In the fall of 2006, BlackBird Cider Works founder Scott Donovan purchased a commercial apple orchard in Somerset, Niagara County, New York. He purchased the land from the Bittner family, who operate Bittner Singer Farms, a large grower of apples, pears, and stone fruit in Niagara county.
As they learned the commercial tree fruit business, Scott and co-founder Margaret Glover also began experimenting with blends of apples making small batches of hard cider using a restored 1920’s cider press. With the help of a very long-time friend and Finger Lakes winemaker Steve DiFrancisco, early hard cider recipes began to form in 5 glass gallon carboys.
ust four years later, in late 2011, the team - now able to competently grow quality apples and pears and produce quality ciders - secured their licenses to produce and sell hard cider. On December 31st, 2011 with very basic bottling equipment, the team pulled off a 150 case New Year’s Eve production run, finishing the last case minutes before the New Year rang in. The BlackBird Cider Works tasting room was opened in March of 2012. That year a modest 900 gallons of hard cider was produced and sold. From those humble beginnings, with the help of many folks from far and wide, the company has now grown to a medium size producer of craft hard cider.
BlackBird Cider Works production facility is located on same property as the Donovon orchards. They have 25 acres of orchards (around 14,000 tress) producing 25 varieties of apples, both class American varieties (Empire, Jonagold and Gala, to name a few) and English and American cider apples.

Pernot Belicard Puligny-Montrachet is made from 100 percent Chardonnay.
The grapes come from the village of Puligny Montrachet, from a small parcel of 3.7 acres.
An expressive nose showing floral aromas, butter and woody notes. The mouth is round and suave with fruity notes and great minerality.
Pair with Sole Meunière, Bresse Poultry with morels, Livarot cheese.
Tenuta di Arceno Valadorna is made from 60% Merlot, 32% Cabernet Franc, 4% Cabernet Sauvignon, 4% Petit Verdot .
The first impression of the nose is earthy with notes of cypress, vanilla bean, and spice. There are deep fruit flavors of black cherries, plums and blueberries followed by pleasant hints of chocolate and dried rose petals. On the palate, the tannins are chewy and accompanied by lively acidity; contributing to a long finish dominated by flavors of dried figs and licorice. The 2016 Valadorna is a time bomb of joy that will stand the test of time and age well in the cellar if patience permits.
This Merlot-led blend is sourced primarily from the Valadorna and Capraia blocks, which produce the estate’s most complex and mineral-based expressions of this variety. The blocks are located within the cooler part of the estate, naturally irrigated by the stream that undulates through it, and feature sandy brown soils and lower yields than typical. These blocks are often the last Merlot blocks to ripen on the estate.
Review:
Solid and radiant in the glass it shows notes of pink grapefruit, flowering geraniums, pressed blueberries, plums and rosemary. There is more in the background in the brightness of the lemon, lime and bergamot notes. Full body, well-polymerized tannins that are decidedly vibrant and tense at the moment and an impressive long finish that will relax over time. Better from 2024.
