Cascina Castle’T, a family estate owned by Maria Borio, is located South of Torino in the Piedmonte region, 300 meters above sea level. The property was built in the 1600s.
The Cascina Castle T Vineyards
The 10 hectares (24.7 acres) of vineyards are located on the cooler hills of the Langhe area on the sides of the Belbo Valley near Canelli.
The vineyard for Barbera d'Asti is planted in clay and limestone soils and situated on a south western exposure, lying at about 300 meters above sea level. The vines are an average of 40-50 years old. There are 5,000 vines per hectare and the vineyard is kept fully covered with grass. Most of the vineyards are planted with Barbera except for a small plot planted with Moscato. All the production is strictly organic with a low yield, less than 30 hl/ha.
The vineyard for Moscato d'Asti is rich in clay and is on a south east exposure, lying at about 200 meters above sea level. The vines are an average of 15 years old.

Jean-Michel Sorbe Quincy Blanc is made from 100 percent Sauvingon Blanc.
The first nose is expressive and opens up to notes of acacia, citrus (lemon, grapefruit). Full on the palate with lovely freshness. This wine boasts nice balance and good length.
The vines are 15 to 20 years old and are located on the left bank of the Cher River, southwest of Quincy. This vineyard enjoys good exposure to the sun and overlies hillocks composed of sandy alluvial deposits and gravel dating back to the Quaternary Period. Each terroir is managed with minimal intervention in an environmentally friendly approach. Vinification: Slow pressing. Fermentation took place under controlled temperatures (18°C).The wine was aged on fine lees for a minimum of 4 months. It was filtered only once before being bottled.
Pair with crustaceans, asparagus, or goat's cheeses.
After pouring, allow the wine to breathe for a few moments in the glass before enjoying so that it may fully release all of its aromas.
Cabrieres Chateauneuf du Pape Rouge L'Esprit is made from 50% Grenache, 15% Syrah, 15% Mourvèdre, 10% Cinsault and 10% remaining: Muscardin, Counoise, Picpoul, Terret noir, Vaccarèse, Clairette, Bourboulenc, Roussanne, Picardan.
The vineyard is situated on the high tablelands, which are characteristic of the northern area of Châteauneuf-du-Pape. The terrain consists mainly of alpine diluvium and chalky Miocenian soil, with large flint pebbles covering the surface. These pebbles conserve the heat of the day during the night, thus avoiding too much evaporation.
85-year-old vines. Aged 12 months in French oak. Intense ruby color, with a dominant nose of black fruits (blackcurrant and blackberry) evolving into smoke and grilled notes. Robust tannins on the palate with a long finish.
Pair with choice red meat, prime rib and game, or try with strong cheeses and chocolate dessert.
