
Georges Pico established the Domaine back in 1980. They are located in the village of Courgis, 3 kilometres South-West of Chablis. Georges started with 4 hectares and worked at that time with his father-in-law. At one point, the Estate was spreading over 24 hectares.
Today, he works with his son Thomas, who is now in charge of the vinification.
Every year for the last few years, Georges has been giving his son Thomas, a few parcels. While Thomas has decided to vinify and bottle his wine separately (under the label "Pattes Loup"), he decided to produce more modern, international style wines, with heavy presence of oak and the use of barrel fermentation and barrel ageing.
In a completely opposite style, the wines at the Domaine du Bois d'Yver are not aged in Oak and don't go through a barrel in the vinification or ageing process.
Today, Thomas has 8 hectares for his own brand and Georges kept 16 hectares for the production of the Domaine du Bois d'Yver.
Georges also produces a Chablis Premier Cru "Montmains" that we will problably get in the future but that was already completely sold out when we visited the Estate in January 2013.

The Sonoma Coast is the largest appellation in Sonoma County, strongly influenced by its proximity to the ocean and heavy rainfall—producing more than twice the annual amount of its inland neighbors.
Our Sonoma Coast vineyards span the northern true coastal zone and the southern edge of the appellation. This distinctive blend is made from 11 different clones, fermented in predominantly stainless steel, and aged for 16 months in 38% new oak. The resulting wine has an energetic acidity with cascading layers of black cherry and elderberry, followed by a lasting finish.
Fact of Note: This Sonoma Coast blend was the longest to ferment in stainless steel from our Appellation Series.
Mollydooker Enchanted Path Shiraz - Cabernet Sauvignon is made from 71% Shiraz (the same juice that goes into Carnival of Love) and 29% Cabernet Sauvignon.
TASTING NOTES: This wine is both strong and inviting, showcasing rich flavours harmoniously balanced by delicate tannins, resulting in a wine that is both deep and refined. There is an abundance of dark fruit flavours such as plum jam and mocha, alongside the vibrant notes of cherry and strawberry, creating a dynamic flavour profile. The Cabernet characteristics seamlessly complement the bold Shiraz qualities, crafting an intriguing and captivating blend. TECHNICAL NOTES: The grapes were grown on the Gateway and Rivers Lane vineyards in McLaren Vale. Barrel fermented and matured in 94% American and 6% French oak, using 85% new and 15% one year old barrels. The required Marquis Fruit Weight™ for the Love Series is 85% – 95%. The Actual Fruit Weight for 2022 Enchanted Path is 86%.
Review:
The sensational 2022 ‘Enchanted Path’ is a gorgeous blend of 70% Shiraz with the remainder Cabernet Sauvignon. The nose is gorgeous with fresh sage alongside espresso bean, blueberry compote and shades of black licorice. The palate is powerful and intense with a refined texture. Gorgeous now, watch this evolve over the next twelve to fifteen years to come.
