Burgundy is a region in France that is located 100 kilometers from Paris, stretching another 360 kilometers to Lyon. The tiny vineyards are dotted along the narrow valley and divided into the Chablis, Cote d'Or (divided in Côte de Nuits and Cote de Beaune), and Cote Chalonnaise, Maconnais, and Beaujolais districts. The region has many different soil types and microclimates and has been identified into 400 separate classifications. The soils are predominately clay-limestone, limestone, and marl. The vineyards cover 25,000 hectares and are divided into 99 wine appellations that are made up of 5,200 wine growers. 85% of the vineyards are no larger than 10 hectares. 180 million bottles of wine are produced annually. The Pinot Noir grape produces 90% of the wine that is grown in the region. The most common white grape grown in the region is Chardonnay. The Cote d’Or is where Burgundy's most famous and most expensive wines are found, and is split into two parts: the Cote de Nuits, which starts just south of Dijon and extends to a few kilometers south of the town of Nuits-Saint-Georges, and the Cote de Beaune, which starts at Ladoix and ends at Dezize-les-Maranges. The region is 40 kilometers long, and in some places, less than 2 kilometers wide.

This is a charming, rich, focused and delightful white. Medium-bodied with a smooth texture, the wine has a fresh backbone of acidity, clean apple and citrus flavors, and an excellent balance. A most refreshing quaff and one that is great value. A delicate, expressive wine of exceptional quality.

Chavy-Chouet Bourgogne Blanc Les Saussots is made from 100 percent Chardonnay. A medium yellow straw color in the glass. On the nose, you will find layers aromas of cured lemon and hints of coconut and mango. On the palate, the juice has clean flavor, fresh acidity, and excellent balance. Vanilla notes follow through to the slightly creamy finish.

Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.
Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.
Average age of the vines: 70 years old.
Density of planting: 10,000 vines per hectare.

Very little intervention. Less pigeage (punch down of the cap) but some remontage (pump-over)

All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.
A complex Carignan mixing black fruits and spices. Intense color and fine structure with rounded tannins and volume in the mouth.

The fruit was carefully sorted to ensure only healthy, ripe grapes were vinified. Traditional fermentation took place in stainless steel tanks at controlled temperatures of 28°C with selected yeasts. Remontage or pump overs took place periodically to oxygenate the wine and extract tannins. A short post-fermentation maceration took place to extract color, flavor and impart structure to the wine. Ageing in stainless steel preserved the integrity of the pure fruit character. The wine was lightly filtered before bottling.
