Blind Justice Beckstoffer To Kalon Vineyard Cabernet Sauvignon is made from 76% Cabernet Sauvignon and 24% Cabernet Franc.
The dream team does it again. Melka, Koschitzky and Sands have collaborated on a compelling Cabernet. The creamy mouthfeel is almost decadent, but there’s always a balance kept between opulence and energy. Wonderfully expressive in its aromas and flavors, it’s just swimming with dark cherry and plum on a bed of dried flowers and gravel with a hint of mint. Complex and impressive, as always.
The 2019 Cabernet Sauvignon Blind Justice Beckstoffer To Kalon Vineyard is creamy and super-expressive from start to finish. The balance of opulence and ‘energy here makes for an absolutely compelling Cabernet. Dark cherry, plum, tobacco, dried flowers, menthol and gravel lend quite a bit of complexity throughout. Impressive.

The wines of Alto Moncayo are crafted to express the unique terroir of windswept high elevation Campo de Borja DO; and to serve as a benchmark for world class Old Vine Garnacha.
Aquilón is "The jewel in the Crown" a selection of the best barrels from the best lots. The vines are 60-100 years old.
Review:
This garnet-colored wine offers aromas of black currant, black raspberry and black licorice, with just a touch of charcuterie. The fruit flavors shine through with subtle notes of crushed violet. It has soft tannic structure, with a pleasant bit of grippiness in the post palate as it leads up to the long, long, finish.

About the Vineyard
Vineyards in Tabuenca and Borja, planted with indegenous clones of Garnacha starting in the 1920s.
Wine Production
The selected highest quality grapes are placed into small stainless-steel tanks of 7 tons capacity. The must is basket pressed and fermentation is finished in new French and American oak where it complets the malolactic fermentation. Wine is aged in the barrels for 24 months before bottling.
Tasting Notes
Appearance: Very deep red, scarlet rim
Aroma: Minerals and vanilla. Hints of raisins and dark Chocolate
Palate: As typical of the vintage, power and intensity with disarming elegance.
Food Pairing:
Goes well with beef, pork, game based stews and rice dishes.
It has a brownish red color. Intense and complex, aged for many years in French oak. It has an elegant cigar leaf aroma. Dense and round in the mouth with dried fruit, honey and notes of crystallized fruit. A velvety and persistent finish.

No irrigation, Harvest by hand, Port wine traditional method: (Fermentation, with skin maceration, takes place a a controlled temperature and is interrupted by the addition of grape spirits).
Aged in 550 Liters French Oak barrels with an average age of 40 years.

Boira' Pinot Grigio is made from certified organically farmed vineyards surrounding the city of Verona.
The wine shows a brilliant straw color with golden reflections. Fresh and floral bouquet with a hint of pears, apricots and bananas blended with intense aromas of acacia flowers. Fresh and inviting on the palate with bright fruit and an easy drinking style with a pleasing hint of almonds in the aftertaste.
The average age of the vines is 25 years old. The vineyards' soils are made of stoney calcareous, rich in minerals and fossils that gives this wine bright aromatics and a refreshing lift on the palate. After a 12-hour skin maceration to obtain enhanced aromas, the wine is fermented in stainless steel. The finished wine is placed in stainless steel holding tanks until bottled. Aged 3-4 months in stainless steel.
Pairs well with seafood dishes.
Bourdieu Blaye Cotes de Bordeaux is made from 87% Merlot, 10% Cabernet Sauvignon and 3% Cabernet Franc.
Chateau Bourdieu Blaye Cotes de Bordeaux offers a beautiful red ruby color deep and intense. It exhales red fruits and blackcurrant aromas, completed by notes of redcurrant. The mouthfeel is round and juicy, with a smooth, well integrated tannins that offers a nice structure and a long finish.
Perfect with a magret de canard (duck breast) or a filet of beef.

Boussey Monthelie Blanc Premier Cru Sur La Velle is made from 100 percent Chardonnay.
The name Monthelie comes from Mont Lyoei, mountain of Bacchus. The "Sur la Velle" plot is located on the eastern edge of Monthélie. It borders the Volnay Clos des Chênes Premier Cru to the east. The vineyards here lie on broadly southeast facing slopes with just enough gradient to achieve good drainage.
The Monthelie Blanc Premier Cru Sur La Velle has a beautiful pale yellow color with green reflections.
It is complex and rich with delicious aromas of white flowers, fresh almonds, lemon and minerality.
The finish is long with a very good balance between the excellent ripeness and the perfect amount of acidity.
We recommend this wine with white meat, fish and seafood.

Hickinbotham Brooks Road Shiraz is made from 100 percent Shiraz.
After the hand-picked Shiraz clusters were delivered from high country (210-230 meters) by Viticulturer Michael Lane, the winemaker destemmed and sorted the whole berries into open fermenters. The cold soak was four days, the skins plunged three times daily, and the minimum time on skins was eighteen days. The wine was then basket pressed; its free run and pressings kept separate. To minimize filtration at bottling, three rack-and-returns were conducted over fifteen months as the wine seasoned in a mixture of Burgundy-coopered barrels.
This Shiraz shows the characters this vineyard has displayed since the start, but perhaps in a more elegant, harmonious and balanced form. Its consistency is comforting and reassuring, buttressed by blue and black fruit notes throughout. It is readily enjoyable but has all the structure, acid and tannin to offer decades of rewards from cellaring.

A rich, succulent mix of dark chocolate, spiced plum, wild blackberry and black licorice notes. Showcases both power and elegance, with chai, cigar box, violets and dried sage notes, velvety and generous, on the long, generous finish. Drink now through 2035. 1,900 cases made, 370 cases imported

Grand Cru Clos des Hospices is located in Grand Cru Les Clos and produces outstanding wines, opulent and generous.
Vinification Methods: Grand Cru Clos des Hospices dans Les Clos parcel is handpicked, like all our 1ers Crus and Grands Crus. We generally start picking in Grands Crus parcels first because the grapes ripen earlier thanks to their ideal exposure. We vinified Grand Cru Clos des Hospices dans Les Clos in stainless steel tanks for both alcoholic fermentation, activated with natural yeast for 15-18 days at low temperature (18°C) and malolactic fermentation, thanks to natural bacteria at 20°C for a few months.
Aging Methods: From vintage 2013, Louis decided that our monopole Grand Cru Clos des Hospices dans Les Clos will age only in tank, on fine lees, with minimum intervention, to let it express all its minerality and purity. Just before bottling, the cuvee will go through a light filtration and bottling. Generally, the bottling takes place 18-20 months after harvest.
Tasting notes: Grand Cru Clos des Hospices is located within Les Clos and it produces exceptional wines, displaying great generosity. Its nose is full and expressive, with a nice minerality that we find again in the mouth, confirmed by an elegant length in the finish.
