Mortet Bourgogne Passetoutgrain  is mae from 60% Gamay and 40% Pinot Noir

Aged 11 months in Neutral French oak barrels.

Bourgogne Passetoutgrains is an Appellation d'origine contrôlée (AOC) for wine from the region of Burgundy.
Most Bourgogne Passetoutgrains is red, although rosé wine may also be produced. Unlike other Burgundy wines, which are
primarily produced from a single grape variety, Bourgogne Passetoutgrains is essentially a cuvée of Gamay and Pinot noir.

This is a quintessential bistro wine. Fresh and fruity, displaying red and black fruit flavors. Well balanced, good structure and silky finish with excellent length. Serve slightly chilled.

Oeufs en Meurette (poached eggs served in a red wine sauce with onions and lardons).
Boeuf Bourguignon (beef cooked in red wine with carrots and patatoes).
Pizza and pasta.

Trouillard Blanc de Noir Extra Brut NV is made from 90% Pinot Noir and 10% Pinot Meunier.

Aged "sur lattes" for 2 years

Color: Golden, fine bubbles.
Nose: Deep, vinous with red berries notes
Mouth: Ample. Sugar dosage gives it wilderness. You will be seduced by its stout, its structure and its vinosity. You will be invaded by a sensation of freshness.

This sparkling wine is only vinified with white juice of black grapes hence its name "Blanc de Noirs", which litterally translate to "White from Black". The exact varietal breakdown is 90% Pinot Noir and 10% Pinot Meunier.
It is aged sur lattes, in the bottle, on the lees for 24 months minimum.
Its low sugar dosage makes it an extra dry.

Its full bodied and power features designate it to go with sweetbread, giblet, “bouchée à la reine” and whites meats

The grapes come from the property owned vineyards in the municipality of Grávalos, south of Monte Yerga at the foothills of the “Cordillera Ibérica” at an altitude between 700–800 meters above sea level. A very high located area where you obtain fresh wines with little alcohol content and with very fine and elegant aromas.

The Pinot Noir variety originating in Burgundy is one of the three most important varieties in Champagne. Harvested around the second and third week of September. The collection of the grapes is done manually, selecting the grapes, preventing any deteriorated grapes from reaching the press or not complying with the quality required to elaborate our cavas.

Raspberry pink with steely glare. Fine bubble that forms a small rosary of slow evolution. Fruity aromas of strawberry, raspberry and flowers (rose petals). Pleasant and potent in the mouth with light acidity and a bubble very well integrated. Persistent and elegan

Walt Clos Pepe Pinot Noir is made from 100 percent Pinot Noir. 

Deep ruby in color, the wine carries luscious fruit aromas of blackberry preserves and dark cherry, infused with exotic notes of spice, black tea and pomegranate. The palate opens to a dense and velvety texture laced with flavors of barrel char and salinity, leading to a structured and focused finish.

Review:

Big and rich, with luscious spiciness to the plush dark fruit and berry flavors that are supported by medium-grained tannins. There's plenty of creamy and toasty accents on the open-textured finish.

Another Sta. Hills release, the 2019 Pinot Noir Clos Pepe Vineyard saw 10% stems and 10 months in 40% new French oak. It's a little more focused and firm, with classic ripe black raspberry, red plum, and cherry fruits as well as orange blossom, spice, and floral nuances. It too is medium-bodied, textured, and beautifully balanced.

- The Clos Pepe Vineyard was founded in the late 1980s by Steven and Kathy Pepe. The vineyard is located just east of Lompoc in the Santa Rita Hills appellation. The 2019 ‘Clos Pepe’ revels in its aromatic range from peat moss and pipe tobacco to bright red fruits and wild blackberry. The palate is dense and fresh with beautiful red florals alongside orange rind with sandy soil undertones. Gorgeous now, this has a long way to go in the cellar.

Climatic conditions

The farming year began with a mild autumn and little precipitation. A very dry winter started with -9ºC reaching at the end higher temperatures than normal for that time of the year. Spring and summer characterized by little rain, only some rain showers in July and late August avoided the hydric stress of the vines. The vegetative cycle of the vine developed with big variations of temperatures, alternating warm and atypical low temperatures of 4ºC for mid-June. The ripening of the grapes happened under very good conditions and the harvest started on 24th September 2019.  

Grape origin

100% Tinto Fino (Tempranillo) primarily from very old vines – 60 to 90 years old – from selected plots in La Horra and La Aguilera. The harvest was done by hand, in small boxes of 15 kilos that are thoroughly inspected, bunch by bunch, on the selection table.

Made exclusively from grapes grown in the hilltop vineyards of Casorzo and neighboring , it’s the pride and prestige of the area. It has always been the star wine of all local festivals. A comfort wine for all seasons and reasons, it has an aroma evocative of roses. The rich, aromatic wine is ruby-red, vibrant and slightly frothy. lt can be paired with desserts, fruit salads and sweets, but it can also be enjoyed as an aperitif or as a drink for any party occasion.
