The Domaine Joseph Voillot Volnay Les Fremiets Premier Cru is from a parcel that is up-slope, and the wine is very calcaire, or limestony; you literally taste the stone in this elegant, intensely perfumed wine. Pair with veal filet mignon, squab, beef steak and roast duckling.

I really like this terroir and the 2021 is an absolutely classic example of this fine premier cru, offering up a refined and pure bouquet of black plums, dark berries, coffee bean, a complex base of dark soil tones, a nice touch of new oak and plenty of upper register smokiness. On the palate the wine is pure, full-bodied and very elegant in profile, with a superb core, lovely soil signature, ripe, suave tannins and a long, vibrant and complex finish. Fine, fine juice. 2033-2080.

Domaine Louis Moreau Chablis Vaillons Premier Cru is made from 100 percent Chardonnay.
Chablis achieves its highly distinctive mineral character due to its cool northerly climate and its highly calcareous soil. The Domaine Louis Moreau Chablis Vaillons Premier Cru is a generous, fleshy and lively wine that displays a beautiful balance of minerality, fruitiness and elegance.
Chablis, with its steely character and fresh citrus flavor, pairs well with white fish and shellfish and its naturally high acidity can counterbalance cream-based sauces. Unoaked Chablis lends itself well to vegetables, starches, Comté, or fresh goat cheese.
Domaine Zind-Humbrecht Riesling Heimbourg is made from 100 percent Riesling.
Bright yellow color. The nose expresses an immediate sense of strong mineral and limestone influence. After aeration or decanting, it will show eventually bright citrus, bergamot, spices and an expected slight austerity. It is very expressive today, but it is easy to see that this wine still has much more to show in the future. The mouth is tight, dry, showing a bright acidity and elegant finish.

Our Chardonnay is hand picked then gently whole-cluster pressed to avoid bitterness. The juice is fermented in large puncheons and a mix of neutral and new oak barrels. We age in barrel for a full 12 months with some stirring on the lees after malolactic fermentation. This is our classic take on Chardonnay, one of the original varietals we planted in 1974 and grew for over 20 years.
VINEYARD: Elk Cove Vineyards purchased Goodrich Vineyard in 2014. A 69 acre property planted with 21 acres of Pinot Noir and Chardonnay, Goodrich sits just outside the town of Yamhill, Oregon in the heart of the Yamhill-Carlton AVA. Goodrich Vineyard was planted in 2007 with Chardonnay and Pinot Noir in high-density a format. The property boasts the exact same marine sediment (Willakenzie) soil as our Mount Richmond property and lies just a few miles from our Estate Vineyard in Gaston. This young vineyard has great promise and we were so impressed by the quality of the fruit we decide

Summum Chardonnay is the unofficial tête de cuvée of our lineup at Evening Land Vineyards. Fruit for Summum comes from just 14 vine rows that form the backbone of the Seven Springs Estate. Here, soils were formed by ancient volcanic eruptions that sent blazing lava down the current vineyard’s slopes – and today, we’re lucky enough to farm our vines in these mineral-laden soils. The 2019 Summum Chardonnay is medium-bodied and bright, marked by flavors of lemon skin, baked apple, and a touch of sweet spice that leads to a satiny, harmonious finish. Fortezza Falanghina del Sannio Taburno is made from 100% Aglianico.
Grapes are from the Campania region. Aglianico is an amazing varietal than brings big body and big structure.
Ruby red color with aroma of wild berries, really soft at the palate, with pleasant notes of black cherry jam.
Pairs well with seafood, mozzarella cheese, risotto, white meats.

Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.
Bottled in December 2019.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Intense, aged, but not sweet (deliciously not more than 45g/l). Fab with cheese or dark chocolate. The wines have to be a minimum of 10 years; this release is more than 25 years. Bachelet Bertrand Santenay Blanc is made from 100 percent Chardonnay.
Tasting Notes:
The Santenay Blanc comes from a parcel that is 1.2 hectares in size (3 acres) in the village called “En Charron”, at around 300 meters above sea level, with excellent sunshine and thin limestone soil, guaranteeing great aromatic finesse.
The wine shows a beautiful golden color, a fresh and slightly roasted nose combining lemon and lime aromas with a hint of vanilla. On the palate, almond and toasted hazelnut flavors, along with notes of white flowers and vanilla nuances.
