Cabernet Sauvignon is grown in almost every region that produces wine, and is one of the most popular red wine grape varieties in the world. Today, cabernet sauvignon can be found in different regions all over the globe, including Canada, France, or the Napa Valley in California. Cabernet Sauvignon is a popular variety that is fairly new. Sometime in the 17th century in the Southwestern part of France, a accidental mixture between Cabernet Franc and Sauvignon Blanc crafted Cabernet Sauvignon. Cabernet Sauvignon was the most planted red wine grape variety for most of the 20th century until Merlot became even more popular. The thick skin and tough vines allow the variety to endure harsh weather, rot, and other difficult conditions, and the flavors produced by the grape are consistent. Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.
Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. Built to age for decades, this collectible wine opens up after a few years of cellaring and is particularly representative of this special vineyard from the hillside of Knights Valley. Mon Chevalier features the interaction of the loamy, well drained and rocky volcanic soil, the typical sunny mountain climate and the low-interventionistic Morlet winemaking approach.

The 2018 Cabernet Sauvignon Mon Chevalier comes from the Knights Valley, just north of Napa Valley in the larger Sonoma County, and it always seems to me to have one foot in Napa and one foot in Sonoma. Boasting a similar ruby/purple color (as do all of the releases here), it’s slightly more reserved and stately (knightly, if you will), with building aromas and flavors of blackcurrants, toasted bread, dried violets, baking spices, and loamy earth. These carry to a pure, full-bodied, multi-dimensional Cabernet that’s flawlessly balanced, has ripe yet certainly present tannins, a notable sense of minerality, and a great, great finish. It’s just another incredible wine from Luc Morlet that can be drunk today with ample pleasure or cellared for 20-30 years if, for some reason, you feel the need to delay gratification.

Lots of cassis and black raspberry fruits as well as classic Mount Veeder notes of lavender, violets, bouquet garni, and rocky, mineral-like notes emerge from the 2018 Cabernet Sauvignon. A deep, full-bodied mountain Cabernet Sauvignon, it has a plush, layered texture, beautiful tannins, a deep, concentrated mid-palate, and a great finish. Another head-turning wine from this label, it’s a candidate for the best Napa Valley Cabernet Sauvignon out there at the price point.

The 2018 Cabernet Sauvignon from Mt. Brave is fabulous. Inky, rich and explosive, the 2018 possesses tremendous depth and tons of personality. Graphite, blue/purplish fruit, blackberry jam, bittersweet chocolate, sage, lavender, menthol give the 2018 tons of character to match its explosive feel. The brooding, backward wine is going to need quite a bit of time to unwind, but boy is it gorgeous.

The 2019 Cabernet Sauvignon is a classic Mount Veeder wine loaded with strong savory and mineral accents. Black fruit, graphite menthol and licorice lend complexity to this huge, explosive Cabernet Sauvignon. The tannins are pretty fierce at this stage, so readers should plan on being patient.

Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.

Murray Cabernet Sauvignon Red Mountain is made from 78% Cabernet Sauvignon, 10%, Merlot , 6% Malbec, 6%, Petit Verdot.
A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.
As much as possible, winemakers Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.

Ghost Hull Cabernet Sauvignon is made of 100 percent Cabernet Sauvignon.
Aromas of blackberry, elderberry and ripe plum are accentuated by notes of mocha, fresh tarragon, vanilla and oak. The palate is full-bodied and offers a lovely balance of acidity and tannins accompanied by rich flavors of dark fruit and black currant, ending with a juicy and lingering finish
Riebeek Chardonnay is made from 100 percent Chardonnay.
This unoaked Riebeek Chardonnay displays a brilliant green-gold color. The style is dry but fruity. The nose offers exceptional tropical aromas that follow through in the palate with a well-rounded finish of lingering citrus fruits. It is lovely with most entrees from crisp salads to creamy soups and chicken, whether served grilled or in a creamy sauce.
Free run juice was used. After settling and acid adjustment, juice was inoculated with selected yeast. Fermentation temperature remained between 13-14 degrees Celsius. Wine was left on lees for a few months prior to bottling to enhance the flavour.
It is lovely with most entrees, from crisp salads to creamy soups and chicken, whether served grilled or in a creamy sauce.
