My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. This wine shows enough structure to be age-worth, yet soft and balanced enough to enjoy upon release. Flavors linger in this tasty, dense wine. Tastes like Oakville. -Heidi Barrett

"Pretty cassis and blackberry fruits as well as notes of cedar pencil, spicy oak, and tobacco emerge from the 2016 Cabernet Sauvignon Oakville. Medium-bodied, it has a balanced, elegant texture, moderate tannins, and a good finish. It's a complex, classy wine to enjoy over the coming decade or more. This is a classic, workhorse styled Cabernet from winemaker Heidi Barrett with lots to love. The blend is 87% Cabernet Sauvignon, 7% Merlot, 4% Petit Verdot, and the balance Cabernet Franc, all aged 20 months in French oak."

Jean-Michel Sorbe Quincy Blanc is made from 100 percent Sauvingon Blanc.
The first nose is expressive and opens up to notes of acacia, citrus (lemon, grapefruit). Full on the palate with lovely freshness. This wine boasts nice balance and good length.
The vines are 15 to 20 years old and are located on the left bank of the Cher River, southwest of Quincy. This vineyard enjoys good exposure to the sun and overlies hillocks composed of sandy alluvial deposits and gravel dating back to the Quaternary Period. Each terroir is managed with minimal intervention in an environmentally friendly approach. Vinification: Slow pressing. Fermentation took place under controlled temperatures (18°C).The wine was aged on fine lees for a minimum of 4 months. It was filtered only once before being bottled.
Pair with crustaceans, asparagus, or goat's cheeses.
After pouring, allow the wine to breathe for a few moments in the glass before enjoying so that it may fully release all of its aromas.
Robert Mondavi Winery Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 5% Petit Verdot, 3% Cabernet Franc, 1% Malbec.
The 2022 Robert Mondavi Napa Valley Cabernet Sauvignon shows notes of plum, blackberry, licorice, chocolate, violet, and warm spice. Dark plum and black fruit carry through to the palate. Fresh and lively with plush tannins and a polished structure.

"A solid representation of Napa Valley Cabernet Sauvignon, this wine sources fruit from St. Helena down to Carneros, with the bulk of the blend coming from the Wappo Hill property in Stags Leap. All five Bordeaux varieties are included in the blend. Fermentation begins with a cold soak in stainless steel, followed by 26 days on skins, and 18 months of ageing in 31% new French oak. The wine opens with powerful Kirsch aromatics, lifted by bright Bing cherry, warm baking spices, new wood cedar, and white pepper. It is plush and layered on the palate, with black-toned fruit and robust, lingering tannins that carry through a long finish of dark red and black fruit, warming spices, and mineral tension.
