Romariz 20 Years Old Tawny is rich, warm and well balanced. Concentrated, firm tannins. Aromas of hazelnuts and walnuts, raisin, honey, caramel and dark chocolate notes. Excellent with desserts, cheese or by itself at the end of a meal.

Made from Touriga Nacional, Touriga Francesa, Tinta Barroca, Tinta Roriz, Tinto Cão, Tinta Amarela

The color is beginning to denote the age, showing a certain similarity to coffee and waxed wood. The aroma combines quince-jam, delicate orange blossom and a touch of vanilla. Delicious smooth butterscotch and dried fruit flavors.

A Romariz Colheita brings together the finest wines from good extensive stocks to express the individual richness and flavours of the particular year enhanced by the nutty characteristics that come with the Tawny ageing process.

Pairs with nut based desserts, pecan pie and apple strudel.

Flowering in the Duoro occurred in the last 10 days of May. The weather conditions provided for a perfect flowering season. The Romariz Vintage Port 2003 yielded wines of great color and supple tannins, with a vintage stamp being evident in most wines. Production: 8,000 cases. Romariz Vintage Port is made from Touriga Nacional, Touriga Franca, Tinto Cão, Tinta Roriz, Tinta Barroca

Deep inky purple color. Intricate nose with aromas of blackberries and logan berries, subtle hints of amber and spring blossom and delicate spice. A tight, well-formed palate with an abundance of dark berry fruit, rich chocolate and liquorice, culminating in a long finish. Firm, closely woven tannins that give the wine great structure and body. An elegant finely constituted Vintage Port which will drink beautifully now or age quietly in the cellar.

A vintage port is made from blended grapes, all from the same vintage year. Vintage ports are historically only declared every 3 out of 10 years. Romariz vintage ports age for up to two years in oak, then go unfiltered into the bottle for further aging.

Romariz, Vintage Port 1997 has been pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse. 

The aging is as Mounir ages his Burgundies: extremely long, never racked, no fining, no filtration. It would be easy to say that we expected the experience running one of Burgundy’s leading producers, Lucien Le Moine, would show in Mounir’s wines. But the actual results need to be tasted to be believed and understood: a wine with beguiling fruit and savory richness, yet extraordinary finesse and detail.

Mounir Saouma likes to describe Châteauneuf-du-Pape as a mosaic, with all the wild traditions and differences together making for very different interpretations. Omnia, Latin for “all,” is his attempt to encompass the entire region’s terroir and winemaking history (and perhaps future) in one glass. The fruit comes from 9 vineyard parcels across all 5 of the Châteauneuf communes, Châteauneuf-du-Pape, Courthezon, Sorgues, Bedarrides and Orange (in early vintages, when the Saoumas did not have all the vineyards they have today, they would purchase fruit; today, Rotem & Mounir Saouma is 100% Estate). The wine is then vinified and aged in foudres, cement and 500 liter barrels – a little bit of everything.

2019 was another warm and dry vintage in the southern Rhône, marked by insistent drought and repeated heat waves during the season. With little disease pressure or frost, the crop was close to normal size, but bunch and berry-size was reduced during the growing season by the lack of water. The grapes were thus concentrated and rich in sugar and acidity, although potential alcohol levels were often quite high. Vineyards at higher elevations – Châteauneuf du Pape and Gigondas in particular — handled the heat better, and the wines from those AOPs are rich yet also remarkably fresh and energetic. Despite the initial concerns about the growing season, 2019 looks to be a watershed vintage in the Southern Rhône, producing rich wines with exceptional concentration and aging potential

Inviting aromas of sliced strawberries, red cherries and rose. Full-bodied with vibrant acidity and succulent fruit. Fine, structured tannins are vertically aligned with the fruit. More dark-fruited than the nose lets on and entirely delicious. I love the subtle spice here.

Very refined, with silky and fine-grained structure carrying alluring bergamot, rooibos tea, incense, dried cherry and lightly mulled raspberry notes along. A long sanguine thread weaves through the finish. Hard to resist now with so much charm, but this will benefit from cellaring. Grenache, Syrah and Mourvèdre.

Big, bold and racy, this Cabernet Sauvignon has a dense purple, almost opaque hue and offers up an electrifying bouquet dark red, blue and black fruits with notes of tobacco leaf, graphite and spicy oak. Opulent and layered it flexes its power but is framed by refreshing acidity with silky, sweet tannins. The 2021 displays loads of potential for being enjoyed in its youth, while also rewarding patience over the following decade. Made by Maayan Koschitzky (of Atelier Philippe Melka), the 2021 Cabernet Sauvignon Reserve is all varietal brought up in French oak. Its deeper ruby/plum hue is followed by a classic Cabernet Sauvignon nose of cassis and black cherries supported by plenty of sappy herbs, graphite, and obvious minerality. This medium-bodied, lively, elegant Cabernet has ripe, building tannins, a good spine of acidity, and outstanding length. Drink this classic, impeccably made 2021 over the coming 10–12 years, and I wouldn’t be surprised to see it evolve longer. (Jeb Dunnuck)

Alcoholic fermentation is held between 15º and 16º Celsius.
Then, 25% of the wine goes into American Oak barrels for 3 months.
After this, the blend is made, clarified, cold stabilized and filtered. Right before bottling, the wine goes through an on-line filtration system (plate and sterile membrane) to ensure microbiological stability

As far as the food pairing, it is delicious with pasta, fish, seafood and mild cheeses. It is also delicious on its own as an aperitif.

I love the deep and delicate, peachy nose of this extremely attractive Wachau dry riesling. Wonderful fresh fruit with a touch of mint and lemon balm on the ripe but rather sleek and very precise palate. The power and concentration show themselves first at the stunningly long and pristine finish.

Rutherford Ranch Reserve Cabernet Sauvignon

A flint and gunpowder nose leads to bold graphite, blueberry and tobacco flavors in this full-bodied wine that is laced with a high level of fine-grained tannins. This wine is meant for aging, being so tightly packed with fruits and minerals and having the structure to keep it fresh while more complex flavors develop over time. Best from 2028–2038.

Saint Pierre Saint Julien is made from 79% Cabernet Sauvignon and 21% Merlot.

Chateau Saint-Pierre Saint-Julien 4th Grand Cru Classé boasts a rich and brilliant purple color, a complex aromatic expression marked by beautiful ripe fruits combined with soft spices, chocolate and licorice nuances. Well-balanced and a good texture, the palate is round and subtle, supported by velvety tannins that enhance the elegant and pure character of this Saint Julien.

This Junmai Daiginjo has a beautiful nose full of banana, melon and star anise. The all natural brewing process gives this sake a bright fresh palate of plum, lime and minerality with a clean dry finish. A very food friendly sake, and is thought to be best after the meal with a light, smooth, rich cow's milk cheese.
