The 2021 Shafer Hillside Select is crafted exclusively from grapes grown on Shafer's rugged hillside vineyards, where steep, rocky soils push the vines to produce low yields of intensely concentrated fruit. Lady Hill Cabernet Sauvignon Columbia Valley is made from 100% Cabernet Sauvignon.
Intense hues range from wine purple to sangria showcasing Cabernet Sauvignon’s genetic predisposition to tiny berries packed with color making molecules called anthocyanidins. Chocolate covered cherry and subtle blackberry liqueur combine New World fruit flavors with savory olive tapenade, dried herb de provence and a tinge of minerality found in ancient volcanic soils. The subtle wood impact of 10% new and once filled barrels keeps the focus on fruit and spice, while maintaining the characteristic dusty tannins and lingering finish that Cabernet Sauvignon has become famous for.
Pair with pan roasted veal chops, grilled veggie pizza or a can of Cougar Gold Cheddar.
Lady Hill Pinot Gris Willamette Valley is made from 100% Pinot Gris.
An aromatic procession of passionfruit and Meyer lemon embraces the delicate floral side of honeysuckle and white flowers. Bright flavors of citrus rind and white peach are highlighted with a crisp minerality. The mouthfeel indicates almost no malolactic conversion, showcasing the crisp refreshing acidity of Granny Smith apples.
Finn Hill Vineyard and Bellevue Cross sit on opposite sides of the Yamhill-Carlton and McMinnville AVAs, but offer a very similar profile of bright citrus and a grassy herbaceousness. Delicately pressed into a stainless steel tank, the juice was inoculated with a commercial yeast bred to enhance fruity and floral aromatic esters. 2 neutral French oak barrels from Bellevue Cross were blended into the remaining stainless portion to balance any tight acidity the wine was showing.
Pair with sushi, goat cheese, and every salad imaginable from a classic Greek horiatiki to its grainy cousin tabbouleh.
Lady Hill Pinot Noir Willamette Valley is made from 100 percent Pinot Noir.
A combo of garnet to cardinal highlights the hues of this fruit forward Willamette Valley Pinot Noir. Subtle floral hints of tea leaf and rose petal give way to a complexity of viney, brambled red and black fruit, wet moss and baking spices. A hint of savory jerky barrel nuance and turned earth contrast the freshness and vibrancy of boysenberry fruit. The finish is refined and juicy, as the elegant tannin structure builds into a crescendo of salivating acids built for food.
Pair with herb crusted pork loin, mushroom risotto drizzled with truffle oil, or a creamy textured Roucoulons cheese.
Jubilation is our newest wine in the Colgin Cellars collection. Jubilation is our Cabernet Sauvignon-based wine created with a selection of barrels that display earlier drinking characteristics from our three hillside vineyards. As our vine age has matured and small additions have been made to our original holdings, we had the privilege of increasing our selectivity. Following the blending of our single-vineyard wines, we were fortunate to have a collection of barrels that conveyed the same elegance and complexity for which we are known, yet on a more supple, approachable frame. Jubilation is a wine ready to enjoy now, with the pedigree to age gracefully in the cellar, maintaining the Colgin Cellars’ hallmarks of perfume, freshness, and minerality. The inaugural bottling of Jubilation from the 2016 vintage was released in late 2020. Future vintages are destined for select members of the fine wine trade.

Product Description
This year's Harrison Hill is a bigger and darker version, while retaining the classic Harrison Hill characters of old-vine Cabernet Sauvignon and its unique terroir. The nose features a bewitching combination of Bing cherries, plums, lead pencil, violets, and wild herbs. On the palate this wine surprised us with its density and power, yet retained the elegance and long, silky finish that are so characteristic for Harrison Hill. Definitely one for the cellar; or put a young bottle in the decanter for an hour before enjoying.
"The 2007 Harrison Hill (located in Yakima Valley, the second oldest vineyard in Washington) is made up of 65% Cabernet Sauvignon, 25% Merlot, with the balance Cabernet Franc and Petit Verdot. Dark ruby-colored, it proffers an inviting nose of sandalwood, pencil lead, herbs, violets, black cherry, black currant, and plum. Sweetly-fruited, succulent, and spicy on the palate, this well-balanced offering will benefit from 2-3 years of cellaring and deliver prime drinking from 2013 to 2027."

The DeLille Cellars Estate
Founded in 1992, DeLille Cellars is a small family owned winery located in Woodinville, Washington. Their goal is to make the very best handcrafted, old-world style red and white wine made in the State of Washington.
The DeLille Cellars Vineyard
The beautiful ten-acre site sits above the Woodinville valley floor, overlooking the wineries of Chateau Ste. Michelle and Columbia Winery. All DeLille wines are elaborated with the highest “hand-crafted” standards. Only grapes from the oldest and best vineyards in Washington State are used. They are hand picked and hand sorted at crush, using only the finest berry clusters. The wines are aged in 100% new French oak barrels each and every year and are never filtered.

