Hattan rice dates back to the 1800s when the Hattanso rice variety was mixed by private growers. Following in the early 1900s, the Hiroshima prefecture started creating varieties of Hattan rice that would be more resistant to disease, produce high yields, and also craft a more excellent shinpaku. Different varieties of the Hattan rice were bred through the decades, and the results included stronger varieties that were more resistant to disease. The breeding also introduced varieties more ideal for sake brewing because of their ability to absorb water. Hiroshima Hattan features a signature delicate taste that is deliciously fragrant. The Kamoizumi Shuzo brewery in the Hiroshima prefecture crafts quality sakes from the Hiroshima Hattan variety. With junmai sake production to genshu nama, this distinct brewery showcases traditional methods with modern innovation. The Kazoizumi sake is truly unique sake that features the taste of fall leaves, mushrooms, and showcases a prominent smoothness. Alejandro Bulgheroni Lithology Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
We only produced a scant 50 cases of this wine this year, far too small an amount considering how great it turned out. There’s that typical saturated to the rim deep purple color, with intense cassis, herb, and milk chocolate, bricks and forest floor, black plum pudding aromas. In the mouth, there’s a great balance, with notable oak and vanilla notes intertwined with dense black fruits. It’s an opulent and plush style, yet finishes with sweet grippy tannins.

Not from here, this wine is otherworldly. Apricot, stone, pippin apple, sea breeze, and wildflowers mingle to create this compelling beauty. What a pretty nose. Lemon peel, fresh white flowers, lavender, crushed sage and wet stone. Medium-to full-bodied with carrying acidity. Extremely articulate and graceful on the palate with bright citrus and a dried-floral note. Impressive depth and length. Salty and tangy on the finish with vibrancy. Drink or hold.
