Mt Monster Shiraz is 100 percent Shiraz

Deep purple in color. Ripe cassis and black plum fruits on the nose with violets. Varietal fruit-driven palate, with cassis and dark berryfruit and spice flavors. Soft tannins compliment the fruit with mouth-filling generous finish.

French & American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.

Our Shiraz is fermented in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7–10 days on skins to aide in the extraction of soft fleshy tannins and build wine structure.

Pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse. 

Opus One is made from 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec .

The Opus One is remarkably elegant and bright offering sumptuous aromas of fresh red and blue fruit, baking spices and vanilla, and a delicate fragrance of spring florals. The initial bouquet is augmented by more nuanced notes of sage, rosemary, and black olive. Juicy flavors of black cherry, blackberry and cassis flood the palate and creamy, fine-grained tannins deliver a delightfully round structure. Harmonious and lively, the flavors linger to create an enduring finish with touches of dark chocolate and espresso.

Of the great European wine families, the Rothschilds are perhaps the best known. And Baron Philippe de Rothschild is perhaps the best known of this great family. At the age of 20, Baron Philippe took on the management of Château Mouton Rothschild from his father Baron Henri. Philippe’s vision changed the world of wine: he invented Château bottling, commissioned great artists to illustrate his wine labels – and, in partnership with Robert Mondavi in 1979, created Opus One.In the 1980s, after her father’s death, Baroness Philippine de Rothschild left a stage career that included the Comédie Française and the Renault-Barrault Theatre Company, bringing her own exquisite style and creativity to the design, construction, and operation of Opus One.Among great New World wine pioneers, Robert Mondavi is an international icon. Bringing a passion for excellence to everything he did, Robert Mondavi led a renaissance in California fine wine for over six decades. Among other accomplishments, he introduced temperature-controlled fermentation, French oak barrel aging, and high-density viticulture to a fledgling American wine industry. But life was not only wine for Robert Mondavi: he broadened the American cultural palate by marrying fine wine to food, music, and the arts. One of few Americans to have received the French medal of the Legion of Honor, Robert Mondavi showed extraordinary vision as co-founder of Opus One.

The purity of fruit is really something else here, with currants and fresh flowers, such as violets and roses. Flower stems as well. Fantastic length and structure to the wine, with tightness and focus. Wonderful fruit. Graceful. A blend of 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec. Opus One Overture 2022 is in stock and ready to ship. 

Beginning in 1993 and following in the tradition of great Bordeaux estates, Opus One created a fine second wine called Overture. Every acre of the estate vineyard is meticulously farmed with the attention to detail and singular focus required to produce Opus One. This scrutiny carries through the blending process and certain lots will not be included in the final Opus One blend. Yet, when these lots are afforded additional time in barrel along with the added flexibility of blending across multiple vintages, the final wine achieves a remarkable elegance and complexity.

Overture 2022 captivates you from the start. Its aromatic profile weaves a complex tapestry of bright cherry, fresh forest berries, and cut rose stems interwoven with delicate scents of violets, toasted almond, and anise. Blackberry, blueberry, and wild cherry take the lead on the palate with a lively acidity that adds a vibrant edge. The finish is long and rounded, with a touch of mocha and black tea that showcase the wine’s depth. This expression of selected parcels from our estate vineyards will age gracefully for years to come.

Peju Winery Legacy Collection Cabernet Sauvignon is made from 88% Cabernet Sauvignon, 6% Petit Verdot, 6% Merlot.

This stunning wine boasts an expressive nose that immediately captivates the senses. On the palate, the wine opens up with complex layers of dried red fruit and hints of cigar box. A subtle hint of wet stone adds a unique touch to the overall experience. The wine's medium to full body creates a beautiful balance between the fruit and tannin structure. The finish is simply divine, with a touch of cocoa dust that lingers on the palate long after the last sip.

The 2022 Peju Legacy Collection Cabernet Sauvignon is a blend of 88% Cabernet Sauvignon, 6% Petit Verdot, 5% Merlot, and 1% Cabernet Franc, aged for 19 months in 40% new French and American oak, crafted by winemaker Sara Fowler. Fragrant notes of spiced plums, leather, fine cedar, and violets lift from the glass. Full-bodied, it features a framework of elongated, supple tannins, creamy black cherry fruits, dark plum jam, mocha, and a cool wet slate character on the lengthy finish.

Pernot Belicard Puligny-Montrachet is made from 100 percent Chardonnay.

The grapes come from the village of Puligny Montrachet, from a small parcel of 3.7 acres.

An expressive nose showing floral aromas, butter and woody notes. The mouth is round and suave with fruity notes and great minerality.

Pair with Sole Meunière, Bresse Poultry with morels, Livarot cheese.
