Huis Van Chevallerie is responsible for producing some of the Best Sparkling Wines from the Swartland. Their Sparkling Chenin Blanc Brut Nature is called Filia.
Origin of the winery's name:
It’s the surname we were allocated with and due to the fact that Domains is referred to as Estate and needs special registration, we decided on Huis (afrikaans word for Domaine) van (afrikaans for the German aristocratic titel von )van Chevallerie.
First generation German born here on the Farm where we farm the grapes, my father Juergen bought the little 110ha/271 acre farm in 1956. My grandmother even farmed here with him for 10 years before my father got married to my mom in 1970, my sister and I were born here and grew up on the farm.
Huis Van Chevallerie Vineyards:
Nuwedam Farm, is situated in the Paardeberg, just off the R45 outside Malmesbury, and is the Chevallerie owned corner of some unique Swartland terroir – purchased by our father, Juergen von La Chevallerie in 1956.
Old Chenin Blanc bush vines, yielding the clusters of fruit for my Kap Klassiek were planted by him in 1976. At an altitude of 330 m the vines are planted on a north-northeastern facing slope, which means that they have no respite from the merciless summer sun which bakes the Swartland during the summer. These old vines rely here solely on the winter rains and the minimal stores of subterranean water that lies deep beneath the surface.
However, the elevation, the clay content of the soils, the frequent summer showers and an almost clockwork breeze which tumbles down the Paardeberg during the summer months significantly cools the vines creating the ideal micro-climate for the fruit to ripen optimally. Vineyards are all dry-land farmed and we apply environmentally friendly farming to ensure continued health of these old bush vines and the surrounding environment – as healthy soils, provide healthy vines.
Production from these old vines is extremely low; they only produce as much fruit as they are “comfortable with” and for the past few years, that has meant a meager yield of 1.2 tons/hectare (9hâ„“/ha). However, the fruit these vines produce possess an exceptional richness, complexity and depth of flavour – even though the fruit is harvested at relatively low sugar levels, the inherent Chenin richness comes to the fore.

Raats MR Mvemve Raats de Compostella is made from 63% Cabernet Sauvignon, 17% Cabernet Franc, 12% Malbec, 6% Petit Verdot, 2% Merlot
The name de Compostella (meaning “field of stars” or “compilation of stars”) was chosen to reflect the fact that each component is crafted to stand alone as a world class varietal wine. The wine exhibits a deep, dark ruby color. Blackcurrant and black cherry fruit with hints of violets, cedar and cinnamon are revealed on the nose. The palate is rich and complex with mineral, blackberry fruit and dark chocolate on the finish. The five Bordeaux varietals harmoniously convene in this consistent, linear flavor profile that is polished with a well-defined finish.

he 2020 De Compostella is composed of 30% Cabernet Franc, 28% Cabernet Sauvignon, 21% Malbec, 16% Merlot and 5% Petit Verdot. Beginning with a focused, juicy and complex nose of dark red fruits, the wine has impeccable balance between oak, fruit and earthy floral tones. Full-bodied and with succulent acidity, the palette offers a firm frame of fine-grained tannins, while the fruit profile makes way for elegant earth and notes of crème de cassis sway with subtle flavors of sage and spiced plum. The red blend continues to somersault and reveal its complexities over the long-lingering and ever-evolving finish. Be patient with this exceptional wine

Mollydooker Blue Eyed Boy is made from 100 percent Shiraz.
Dense in color with vibrant dark purple hues. A complex, alluring and lifted nose of blueberry, dark cherry, caramel and hints of vanilla bean leap from the glass. Powerful yet delicate, the wine voices luscious layers of fresh berries, black pepper, coffee and a finishing note of chocolate cream. Full bodied, well defined tannins provide the backbone, as the wine fills the mouth and continues to evolve with every glass poured.

The Blue Eyed Boy is Sarah’s son, Luke. Stomping grapes as a kid and now heading up the Mollydooker Sales Team.
TASTING NOTES:
The 2022 Blue Eyed Boy is impressively deep in colour, displaying vibrant dark purple hues. Its aromatic profile is both intricate and inviting, with scents of blueberry, fresh plum, and subtle hints of mocha cream bursting from the glass. This wine is a balance of strength and finesse, delivering layers of lush, fresh berries and a touch of aniseed spice, culminating in a final note of creamy chocolate. With generous and dynamic layers, the wine allows the gentle tannins to craft a smooth and enduring finish, ensuring a truly memorable experience.
TECHNICAL NOTES:
The grapes were grown on the Coppermine Road, Gateway, Long Gully Road and Mollydooker Home vineyards in McLaren Vale, and Joppich vineyard in Langhorne Creek. Barrel fermented and matured in 100% American oak, using 54% new and 46% one year old barrels. The required Marquis Fruit Weight™ for the Family Series is 75% – 85%. The Actual Fruit Weight for 2022 Blue Eyed Boy is 79%.
