France is the largest wine producing country in the world. The history of French wine traces back to Roman times. French wine is controlled by the AOC system, Appellation d'Origine Controlee. This system guides as to what grapes are allowed to be grown in each region. The system was created using hundreds of years of growing history and the use of terroir. Terrior is a French wine term that encapsulates all the variables that apply to a wine's tastes…such as soil, climate, and the area the grape is grown.
France is home to many grapes that have now been cloned throughout the world. Not only have France's grapes been replicated, but so have their wine making styles. Even though they are the strongest player in the wine producing world, they now have competition from the new world wine producing countries.

A blend of Grenache, Syrah, and Mourvèdre brought up in tank, the 2019 Côtes Du Rhône La Dame Rousse is a big, rich, powerful Côtes du Rhône loaded with notions of smoked black cherries, licorice, scorched earth, and ample minerality. These all carry to a medium to full-bodied Southern Rhône that has terrific purity of fruit, ripe, present tannins, and a great finish. I love its balance and it’s going to deliver ample pleasure over the coming 4-6 years.

"For this appellation this is a remarkably restrained and rather elegant red with complex red-fruit, baking-spice and terra-cotta aromas. The self-confidently dry tannins build gently and keep the alcohol well in check until right at the end, when you do feel a touch of warmth. A blend of grenache and syrah. The 2024 Domaine De La Mordoree Tavel La Dame Rousse is the classic base Tavel and it's based on 60% Grenache, 15% each of Cinsault and Syrah, and the rest Clairette. It’s a perfect example of this incredible appellation in the south of France, just across the river from Châteauneuf-du-Pape. Sporting a translucent ruby hue, it has a textbook Tavel nose of wild strawberries, raspberries, minty garrigue, and white flowers. It's beautifully balanced, medium-bodied, has a pure, layered mouthfeel, and outstanding length, with a clean, crisp, dry finish. Rosé doesn't get much better, and I wish I could pour this beauty for every reader interested in what Tavel offers.

Siegel Special Reserve Chardonnay is made from 100 percent Chardonnay.
This Chardonnay has a pale yellow color. On the nose is is complex with citrus and tropical fruit aromas balanced with notes from the oak aging. On the palate it has good acidity with a long finish.
VINIFICATION: Alcoholic fermentation occurs at 16-17 degrees C. When the alcoholic finishes part of the wine is kept on a pump-over program.
FINNING AND FILTRATION: Once the wine has been blended it is clarified and then undergoes cold stablisation and is later filtered through clay.
AGING: Aged in French oak barrels for 6 months.
Pairs well with fish like Tilapia, salmon and white meats.
Thorn Clarke Shotfire Quartage is made from 58% Cabernet Sauvignon, 16% Cabernet Franc, 16% Merlot, 10% Petit Verdot.

The fruit was harvested at night. Fermentation was carried out in a variety of small capacity fermenters. After pressing the parcels were filled to French oak (12 months) for maturation. The wine was racked after six months and the parcels were blended to form the final wine.
Shotfire Quartage is based on the five traditional red varieties found in the Bordeaux region of France (Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec). The Thorn-Clarke winemakers use at least four of the varieties to create the blend each year (occasionally, they can get over excited and use all five). The blend is a reminder to not only look to the future but also to keep an eye on the past and tradition.
Much like the previous vintage, the 2020 harvest has produced wines of immense quality but with very low quantities. Another dry winter and mild weather during the ripening period lead to great varietal flavours and excellent tannin structure. Upon harvest the bunches were few and far between and the berries themselves small. This led to fruit with intense flavor and color along with great power and balance.
This generous blend boasts a rich deep red-purple color. Aromas of blackberries, satsuma plum and anise fill the glass. On the palate, plush tannins are accompanied by rich notes of cassis and blackcurrant. Together they produce a wine with lavish density, complexity and length. A wine that can be enjoyed now or laid down to age for many years.
The Shotfire range honors a family pioneer who worked the Barossa goldfields in the late 1800's. He had the hazardous job of being a 'Shotfirer'; one who handled the explosives to be used in finding that rich vein of gold.
