Review:
The first vintage here was 2018. The 2019 Syrah is a saturated purple hue with a smoking good bouquet of smoky black fruits, cured meats, and leather, and it hits the palate with full-bodied richness, a plush, layered mouthfeel, and ripe tannins. It's balanced, has a deep, rich, concentrated style, and a great finish.

Finca La Pared Syrah shows an expressive nose of dark fruit aromas and a mineral character.
Intense, direct, playful. Balance of forces.
Machine harvested at night. Grapes with great concentration. Prefermentation cold maceration (cold soak) for three days. Fermentation and maceration are carried out in small stainless steel tanks, combining pumpovers and délestages The process is prolonged for approximately 20 days with gentle extractions. We gently press the grapes and the wine carries out its malolactic fermentation in even smaller stainless steel tanks. When the wine has naturally lost the thickest suspended solids, we transfer it to oak barrels. We chose American oak barrels that enhance the freshness of the wine and its refinement. The wine is aged for 12 months in the same barrels without racking. It isbottled after light filtration without fining.

"Blackberries, ground pepper, violets, and some gamey, bouquet garni-like notes all emerge from the 2021 Syrah, a medium to full-bodied, deep, rich, wonderfully layered Syrah that seems to be a hypothetical blend of a California Syrah with an Hermitage. Drink bottles through 2031."

Deep violet red in color. Its aromas are intense and concentrated, with hints of black and red fruits with smoky touches obtained during its oak aging.
In the mouth it is persistent, full of juicy yet firm tannins and balanced acidity. It is frank and expressive, modern and of great personality.
Pairs with red meat, pasta with tomato sauce and hard cheeses.

"It’s worth buying anything with Cabernet Franc on the label from Finca Las Divas, such is the grape’s connection with the terroir here. Matured in foudres and older barrels, this is engagingly scented and refreshing, showing leafy, cut-grass aromas, bramble, plum and black cherry fruit flavours, scented mocha oak and filigree tannins. 2026-32."

Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.
Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.
Average age of the vines: 70 years old.
Density of planting: 10,000 vines per hectare.
Soil: clay
100% distemmed.
Very little intervention. Less pigeage (punch down of the cap) but some remontage (pump-over)
Robert Mondavi Winery Oakville Cabernet Sauvignon is made from 83% Cabernet Sauvignon, 11% Cabernet Franc, 2.5% Petit Verdot, 2% Merlot, 1.5% Malbec.
Aromas of plum, blackberry, fig, black tea leaf, subtle vanilla notes, sage, and tarragon. Layers of ripe dark fruit, baking spice, toast, and vanilla. Rich and juicy with a pretty structure and fine, well-integrated tannins.

Intense blackberries and black cherries on the nose lead to vivid focused cherries, blueberries and minty, spicy accents on the palate. Firm in tannins and fresh with good acidity, this outstanding wine is well-balanced.

The 2021 Cabernet Sauvignon Oakville is almost all from To Kalon. Dark blue/purplish fruit, lavender, mocha and licorice all build nicely in the glass.
