Mt Monster Cabernet Sauvignon is 100 percent Cabernet
Winemaking: Our Cabernet is fermeneted in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.
Tasting notes: Deep purple in colour. Classic aromas of lifted blackcurrant, blackberry and mint on the nose. Flavours follow through of sweet berry-fruit accented by fresh muddled mint. Elegant, structured palate with big velvety tannins.

The Bryson family established Mt. Monster wines in 2005 with pristine fruit from their cool climate vineyard at Padthaway. Environmentally friendly viticulture, hand pruned, low yielding mature vines, grown on terra rossa soil and exceptional fruit are how they consistently produce outstanding wines. Modern winemaking and minimal processing is employed to ensure the purity, integrity, texture and flavor from the vineyard.
Mt. Monster is a unique, rocky granite outcrop with panoramic views over the Limestone Coast, north of Padthaway.

Traditionally Mt Monster Chardonnay is 100% fermented and matured in stainless steel, this receives some lees contact to add texture and complexity to the palate, but essentially this wine is pure Chardonnay fruit.
Review & Tasting notes:
Bright straw color, with hints of lime green. Fresh figs and melon, with vibrant lemon citrus fruit. The nose also shows some yeast complexity from extended lees contact. Fresh tangy melon fruit flavors, & a clean acid finish. Although it may benefit from up to 2 years maturation in bottle, this wine is best consumed when young and fresh.

Deep purple in color. Ripe cassis and black plum fruits on the nose with violets. Varietal fruit-driven palate, with cassis and dark berryfruit and spice flavors. Soft tannins compliment the fruit with mouth-filling generous finish.

Holocene The Black Square Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
There is something ethereal about Cabernet Sauvignon grown in the cobblestone soils of the Walla Walla Valley. This region offers aromatic exuberance, elegance, finesse, a polished texture, layered complexity, and remarkable length. It is a place where one can craft a singular, stand-alone example of this varietal—unique not only in the United States but worldwide—while still echoing some of our favorite wines from Bordeaux.
In 2022, Winemaker Todd Alexander embarked on a new (yet familiar) journey that he had been patiently awaiting the perfect moment to explore. The Black Square is in its inaugural vintage, and this 2022 is 100% Cabernet Sauvignon grown in the Rocks District of Milton-Freewater, Oregon, which is part of the Walla Walla Valley.
The Black Square embodies elegance and grace framed by great structure, supple texture, and acidity to ensure longevity. It shows ample fruit with complex savory notes. This is not a heavy wine that is monolithic and dull—there are already plenty of those available. This wine offers a unique expression of Cabernet; it may be the most delicious wine Todd Alexander has ever crafted, venturing into new territory for Rocks District Cabernet Sauvignon.
Review:
As black as squid ink, The Black Square is balance personified. A concentrated blackberry aroma seems as dark as the wine's name, with equally dark espresso, olive and charred steak notes joining it in the abyss. A dark plum and ripe boysenberry flavor combo is accompanied by traces of salty Mission olives, wet slate and silky smooth tannins. I feel this wine expresses the greatness of California and its hidden pockets where Cabernet can excel. The cold Pacific Ocean running the entire length of the state presents maritime influences – and with each small distance eastward the climate warms. Stony soils, south facing slopes and moderately warm conditions are the keys to producing dark, rich and good tasting Cabernet.
This third vintage of Caymus California Cabernet bears all the hallmarks Caymus is known for – rich, ripe, round and supple, with luxurious tannins. Not bitter, and balanced.
It performs at the table, particularly with steak and red meats. While Napa brings a style all its own, Caymus California has a similar character, and Caymus is equally proud to release this wine.
