Burgundy is a region in France that is located 100 kilometers from Paris, stretching another 360 kilometers to Lyon. The tiny vineyards are dotted along the narrow valley and divided into the Chablis, Cote d'Or (divided in Côte de Nuits and Cote de Beaune), and Cote Chalonnaise, Maconnais, and Beaujolais districts. The region has many different soil types and microclimates and has been identified into 400 separate classifications. The soils are predominately clay-limestone, limestone, and marl. The vineyards cover 25,000 hectares and are divided into 99 wine appellations that are made up of 5,200 wine growers. 85% of the vineyards are no larger than 10 hectares. 180 million bottles of wine are produced annually. The Pinot Noir grape produces 90% of the wine that is grown in the region. The most common white grape grown in the region is Chardonnay. The Cote d’Or is where Burgundy's most famous and most expensive wines are found, and is split into two parts: the Cote de Nuits, which starts just south of Dijon and extends to a few kilometers south of the town of Nuits-Saint-Georges, and the Cote de Beaune, which starts at Ladoix and ends at Dezize-les-Maranges. The region is 40 kilometers long, and in some places, less than 2 kilometers wide.

Florence Cholet Puligny Montrachet Les Enseigneres is made from 100 percent Chardonnay.
"Les Enseigneres" is a famous lieu-dit in Puligngy, located next to the Grand Cru Bâtard-Montrachet. Produced from old vines Chardonnay, this fantastic wine is round and well-balanced with good depth, tension and concentration from the prestigious terroir. Persistent aromas and flavors of peach, citrus fruit and tropical fruit, buttery notes and beautiful minerality.
"Sous la Velle" takes its name from its location 'under the village' of Saint Romain. The vineyards enjoy a steep and south facing exposure, planted on marl scree with the vines taking root in the limestone and offering a beautiful minerality to the wine. The nose expresses small red and black fruits, blackcurrant, cherry, raspberry and violet. The mouth provides a rich, supple and elegant wine with a good structure, pure fruit and vibrant acidity.
After destalking the grapes, the juice, skin and pulp are put into the vat for cold maceration. It lasts from 15 to 18 days. The alcoholic fermentation will follow, lasting from 5 to 6 days. These steps may be punctuated by push-downs. Aging in oak for 12 months.

This single-vineyard Chardonnay is produced in the village of Clessé, in the heart of the Mâconnais region in Burgundy, from 45 year-old vines planted on the limestone based soils of the Mount Epin.
Brillant robe with golden reflections. A nose with pear and white peach notes. Fresh, ample and full-bodied, a great balance in the mouth, with tension and subtle wooden notes. The elegance of this pure wine lingers on the palate.
Harvest is made by machine on non-irrigated vineyard. The wine has been aged on fine lees for 10 months with the major part in a stainless steel vat and the remaining in new oak barrels made out of French oak of a high quality.
No use of sulfites during harvest and vinification.
Fresh, ample and full-bodied on the palate, the wine is perfect by itself as an aperitif and delicious during the meal with grilled fish tacos or a Pad Thaï.
Guillemot-Michel Une Bulle is made from 100% Chardonnay.
This cuvée was created originally to celebrate the wedding of daughter Sophie Guillemot and Gautier!
The Chardonnay grapes come from a historic parcel of the estate - La Lie-Monin - that had been leased for nearly 30 years and that the family decided to cultivate again in 2013 following up a change of viticulture practice (towards organic) from their main neighbor.
"Bulle" is produced with the "methode ancestrale" - meaning only natural sugars are used from grapes that are harvested at optimum maturity, being less acidic and more aromatic, giving a beautiful fresh and elegant sparkling wine of crisp and juicy flavors, firm acidity and a long finish.

Oumsiyat Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
Classic Cabernet Sauvignon with Dark Berries Dominance mixed with tobacco and chocolate aromas. Concentrated tannins, balanced with good acidity and persistence finish.

The fruit was carefully sorted to ensure only healthy, ripe grapes were vinified. Traditional fermentation took place in stainless steel tanks at controlled temperatures of 28°C, with remontage or pump overs took place periodically to oxygenate the wine and extract tannins. Pigeage or punching down of the cap also took place. A long post-fermentation maceration took place to extract color, flavor and impart structure to the wine. The wine was gently filtered prior to bottling.
