Airen is the most widely planted grape in central Spain. Furthermore, Airen is also the most popular grape variety grown throughout the world in terms of planted acres. In Spain, Airen is planted in the La Mancha and Valdepenas regions. There, in the warm and dry environment with less than desirable soil, Airen is an ideal grape variety. Airen will produce high yields with relatively low maintenance. These qualities will trump the poor quality of wine that Airen makes, but the ease of the vine lends itself to producing base wines for brandy and high alcohol whites for Spain’s local consumers. When blended with Cencibel, Airen will produce a light-bodied red wine. Most recently, Airen grapes are giving rise to a crisp, dry white wine. Although becoming less and less popular as more fruit-forward wines dominate in consumption, the ease of growth of the Airen grape will give it longevity in the industry.

The grapes for this sparkling are sourced from high elevation areas throughout Spain. Don Piere offers a crystal clear pale yellow color, small and abundant bubbles of great finesse and elegance. A value sparkling brut, made with Airen grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.
