As Hightower Cellars' signature wine, Cabernet Sauvignon is a classic Red Mountain wine – bold and full of the flavors that make this region so special. As much as possible, Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.
Aromas of tart blueberry and lush red cherry dominate the nose, while firm tannins and full body lend structure to this inky, pigmented wine. The palate features notes of dark fruit, fresh cut wood, and dried tobacco. This wine is an excellent candidate for decanting, as the aromas evolve wonderfully over time to express softer, lush fruit and hints of herbs and spices.

I loved the 2019 Cabernet Sauvignon Red Mountain, which is loaded with sweet red and black currant fruit as well as some classic Cabernet spice, tobacco, leather, and loamy earth notes. This medium-bodied, nicely balanced, concentrated Cabernet Sauvignon has enough concentration and structure to evolve for a solid decade.

Klipsun Cabernet Sauvignon Red Mountain is made from 84% Cabernet Sauvignon, 4% Merlot, 4% Malbec and 8% Syrah.
The 2017 vintage started out with a cool, wet winter, with significantly above average snowfall in eastern Washington. Red Mountain had a 24% increase in rainfall in 2017 over the 10 year average. Going into spring, the cool trend continued. As a result, bud break at Klipsun was behind the historical average and significantly behind the most recent warm vintages of 2013 2016. Bloom was also slightly delayed. Because of the cool weather, set was lighter than usual which translated into significantly less fruit in 2017.
The early part of the summer saw average temperatures followed by above average temperatures in July and August. As a result, he at accumulation was a bit above average for the season, despite the cool start. And because of the smaller than normal yield, harvest began right on schedule, perhaps even a bit early for some of the whites. In the second half of September, when Klipsun traditionally harvests all the reds, the temperatures cooled considerably, which delayed ripening. This allowed for luxurious amounts of hang time without the threat of increased sugar accumulation, stretching harvest into the first week of October. A s a result, all fruit going into the 2017 Klipsun Cabernet Sauvignon could be picked at perfect sugars levels with great fruit maturity and flavors. Overall, the quality of t he 2017 harvest is as high as the 2016. However, the style is slightly different. The 2017 wine has a firmer structure, more spice & mocha in the nose and will take a few mo re years than the 2016 to reach a perfect balance between fruit and tannin.

The 2017 Cabernet Sauvignon Red Mountain is composed of 84% Cabernet Sauvignon, 4% Merlot, 4% Malbec and 8% Syrah, which immediately emanates with aromas of dark roasted espresso bean, toasted oak, dried tobacco and dusty black fruit tones of cassis, currant and blackberries covered in dark cocoa powder. Full-bodied, generous in complexity and still tight in the mouth, the wine unpacks layers of cedar and vanilla tones with dusty purple flowers and bitter dark chocolate across the mid-palate, giving way to fine-grained tannins that will loosen with time. As the wine sits on the palate, the 100% French oak regimen is on full display for all to see. The wine lingering long and continues to evolve in the mouth, ending with a drying finish that highlights the oak and terroir. It’s still a baby, and I would keep it in the cellar for another few years before popping the cork—this will effortlessly coast for more than a decade. The 2017 vintage marks the second release of this wine, with 6,300 bottles produced. It comes from its namesake vineyard, first planted in 1984 on Red Mountain. I’m keeping my eye on this producer. I’m impressed, and even though the oak may be a bit much at the moment, it's still delicious. - Wine Advocate 94+ Points
Lokoya Spring Mountain Cabernet Sauvignon is made from Napa Valley Cabernet Sauvignon.
Review:
The 2018 Cabernet Sauvignon Spring Mountain District is a monster of a mountain Cabernet that has a primordial bouquet of blackcurrants, smoked earth, chocolate, and graphite. While Spring Mountain wines tend to be more aromatic and complex right out of the gate, that’s not the case here, and this is going to need bottle age to round into form. Full-bodied on the palate, with a rich, concentrated mouthfeel, it has serious tannins, notable purity of fruit, and a great finish. With air, it picks up more and more classic Spring Mountain floral and exotic notes, and it’s flawlessly balanced, with gorgeous tannins and a great, great finish. This is a brilliant wine in the lineup and unquestionably one of the true gems from Spring Mountain in 2018. Give bottles 4-5 years and enjoy over the following 2-3 decades.

Murray Cabernet Sauvignon Red Mountain is made from 78% Cabernet Sauvignon, 10%, Merlot , 6% Malbec, 6%, Petit Verdot.
A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.

If the Horse Heaven Hills releases is Graves-like, the 2018 Cabernet Sauvignon Red Mountain is the Pauillac in the lineup and has a more concentrated, austere style that needs lots of air to show at its best. Gorgeous cassis and black raspberry fruits as well as notes of graphite and lead pencil along with a terrific sense of chalky minerality give way to a full-bodied, powerful yet still elegant Red Mountain Cabernet Sauvignon. Delivering building tannins and good acidity, it will need 7-8 years of bottle age to hit maturity and should see its 30th birthday in fine form. This wine is 97% Cabernet Sauvignon and 3% Merlot, brought up in 75% new French oak, and the vineyard sources are Klipsun and Red Mountain Vineyard.

