The Jean-Claude Courtault Estate
This is a family owned winery founded by Jean-Claude Courtault in 1984. A native of Touraine, Jean-Claude Courtault arrived in Lignorelles in 1974 to work as a vineyard manager for one of the villagees wine estates. In 1984, JC Courtault purchased 1.5 hectare of 4 year old vines in the Chablis area. Then, he rented a piece of land in the Chablis appellation area that he planted with the help of his wife, Marie-Chantal.
They released their first vintage in 1987 and the same year they were rewarded a gold medal at the "Concours Genaral des Vins de Paris" competition. This medal was just the first of many awards and prizes that have punctuated JC Courtaultes career, as a recognition of the quality and consistency of his wines. In 1995, the estate measured 12 hectares and progressively expanded to reach now 17.60 hectares in production. The total annual production for the Domaine is 1000 hectoliters on average, split between Chablis and Petit Chablis.
Jean Claude has been joined recently by his daughter Stephanie and her husband.
The Jean-Claude Courtault Estate Vineyard
This is a 18 hectare vineyard (44.50 acres), of which 17.60 are in production. The rest is planted to young vines. The vineyards are located in the communes of Beine, Lignorelles, Chablis, Fye and Villy.
All vines average 15 years of age or older with intense vine density of 6,000 plants per hectare. Pneumatic presses are used along with temperature controlled fermentation vats. Only stainless steel vats are used, not oak barrels.

Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.
The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Clarified with egg whites and bottled by gravity with natural cork stoppers.

"From the vineyard of the same name, the 2021 Cuesta De Las Liebres is a knockout, from a hillside vineyard of terraced vines. Aged 24 months in French oak, the first year in new, the second in second-use, all fine-grained, and bottled in June 2024, the tannins are well-integrated and dusty, nearly chalky. It’s truly a beautiful expression of variety, vintage, and site, reaching perfection in its fine-tuned, full-bodied layers of rich cassis, oak spice, and even a touch of garrigue. There’s lovely acidity throughout that brightens the palate, with beguiling notes of violet that never fade away. It’s a seamless, polished, gorgeous wine that will be hard to resist, though aging will continue to see it melt into one over the next 15-18 years. - Virginie BOONE"

The DAOU Cabernet Sauvignon presents a deep ruby-purple color, foreshadowing intense aromas of cherry and blackberry jam complemented by dark chocolate, tobacco leaf and desert sage. The nose also reveals secondary nuances of wet gravel, sandalwood and plum pudding with subtle notes of fennel, black olive and eucalyptus. On the palate, a swirl of black raspberry, pomegranate, cherry preserve and Zante currant melds seamlessly with crushed herbs, fig and cranberry. An impeccably balanced finish flows effortlessly from the juicy mid palate, leaving lovely notes of boysenberry, rhubarb, graphite and dried thyme.
Review:
Clean lines of cherry, toasted wood, red flower and a pinch of thyme make for a satisfying nose on this widely available bottling. The palate pairs familiar blackberry flavors with mocha spice.
