Located in the northwest region of France, Brittany is home to some of the finest white wines in the country. Muscadet and Gros Plant grape varietals dominate the wine production of the region.
Muscadet grapes originated from Dutch merchants back in the 17th century. The Dutch merchants at that time emphasize the Burgundy melon grape plantation in the region of Pays de la Loire. The flavor that comes out of Burgundy melon grapes became a strong influence to the flavor of Muscadet that locals and tourists enjoy today.
Gros plant, on the other hand, is known for its natural high acidity. Its acidic quality gives the Gros plant a reputation for being a healthy wine. Even though Muscadet and Gros plant are dominant grape varietals in Brittany, the cider is still Brittany’s traditional drink. Currently, Brittany is deemed to be France’s second largest cider-producing region.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.
The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.
Pairs well with Oysters or shellfish and Sole Meunière.
Jip Jip Rocks Shiraz-Cabernet is made from 55% Shiraz, 45% Cabernet Sauvignon
Deep purple. Boysenberry and mulberry aromas with a hint of cedar and pepper. Similar berry fruits show through on the opulent, textured palate with a lingering finish.
Fermentation took place over 10 – 12 days in a combination of open and static fermenters. The temperature was closely monitored to ensure the wine retains its natural fruit expression. New and older French and American oak was used for the maturation of selected wine parcels over a period of 13 months. These parcels were put together from our family estate to best demonstrate the depth and character of our fruit, balanced by integrated oak.
Review:
It's gorgeously ripe and perfumed on the nose showing blackberry, sweet cherry, vanilla and hazelnut characters with a touch of pepper spice. The palate displays lovely weight and plump mouthfeel, leading to a lengthy supple finish. Brightly expressed and immediately appealing. At its best: now to 2027.
