France is the largest wine producing country in the world. The history of French wine traces back to Roman times. French wine is controlled by the AOC system, Appellation d'Origine Controlee. This system guides as to what grapes are allowed to be grown in each region. The system was created using hundreds of years of growing history and the use of terroir. Terrior is a French wine term that encapsulates all the variables that apply to a wine's tastes…such as soil, climate, and the area the grape is grown.
France is home to many grapes that have now been cloned throughout the world. Not only have France's grapes been replicated, but so have their wine making styles. Even though they are the strongest player in the wine producing world, they now have competition from the new world wine producing countries.
Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.
Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.

The Clos des Corvees de Citeau is a .96 hectare vineyard located in Meursault. It was part of the appellation of l'Ormeau; an old property of the Cistercian monks who made a two meter wall around the vines. The tall walls create a micro-climate that encourages early growth and ripening.
Thanks to its clay rich soil, the vineyard produces a rich, opulent and luscious wine that can be enjoyed young. This is a powerful and elegant white Burgundy; expressive, fresh and fruity with intense and strong flavors.

This fine and sensual wine, with hints of blossom and roasted hazelnut, has a concentration that makes it discreet in its youth but powerful over time. Located right next to Puligny-Montrachet, the plot of Les Charmes was planted in 1943 on a sandy clay-limestone soil that produces small, concentrated berries for an intense wine that is perfect for ageing.
Domaine Chavy Chouet Meursault Les Narvaux is made from 100% Chardonnay from extremely steep vineyards.
Les Narvaux in Meursault sits at the top of the slope on a steep, shallow, limestone plot.
TW Tasting notes: A lively and balanced wine with aromas of white-fleshed fruit. It offers hints of toasted almond on the nose and is very long on the palate. Mineral and energetic, it will only open up fully after a few years in the cellar. In the top 5 of my top Meursault picks.

Chavy-Chouet Meursault Les Vireuils is made from 100 percent Chardonnay.
The "Les Vireuils" parcel is located on the top of the hill above Meursault, right below the forest.
It is slightly cooler parcel with a limestone soils with a higher presence of rocks. The wines coming from this parcel are always sharp with a vibrant acidity and a lot of freshness.
Tasting notes: Concentrated, powerful, and lively, Les Vireuils has all the classic characteristics of the Meursault appellation. Its sophistication, structure, and assured elegance reflect the character of the soil.
It is a great match with fish in creamy sauce, cheese, white meats.

Alain Jaume Chateauneuf Du Pape Rouge Vieux Terron is made from 85% Grenache, 10% Syrah, 5% Mourvèdre
An intense purple color is followed by ripe red fruit aromas, such as sweet black cherry.
The palate reveals clearly the aromatic complexity: spices and black fruit are boasted with soft tannins. The finish is long with aromatic hints of liquorice and pepper. Red raspberries, star anise and hints of cinnamon.
It will accompany game, red meat or meat in sauce and strong cheeses.
Soil types
Châteauneuf du Pape vineyards are mostly located on plateaux. Stony-clay soil covered with large rolled stones. Some plots are more sandy.
Winemaking and aging
Harvest is destemmed and crushed. Fermentation temperature is controlled at 30°C. Vatting period of 18 to 21 days. Matured in vats (80%) and oak casks (20%).
