The Château de la Chaume is located in Corgoloin in Côtes de Nuits. He is surrounded by a park of 10 Ha full of beautiful trees.
Our wines are vinifyied in the cellar of the Château de la Chaume. Cellier du Château de la Chaume was created in 1993. We pay attention to the winegrowers that we choose for our wines. We strive to work with winegrowers corresponding to our values, that is to say, the excellence of wines.
The cellars were completely redesigned and modernized with a stainless steel wine storehouse, which welcome the greatest wines and in particular, the red and white wine from the Côte d’Or.

Aligoté is a grape variety that adapts very well to different types of soils. The color is a pale gold yellow; this wine is clear and young. This a gourmet wine and surprising by his energy, offering acid and fruit hints.
Paired with grilled fish, asparagus, white meat in sauce.
Cellier du Chateau de la Chaume Bourgogne Chardonnay is 100% Chardonnay.
Clear yellow color.
Aromas of white flowers, honeysuckle, leme tree and dried fruits.

Chaume Bourgogne Rouge Pinot Noir 2022 is made from 100% Pinot Noir.Color: bright ruby red
Bouquet: blackcurrant, raspberry and hints of blackberry
Bouche / Palate: smooth attack, balanced, fine tannins and smooth finish
Butterflied lamb, char-grilled steak, venison. Dishes like cassoulet or duck with olives if they're more rustic. Roast goose.

Color: Pale yellow
Bouquet: White flowers, honeysuckle, linden tree and dried fruits.
Palate: Very pleasant, balanced with tension and nice minerality
Drink as an Aperitif or pair with fish, shellfish.
Chaume Chablis is made from 100% Chardonnay.
Light yellow color. The wine displays aromas of white flowers, honeysuckle, linden, citrus as well as white and dried fruits.
In the mouth, the wine is well balanced with tension and a nice classic minerality found in Chablis.

Chavy-Chouet Bourgogne Blanc Femelottes is made form 100 percent Chardonnay.
This is a charming, rich, focused and delightful white. Medium-bodied with a smooth texture, the wine has a fresh backbone of acidity, clean apple and citrus flavors, and an excellent balance. A most refreshing quaff and one that is great value. A delicate, expressive wine of exceptional quality.
The grapes from this wine are grown from the Puligny-Montrachet area. (either outside of the AOC limit or with younger vines).

Aged 10 months in oak barrels (10% new, the rest in 2-3 year old barrels).
Castellare di Castellina 'I Sodi di San Niccolo' Toscana IGT is a blend of Sangioveto (85%-90%) and Malvasia nera (15-10%)
Intense ruby red in color and with a great olfactory concentration, thanks to the presence of a ripe red fruit that leads to notes of jam, but also spices, vanilla and licorice. In the mouth the wine is characterized by a dense and elegant texture, also supported by the important acidity of the Sangiovese, the tannins are absolutely sweet and the finish is long and of great persistence.
Excellent with cured meats and savory meats, with succulent dishes and mature cheeses. Much appreciated when paired with Tuscan Pecorino and Parmigiano.
The masterpiece of Castellare, I Sodi di San Niccolo, has twice placed in the top 100 of Wine Spectator, and has been awarded “Three Glasses” by Il Gambero Rosso.
I Sodi di San Niccolo is produced solely with native varieties: 85-90% of Sangioveto and 10-15% of Malvasia Nera, I Sodi comes from the two best crus of the farm.
The word "I Sodi" was used by the Tuscan farmers to describe those grounds which had to be processed by hand, being too hard (in fact firm) or too steep to allow for the employment of the horses, unlike the "fields" that make the grounds more easily cultivable.

Packed with ripe, juicy cherry, blackberry, pomegranate and floral aromas and flavors, this red is supple and beautifully integrated. Earth, iron and tobacco accents add detail as this winds down on the lazy, resonant aftertaste, showing terrific energy. Sangioveto and Malvasia Nera. Best from 2026 through 2043.

The 2020 I Sodi di San Niccolò is fabulous. It is a rare wine that offers power, finesse and translucent energy at once. All the elements are in perfect balance. I can’t remember a Sodi like this one, a wine that is so complete and alluring right out of the gate. Rose petal, lavender, spice, orange peel and sage open first. What impresses me most about the 2020 is the finesse of its tannin, something I have very rarely seen in Sodi at this early stage. Magical. This is remarkable in every way.
