A popular region for tourists, the Barossa Valley in the Southern part of Australia is a region filled with vineyards as far as the eye can see. Labeled as one of the major wine-producing regions in the world, the Barossa Valley gets its name derives from the famed Barossa Ranges. When Britain fought France, Colonel William Light named the region in memory of the Battle of Barossa. The three towns that are situated in the city contain their own unique identity and are distinctly different in appeal. Tanunda is the town with the most German influence out of the three towns that are in the Barossa Valley. The center of commerce, Nuriootpa, has many fun and unique shops for travelers. Lastly, the town of Angaston has a rich history of English influence because of the settlers from Britain who migrated from the country to Australia, and started mining in the region. A scout to the Barossa Valley called the region the "cream" and encouraged European settlers to move to the Barossa Valley and to make the land perfect for farming and cultivation. The Barossa Valley today boasts of 20,000 people who mostly live in the three towns in the region. The beautiful green rolling hills, lush landscapes, and gem vineyards make the Barossa Valley home to some of the world's most famed wines, including the Shiraz wine crafted in the region and a famed wine called the Eden Valley Riesling.

First vinified in 2002, Shaw + Smith Shiraz has quickly garnered attention a standout cool climate Austrlian shiraz.
Sourcing immaculate fruit from the cool Adelaide Hills region, Shaw + Smith carry out whole berry fermentation in open-topped steel vats allowing for gentle yet thorough extraction and optimal aromatics. Maturation in French oak allows tannins to soften and aromas to harmonize before bottling under screw cap.
Shaw + Smith own two vineyards in the Adelaide Hills, at Balhannah and Lenswood, totalling 55 hectares. The vineyards are planted to varieties that perform particularly well in the region, namely Sauvignon Blanc, Chardonnay, Pinot Noir, and Shiraz.
Hand picked, sorted and fermented as a combination of whole berries and whole bunches in open fermenters, with gentle plunging and minimal working. Aged in French oak for fourteen months, of which one third was new.
Shaw + Smith Shiraz is a medium bodied cool-climate Shiraz, in which balance is more important than power.
Decant and enjoy with slow cooked lamb shoulder.

Lovely crunchy fruit to this, with spice and dried-meat undertones through the wine, from the nose to the palate. Medium body, fine tannins and a fresh and vivid finish. Tangy and bright. Drink or hold. Screw cap.

Schwarz Thiele Road Grenache is made from 80 year old 100% Grenache vines.
Thiele Road is a dusty track that crosses Bethany Creek at the foot of the Barossa Ranges. It is home to Jason Schwarz's family's 70 year old, deep rooted Grenache vines that produce wines with complex flavours and plenty of character.
Bouquet: The nose is floral and expressive with raspberry and pepper.
Palate: Red fruits, spice and earth with beautiful balance and structure. Medium weighted with fine acidity. A wine built on complexity and packed with interest.
Planted in 1941. The gnarled, old vines continue to produce fantastic fruit and the quality out of the 2014 vintage was evident. The vines are handpicked, 10% whole bunch and the remainder de-stemmed and into an open fermenter. Before too long the wild yeast population on the grapes kicks off fermentation and that continues with daily gentle pump overs and hand plunging until fermentation is complete and the flavour profile is just right. The wine is then basket pressed and matured in seasoned French oak for 18 months before bottling. Not filtered or fined.

"This is an intriguing, full-weighted wine of compelling dry extract and savory, forceful length. Far from the archetype, or at least what I had construed that to be in these parts. Smoky and ferruginous, with aromas of Islay peat from a wild ferment and old vine je ne sais quoi. A darker brood, lathered with clove, anise, brush smoke and iodine, over the usual red fruited paradigm. The finish, biltong meaty and a tad drying. That said, this may well be reduction as the wine opens beautifully with time, boasting oodles of personality. Drink or hold. - Ned Goodwin MW"

"From a single vineyard (Bethany) planted in 1941. No question that 2018 delivered some mighty fine Grenache in the Barossa Valley. Bright and pretty, red fruits, baked ricotta with thyme and honey, spice. It’s finely wrought and fresh, light emery tannin, raspberry and sweet strawberry, spice, blood orange and aromatic herbs playing out on a long finish. Oh, and it’s light to medium-bodied at most. Lovely."

Schwarz The Schiller Shiraz is made from 100 percent Shiraz.
The Schiller Shiraz is a wine rich in both flavor and history. The 400 Shiraz vines planted by Carl August Otto Schiller in 1881 are something to be treasured. Earmarked for bulldozers in 2006, a last minute reprieve would see these Ancestor vines remain in the ground. The grapes are hand-picked from the sixth generation Schiller family vineyard at Hallett Valley in the Barossa. Jason first made this wine in 2008, and since then it has been his flagship wine.
Opens quickly to luxe fruits, black plum & fruits of the forest, building in layers of toasty smoked bacon, tobacco leaf and Mediterranean herbs with nuances of spice and earthy tones. A luxurious palate of old vine fruits, savory overtones and fine slippery tannins. A long harmonious finish.

Louis Barruol describes the microclimate of the vineyard Malleval as “very cold” which allows the grapes to retain acidity and showcase the floral aromas of the local Sérine variety. Aromas and flavors of blackberries and wild strawberries are accented by notes of peppercorns, tobacco, peonies, and violets.
Syrah, with its deep flavors and firm tannins, is a natural match for grilled or smoked meat and dishes featuring herbs, roasted mushrooms, and onions. Seared venison or beef with black pepper and thyme or a Moroccan tagine of pigeon or chicken are complimented by the spicy characteristic of Syrah.

Powerful, with steeped plum and cherry coulis merging with potpourri and charred garrigue on a ripe, lush palate. Packs a wall of iron that provides a ballast for the ripe fruit, while refined tannins build in intensity. Long and complex, with a gorgeous expression of place. Corinne Perchaud Chablis 1er Cru Fourchaume is made from 100 percent Chardonnay
Elegant citrus aromas. Concentrated and finessed, combining flavors of dried fruit with slight hints of woody notes. Perfect balance between body and acidity, long and persistent finish. This one is drinking great now, but as with all exceptional Chablis, it is possible to pay it down for years to come.
Made from 35 year old vines. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.
Pair with Scallops Jacques cream, roast veal with oyster mushrooms.
