The finish is persistent and satisfying.
