Wolfberger Auxerrois  is made from 100% Auxerrois

Auxerrois blanc is thought to have originated in Lorraine, rather than near Auxerre in the Yonne. Recent DNA fingerprinting suggests that it is a cross between Gouais blanc and Pinot noir, the same ancestry as Chardonnay. The name Auxerrois blanc has actually been used as a synonym for Chardonnay in the Moselle region in France, which explains why there is also a longer name (Auxerrois Blanc de Laquenexy) for the grape variety.

This pale yellow Auxerrois Pinot Blanc shows an intense nose of fresh white fruits, rhubarb and spring flowers. Easy to drink and fresh on the palate, this wine ends on a fruity and crunchiness tast.

Alcoholic fermentation at 16°C followed by a short fermentation at 18°C allowing to keep some crispiness to the wine. 
Then the wine was aged on the fine lees for 6-7 months. No Oak. 
No Malo-Lactic fermentation. 
Right before bottling, the wine was filtered using a tangentiel filtration system.

Quiche, grilled fish, rhubarb pie, mixed salad, and also fresh sheep milk cheese.

Wolfberger Cremant d Alsace Rose Brut is 100 % Pinot Noir. 

The wines from Alsace date back to 589 A.D., but Cremant d’Alsace has more recent beginnings, starting in 1900.  Dopff au Moulin (founded in 1574) was the first to produce Cremant d’Alsace in the Method Champenoise style.  Cremant d’Alsace received AOC status for sparkling wine in 1976.  Two types of Cremant are produced today, resulting in about 2.5 million+ cases of Cremant d’Alsace production annually:

• Cremant d’Alsace, Brut – represents the majority of Cremant d' Alsace production. Uses Pinot Blanc, Pinot Gris, Pinot Noir, Riesling, Auxerrois, and Chardonnay.

• Cremant d’Alsace, Brut Rosé – much rarer, as it is 100% Pinot Noir only.

Wolfberger's Cremant d'Alsace Rose Brut displays a lovely delicate salmon color with active, small bubbles. Round and full-bodied, this Cremant Rose displays beautiful watermelon and strawberry aromas cascading in a smooth finish. A minimum of 15 months bottle aging before disgorging ensures ripeness.

Wolfberger Cremant d Alsace Brut NV is made with 90 % Pinot Blanc, 10% Pinot Auxerrois.

The production of sparkling wine was already known in Alsace in the early 1900's. The Appellation d’Origine Contrôlée (A.O.C.) Crémant d’Alsace began with an official decree in August 1976.
 
Pale golden color. Fine, persistent bubbles. Floral nose with a hint of spiciness, gentle fruitiness (peach, apricot), and lovely balance. Fruity and lively in the palate, it has a clean and crisp finish. This wine will suit any special occasion.

Wolfberger Cremant Reverence IX is made from 100% Pinot Blanc.

This Crémant shows a brilliant and shining gold color. The bubbles are fine and form a persistent ring.

The complex nose presents a floral character of acacia flowers, with light tones of brioche and a roasting hint. This racy character comes from the high quality of this cuvée carefully selected and aged 30 months on lees.

The mouth is enhanced by a fine and refreshing acidity, great and persistent floral flavors and an unctuous and delicate effervescence.

Xavier Vignon Chateauneuf du Pape Rouge is made from 65% Grenache, 20% Mourvèdre and 15% Syrah.

A clear and very expressive nose with notes of black fruits, spices and licorice. The mouth reveals tanins that are already supple with a great balance.
The finish is long, on black fruits, licorice and a slight salinity.

Xavier Vignon Chateauneuf du Pape Rouge is made from grilled rib of beef, roasted duck with figs, boar stew.

Review:

Produced from a blend of 50% Grenache, 45% Mourvedre and 5% Syrah, the wine is rich, concentrated, deep and lush with layers of meaty, peppery, red fruits, wet earth and spice. The wine is powerful, hedonistic and complex, thus it requires a year or two before it is ready to go. Drink from 2025 - 2038.

Ziata Meteor Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Bold and intense, this Cabernet Sauvignon from the Meteor Vineyard in Coombsville is full-bodied and berry-driven, with rich spice undertones and a firm structure.

After 20 years of marketing Napa Valley and its wines, Karen Cakebread launched her own project in 2008 with two major goals in mind: to create beautifully structured wines that reflect the vineyards from which they come, and to be involved in every aspect of making the wines.Karen started ZIATA, named in honor of her mother, Mary Annunziata, in 2008 with three varietals: Cabernet Franc, Sauvignon Blanc and Pinot Noir, which she chose for their food-friendly qualities. She hired Anne Vawter, a protégée of Heidi Barrett, as winemaker and sourced grapes from sustainable sources, working closely with the grape growers through the growing season, knowing that efforts made in the vineyard would create better wine than those manipulated in the cellar. Jennifer Williams : I find winemaking to be both an art and a trade—you learn by doing and working the vineyards, ensuring the fruit is the best it can be long before it’s picked is at least half the work of the winemaker.

Fayolle Crozes-Hermitage Rouge Cuvee Nicolas is made from 100 percent Syrah. 

Deep ruby red color. Nose of red and black currant fruits, pepper, spring flowers, new leather and mineral/earthy nuances. Medium bodied palate of red fruit and spice. Nice balance. Long finish and velvety.

Good match with red meat (beef, lams) or white meat (veal) in sauce, poultry and game meat. Perfect with most cheeses.

Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.

Deep ruby red color. 
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality. 
The finish is long, clean and juicy and offers some white pepper spiciness typical of the best Crozes-Hermitage.

Soil type is red brittle granite and white soil.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed). 
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.

Michelet Courtault Chablis AOC is made from 100% Chardonnay.

Golden colored and very aromatic with white flowers, fresh fruit, lime, citrus aromas as well as a bergamot. Pleasant mouthfeel, supple, crisp, fruity flavors. There is a touch of acidity, revealing a deliciously integrated minerality.This Chablis is produced from vineyards located on slopes benefiting from a mainly south, southwest sun exposure in villages of the Northwestern part of the Chablis area (Lignorelles, Beine, Villy and Chablis).

Ideal as an aperitif, the wine is an excellent companion to seafood, smoked salmon for example.