Former Dolphin QB Damon Huard had to travel 3000 miles away from home to learn about the fine wines coming from his home state of Washington. It was teammate and NFL Hall of Famer, Dan Marino, who went into his personal cellar to introduce Damon to Washington State wines during the 1997 season. Over the next decade, the formers QB’s conversation about wine evolved into a discussion about owning and operating their own winery upon Huard’s retirement and return to Washington State. Damon’s family has deep roots in the heart of Washington wine country, helping pioneer the valley into the agricultural powerhouse that it is today. “The vision of making a truly great Washington wine is one that Damon and I have shared for a long time,” said Marino, one of the most decorated quarterbacks in NFL history and a member of the NFL’s Hall of Fame. “Although there are more than 900 wineries in Washington State, we believe the industry is still in its adolescence and we want to be part of it as it grows into the world’s next great wine region.” Passing Time was launched with the 2012 vintage of cabernet and released in the spring of 2015 to rave reviews from wine critics and customers alike.
Passing Time may seem like an obvious name for a wine brand that includes two former NFL quarterbacks as partners, but it wasn’t that easy, Marino said. “There’s the subtle football reference. When it’s fourth down in the red zone and you’re down by six with seconds left, it’s ‘Passing Time.’ And when you’re enjoying a bottle of great wine with good friends, it’s just Passing Time. We think it’s the perfect metaphor for the wine, and we can’t wait to share it with wine lovers who share our passion for great wine.”

We are proud to have Chris Peterson as our consulting winemaker. After spending eight years as Assistant and Production Winemaker at DeLille Cellars, he co-founded Avennia in 2010. Peterson’s wines have found considerable acclaim from critics locally and nationally. He was recently named the 2017 "Winemaker of the Year" by Seattle Magazine.
Before his Woodinville career, Chris was the first graduate of Walla Walla’s highly regarded School of Enology and Viticulture, where he also taught a Wines of the World class. His travels to and study of Old World wine regions have informed his desire to make unique and compelling wines using traditional techniques. His years in the Washington wine industry and the quality of his work have allowed us to partner with premier sites to fulfill the Passing Time vision.
Avennia Sestina Cabernet Sauvignon (Red Blend) is made from 77% Cabernet Sauvignon, 17% Merlot, 6% Cabernet Franc
The Sestina is a poetic form from Medieval France. Just as a contemporary poet can use an old form like the Sestina to express modern ideas, we use the traditional Bordeaux blend to make modern wines that express Washington fruit. Sestina is our vision for an old vine blend where the focus is on structure, balance, and complexity. This wine is designed for the cellar, but is enjoyable now.
Sestina: This wine is a blockbuster, with black currant, black raspberry, saddle leather, freshly tilled earth, vanilla, and violet on the nose. Exceedingly rich and balanced on the palate, with great poise and structure for long aging. The finish echoes with fresh black fruits, minerally touches, and floral notes.

"The Cabernet Sauvignon-dominated release from Peterson, the 2017 Sestina comes from the Red Willow, Bacchus, and Dionysus vineyards. Rocking levels of crème de cassis, sappy herbs, violets, and cedar pencil all flow to a full-bodied, incredibly pure, polished 2017 that offers flawless balance, ripe tannins, and a great, great finish. It's more approachable than normal yet is still going to evolve for 15 to 20 years. The blend is 77% Cabernet Sauvignon, 17% Merlot, and the rest Cabernet Franc, all raised 20 months in 50% new French oak."

Guillemot-Michel Vire Clesse is made from 100 percent Chardonnay.
Beautifully expressive, with yellow fruits, orange blossom, smoke & flint. Thick and saline on entry, then seriously deep in the mid-palate, with suggestions of exotic fruits perfectly countered by strong minerality. This wine strikes a perfect balance between sweet and salty elements, and it shows vibrant acidity. It boasts a thickness that few other northern Mâconnais can match.
Enjoy with fish (such as sole meuniere), seafood, roasted chicken, goat cheese.

"The 2018 Viré-Clessé Quintaine is showing beautifully, wafting from the glass with a lovely bouquet of honeyed citrus fruit, fresh pastry and orange blossom. Medium to full-bodied, satiny and supple, it's elegantly textural and refined, with a fragrant core of fruit and a long, penetrating finish. Even though it will reward a bit of bottle age, it's slightly finer-boned than the more concentrated, muscular 2017, so I would opt to drink this immensely charming wine before its older sibling. – William Kelley"

Dark ruby color. Aromas of cherry, currant, vanilla bean and hint of tar. Full-bodied, with flavors of cherries, cocoa powder and oak. A touch of sweetness on entry with a little bit of air with soft tannins that are starting to integrate well.
The latest step in the project is Vinsacro (formerly Valsacro) Dioro. The earlier Valsacros were made from a field selection of the older vineyards. Now, thanks to the new facility Amador has been able to build an upmarket version of Vinsacro (formerly Valsacro) with a four-stage selection process that includes an initial field selection of the fruit followed by a second table selection as the grapes come into the winery. After fermentation wine from selected tanks is transferred to new French oak barrels for 12-14 months of barrel age. Finally, the best barrels are set aside for Dioro and the remainder used to "upgrade" the normal Vinsacro.
Vinsacro Dioro is a blend of grapes from 100+ year old "vidau" vineyards where many varieties were planted together in the same plot.
Today the grapes are harvested and vinified separately. The final blend depends on the vintage but typically it's Tempranillo (50%), Garnacha (20%) and remaining 30% is a mix of mainly Graciano (10%) & Mazuelo (10%) with a little of Monastrell (5%) & Bobal (5%).
