Babylons Peak Chenin Blanc is made from 100 percent Chenin Blanc.
Babylon's Peak winery, situated on the highest weathered granite slopes of the Paardeberg Mountain, is privately owned by the Basson family who has passed down the tradition, passion and art of winemaking over four generations. Predominantly low-yield dryland bushvines are selected to produce these excellent wines with distinctive character.
The Chenin Blanc grapes were picked from very old dryland bushvine vineyards. The vineyard grows on weathered granite soils, contributing to the flavor of the grapes and mineral character of the wine. Production is limited to 5 tons/ha.
The grapes were harvest by hand at 22.1°B. The grapes were destalked and lightly crushed. Only the first 450 litres free-run juice per ton were fermented in stainless steel tanks at a cold temperature (10-12°C) for 21 days. The wines was left on the fermentation lees until bottling.

The Chassagne-Montrachet appellation is originally better known for its white wines, but also produces high quality red wines. The complexity of the terroir allows both varieties to thrive side by side.
The wine is produced from vineyards located in the villages of Les Lombardes and Les Benoites that benefit from iron rich clay soils. A ruby garnet color, and an expressive nose of spices and red fruits that echo on the palate.
Pairs well with a nice cut of red meat.

Bertrand Bachelet Maranges Blanc 1er Cru La Fussiere is made from 100 percent Chardonnay.
The Maranges appellation is the youngest of the Côte de Beaune family, making its debut in May 1989. It spans three villages, namely Dezize-lès-Maranges, Cheilly-les-Maranges and Sampigny-les-Maranges. Several hills and slopes make up this appellation, all south/south-east-facing, at an altitude of between 200 and 400 metres. The Maranges 1ers Crus are spread over seven distinct villages.
'La Fussière' is the main village of the Maranges appellation and is located in the Cheilly and Dezize-les-Maranges areas.
This wine has a pale gold robe, with plenty of sparkle. At first, the nose evokes notes of white flowers, like acacias, then the second nose delivers a flinty, slightly buttery aspect. Plenty of versatility and subtlety on the palate, with floral notes.
A good accompaniment to a cold starter or fish. Try with a slightly sharp hard cheese, such as Cantal or Gouda, to draw out its natural vivacity.

Wow, this fragrance is deeply moving. There's a veritable firework of minerality, a very fine, sophisticated reduction, all carried by noble citrus freshness. Pure refinement on the palate . This is a delicate little plant, but with a power in the background that shouldn't be underestimated. The wine caresses the palate and indulges it with noble aromas, its incredible character enveloped in a creamy, smooth texture. An aromatic dream, this is truly classy, reminiscent of the great wines of Coche-Dury from this vineyard – even if the reduction is a bit more subtle, but perhaps even more sophisticated.

Roland Champion Champagne Blanc de Blanc Grand Cru 2014 is made from 100% Grand Cru Chardonnay from the chalky soils of Chouilly.
This Champagne is full of elegance and finesse. Very complex nose, with a bouquet of aromas dominated by honey, brioche and notes of dried fruits, hazelnuts and sweets. Perfectly matured.
Manual harvest; then pressing immediately to avoid oxidation & preserve quality. Free run juice only. Aged six years on the lees.
It matches magnificently with foie gras!

The Daou hallmark of toasted pecan and walnut aromas show on the nose of this Merlot, which also offers ripe berry and toasted herb touches. The palate carries the savory, nutty tone as well, with dark cherry providing fruit and firm tannins holding strong. Drink now-2035.
