Hermon is a small wine region located in South Africa and is 4,101 feet above sea level. Nestled on the slopes of Mount Hermon, the region still has most of the natural vegetation intact with a boutique wine industry that is gaining an excellent reputation.
Hermon is a tiny village and is one of four towns in the Riebeek Valley. Near Riebeeck Kasteel, Hermon is a popular destination for tourism with its olive groves and vineyards.
When apartheid ended in February of 1990, South Africa has been welcomed back on the world stage and is a major wine producer. The Western Cape plays host to 18 wine routes with some of them being the most beautiful on the planet.
Wine production goes back hundreds of years and was brought to the area by the French who left their homeland in droves during the mid 1600’s. Jan van Riebeeck planted the first vineyard in South Africa shortly afterward.
The semi-arid climate is classified as mid-latitude dry and enjoys a subtropical biozone. The soil has a loamy sand texture and is high in arenosols. Wines produced in the South Cape are bio-diverse thanks to the microclimates that are created by the Indian and Atlantic oceans.

Corinne Perchaud Chablis is 100 percent Chardonnay.
A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.
The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.
Pairs well with Oysters or shellfish and Sole Meunière.
Boussey Volnay Premier Cru Les Taillepieds is made from 100 percent Pinot Noir.
The grapes for this Volnay Premier Cru Les Taillepieds are coming from the vineyard located in the middle of the coteau, halfway up the hill, with a very nice South sun exposure, allowing to reach an optimal ripeness every year.
The wine displays a nice ruby and garnet color. It boasts aromas of red and black fruit, fig, and violet.
It always has a lot of finesse and elegance, but also a great length to the finish, with juicy and round tannins.
Pair with frog legs with parsley and garlic, omelette, duck and cheese.
Slightly filtered before bottling.The wine is then aged in French Oak barrels for 12 months. (25% new barrels).
The Volnay Premier Cru Les Taillepieds is vinified in temperature controlled stainless steel tanks.
