The story of Robert Mondavi Winery begins here, with the To Kalon Reserve. This tier represents the pinnacle of the wines produced by the winery. The 2021 vintage offers fresh black fruit with dark chocolate, dried herbs, and hints of vanilla and violet. Flavors of black plum and blackberry with red fruit and a hint of graphite on the finish. From the To Kalon Vineyard in Oakville, the portion owned by Constellation, comes this blend of 94% Cabernet Sauvignon, 3% Cabernet Franc, and 3% Petit Verdot. Pure blackberry fruit, cassis, graphite, and violet aromas leap from the glass, nuanced by fragrant, toasty new cedar wood. Full-bodied, framed by an array of plush dark black fruit notes, currants, crème de cassis, and polished tannins that are firm and elongated, with ironstone mineral accents. Roland Champion Champagne Le Mont Aigu Chardonnay Brut Nature is made from 100% Chardonnay.

Grand Cru Chouilly from a single parcel called "Montaigu".

Aged in Oak barrels for 10 months on the fine lees and then, aged "sur lattes" for 3 years. 

Brut Nature : no liqueur d'expedition (zero dosage)

This 100% oaked chardonnay will be perfect with salmon cooked in a parchment paper "en papillote", as well as roasted bone marrow. 

This plot was the first plot that Roland Champion family grandparents, Roland & Jacqueline bought together, just after their wedding, their first common property, not derived from their family heritage!

Roland Champion Champagne Partelaine Chardonnay Brut Nature is a sparkling wine made from 100% Chardonnay.

On the nose, this Champagne reveals subtle aromas of white chocolate, tonka bean and a beautiful minerality.
On the palate, it is very fine, with a beautiful vivacity, citrus notes and saline finish, reminiscent of the limestone terroir of Chouilly.

Pairs well with white fish, seafood and matured cheeses.

Rombauer Vineyards Proprietor Selection Chardonnay is made from 100 percent Chardonnay. 

Proprietor Selection is a reserve Chardonnay produced only in exceptional vintages by blending the best barrels from the finest lots. The 2022 represents the 16th vintage in 44 years. Like all of our Chardonnays, this wine comes from Carneros where the cool climate and clay soils offer ideal growing conditions for the varietal.

This wine comes from elite vineyards in the Carneros region owned by the Rombauer family and select growers including the Sangiacomo family, long-term grower partners who have farmed this land for three generations

Expressive and concentrated aromas of grapefruit and lime sorbet with hints of clove are present in the glass. It is rich and intense on the palate with sweet peach, clove, and freshly baked pastry flavors. There is a bright refreshing acidity that gives way to more stone fruit flavors that continue to build on the very long and concentrated finish.

Big, bold and racy, this Cabernet Sauvignon has a dense purple, almost opaque hue and offers up an electrifying bouquet dark red, blue and black fruits with notes of tobacco leaf, graphite and spicy oak. Opulent and layered it flexes its power but is framed by refreshing acidity with silky, sweet tannins. The 2021 displays loads of potential for being enjoyed in its youth, while also rewarding patience over the following decade. Review:

Made by Maayan Koschitzky (of Atelier Philippe Melka), the 2021 Cabernet Sauvignon Reserve is all varietal brought up in French oak. Its deeper ruby/plum hue is followed by a classic Cabernet Sauvignon nose of cassis and black cherries supported by plenty of sappy herbs, graphite, and obvious minerality. This medium-bodied, lively, elegant Cabernet has ripe, building tannins, a good spine of acidity, and outstanding length. Drink this classic, impeccably made 2021 over the coming 10–12 years, and I wouldn’t be surprised to see it evolve longer. (Jeb Dunnuck)

Rubus Chardonnay Colchagua Valley is made from 100 percent Chardonnay.

Attractive yellow color with some green tones. Its intense varietal character reminds one ripe fruits like pineapple, with notes of melon and honey well harmonized with oak. In the mouth it is full, rich and buttery.

Grapes are harvested in the morning in order to avoid high temperatures.

At the winery, the grapes are gently pressed.
Alcoholic fermentation is held between 15º and 16º Celsius.
Then, 25% of the wine goes into American Oak barrels for 3 months.
After this, the blend is made, clarified, cold stabilized and filtered. Right before bottling, the wine goes through an on-line filtration system (plate and sterile membrane) to ensure microbiological stability

As far as the food pairing, it is delicious with pasta, fish, seafood and mild cheeses. It is also delicious on its own as an aperitif.