In the words of David Schildknecht, The Wine Advocate, December 2012:
"Winemaker-vineyard manager and self-styled "old world traditionalist" Chris Upchurch has been the guiding spirit of DeLille Cellars since its early-’90s inception, although the ostensibly Old World models followed have evolved significantly in both marketing and winemaking terms. Early-on, DeLille, unsurprisingly, – like so many other U.S. wineries – focused exclusively on a Bordelais vision. That said, Upchurch and his partners had been in business for nearly a decade before they purchased a vineyard: Grand Ciel, adjacent to Ciel du Cheval and Galitzine and managed by the accomplished and (seemingly in Red Mountain at least) ubiquitous Ryan Johnson. DeLille also vinifies and bottles separately the fruit of Harrison Hill’s antique vines (for more about which see my tasting note on the 2009 vintage) and a second estate vineyard project is afoot. The established if misleading name Chaleur Estate was retained for DeLille’s flagship wine crafted from contract fruit (second wine: D2); while the designation Doyenne – utilized from early-on for Syrah – morphed into an officially separate winery for experimental-minded exploration of themes inspired by Southern France. (For database purposes, we at The Wine Advocate / eRobertParker.com treat Doyenne as part of the relevant wines’ descriptions and a DeLille sub-label, which reflects the way those wines are marketed and the spirit in which they were presented to me. Klipsun Cabernet Sauvignon Red Mountain is made from 84% Cabernet Sauvignon, 4% Merlot, 4% Malbec and 8% Syrah.
The 2017 vintage started out with a cool, wet winter, with significantly above average snowfall in eastern Washington. Red Mountain had a 24% increase in rainfall in 2017 over the 10 year average. Going into spring, the cool trend continued. As a result, bud break at Klipsun was behind the historical average and significantly behind the most recent warm vintages of 2013 2016. Bloom was also slightly delayed. Because of the cool weather, set was lighter than usual which translated into significantly less fruit in 2017.
The early part of the summer saw average temperatures followed by above average temperatures in July and August. As a result, he at accumulation was a bit above average for the season, despite the cool start. And because of the smaller than normal yield, harvest began right on schedule, perhaps even a bit early for some of the whites. In the second half of September, when Klipsun traditionally harvests all the reds, the temperatures cooled considerably, which delayed ripening. This allowed for luxurious amounts of hang time without the threat of increased sugar accumulation, stretching harvest into the first week of October. A s a result, all fruit going into the 2017 Klipsun Cabernet Sauvignon could be picked at perfect sugars levels with great fruit maturity and flavors. Overall, the quality of t he 2017 harvest is as high as the 2016. However, the style is slightly different. The 2017 wine has a firmer structure, more spice & mocha in the nose and will take a few mo re years than the 2016 to reach a perfect balance between fruit and tannin.
Review:
The 2017 Cabernet Sauvignon Red Mountain is composed of 84% Cabernet Sauvignon, 4% Merlot, 4% Malbec and 8% Syrah, which immediately emanates with aromas of dark roasted espresso bean, toasted oak, dried tobacco and dusty black fruit tones of cassis, currant and blackberries covered in dark cocoa powder. Full-bodied, generous in complexity and still tight in the mouth, the wine unpacks layers of cedar and vanilla tones with dusty purple flowers and bitter dark chocolate across the mid-palate, giving way to fine-grained tannins that will loosen with time. As the wine sits on the palate, the 100% French oak regimen is on full display for all to see. The wine lingering long and continues to evolve in the mouth, ending with a drying finish that highlights the oak and terroir. It’s still a baby, and I would keep it in the cellar for another few years before popping the cork—this will effortlessly coast for more than a decade. The 2017 vintage marks the second release of this wine, with 6,300 bottles produced. It comes from its namesake vineyard, first planted in 1984 on Red Mountain. I’m keeping my eye on this producer. I’m impressed, and even though the oak may be a bit much at the moment, it's still delicious. - Wine Advocate 94+ Points
Corinne Perchaud Chablis 1er Cru Fourchaume is made from 100 percent Chardonnay
Elegant citrus aromas. Concentrated and finessed, combining flavors of dried fruit with slight hints of woody notes. Perfect balance between body and acidity, long and persistent finish. This one is drinking great now, but as with all exceptional Chablis, it is possible to pay it down for years to come.
Made from 35 year old vines. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.
Pair with Scallops Jacques cream, roast veal with oyster mushrooms.
