Guillemot-Michel Vire-Clesse Charleston is made from 100 percent Chardonnay.

This cuvée is produced from hundred-year old vines that the great-grandfather planted after he returned from World War I. The family wanted to honor his memory and vinify these vines the same way he did, in old demi-muids.
Charleston is a deep and complex wine that gently express itself in the glass, offering juicy white fruit flavors and a lengthy finish.

Charleston is vinified and aged for one year in demi-muids of over 10 years old. During the following harvest, the wine is racked and placed in vats for another 6 months of aging before bottling.

Fish in white sauce, poultry in creamy sauce, hard cheeses.

The Tempest was one of the first wines, and the first Proprietary Blend, we produced. At the time, it seemed almost uncanny that we were able to access three grape varietals at the same time from the same vineyard; it was blind luck or perhaps the proverbial “perfect storm.” The resulting wine reflected a fierce determination to brave the storm as well as a new desire to realize the possibilities of Merlot. The Tempest is still made with outstanding grapes, from vineyards such as Blair in Calistoga and cooler sites like Farella and Orchard. Predominantly Merlot with lesser amounts of Cabernet Sauvignon depending on vintage, The Tempest is a roiling cauldron of fresh red and blue fruit and silky tannins – a wine that shows what Merlot can be in the right hands, from the right vineyards.

Review:

The 2022 The Tempest is a blend of 67% Merlot, 10% Cabernet Franc, and 23% Cabernet Sauvignon. Deep garnet-purple colored, it comes skipping out of the glass with bright, cheery notes of black raspberries, mulberries, and kirsch, leading to hints of lavender, wild sage, and aniseed. The medium to full-bodied palate delivers bright, crunchy fruit with firm, fine-grained tannins and great tension, finishing on a lingering peppery note. This was bottled in March 2024.

Seven has been brewed by making use of soft ground water from Echigo Yuzawa, which is the utmost characteristics of Shirataki. This sake features fruity and elegant aromas of peach, coconut and orange complimented by floral, ginger, cucumber and almond. On the palate, generouse and rich flavors of honeydew, almond and toasted rice, with balanced acidity and smooth aftertaste.

SEVEN - The name "SEVEN" reflects the intention of brewing new sake in a new era with two seventh generations.

The current head of Shirataki Sake Brewery, Shintaro Takahashi, represents the seventh generation.

The general manager of a sake brewing is called a toji. In 2018, Takaki Matsumoto was appointed as the seventh generation brewer at Shirataki Sake Brewery. He was 27 back then - a young new toji who will open up a new chapter for Shirataki Sake Brewery.
Seven is the first brand that Mr Matsumoto planned from scratch as a chief brewer.

The finest sake rice is luxuriously polished to a rice polishing ratio of 25%, and carefully brewed in small tanks during the coldest months of January and February. The mash is pressed with a traditional press called "fune" and the mash is poured into bags. The bags are laid or hanged in a fune, then the fresh sake is squeezed out naturally. No dilution with water was done to enjoy a fresh and rich taste.

Zuccardi Finca Piedra Infinita Altamira is made from 100 percent Malbec. 

Deep red in color, the Zuccardi Finca Piedra Infinita Altamira expresses great fruity character with notes of red fruit. Grand structure and acidity on the palate with mineral with notes of wet stone and graphite and a long finish.

Quiet complexity that needs time in the glass. While it is brooding and deep, there is also a perfumed, floral and herbal aspect that makes it so attractive and unforgettable, even at such an embryonic stage. Freshly crushed blueberries, dried licorice, decadent violets, crushed stones and ash on the nose. Satin-textured tannins on the palate, which are tense, chalky and seamless. Powerful and juicy with impeccable balance. A great, cerebral and intrinsic malbec from Argentina. You can drink now, if you want, but it is a wine that you’d want to keep for the next two decades. A real charmer, especially for the wine nerds. Buy this and try!

Realm Cellars Bard Red Blend is made from a blend of 83% Cabernet Sauvignon, 7% Merlot, 6% Cabernet Franc, 3% Petit Verdot, 1% Petite Sirah.

The 2021 is the largest and most complex blend we've ever made with dozens of components from vineyards across the realm of Napa Valley. This vintage includes new vineyard sources from Calistoga, Rutherford and Oak Knoll AVA, allowing us to broaden our painter’s palette. The Bard is generally more approachable in its youth than some of our single vineyard bottlings, but we expect it to age for many years to come. This is our first time using a technical cork for this wine, which should guarantee consistency and improve longevity.
Blend: 83% Cabernet Sauvignon, 7% Merlot, 6% Cabernet Franc, 3% Petit Verdot, 1% Petite Sirah.

This beauty has a killer bouquet of cassis, spring flowers, graphite, chalky minerality, and violets. This carries to a full-bodied, seamless, silky, flawlessly balanced effort revealing fine tannins, a good sense of freshness, and a thrilling finish.

"Stunning stuff, the 2021 Cabernet Sauvignon Black Label offers a full-bodied, deep, majestic style as well as beautiful aromatics of cr me de cassis, violets, flowers, and nicely integrated background oak. It has ultra-fine tannins, flawless balance, and a regal, age-worthy style that has so much to love. It, however, is not going to be for the instant gratification crowd and this actually shut down pretty quickly with air. I would hide bottle for 4-6 years and it s going to cruise over the following two decades in cold cellars."
