Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, usinglocal, seasonal and organic ingredients as much as possible.
Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories.
Our barrel aging program will feature beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Tasting notes:
Our 2017 Blanc de Blanc is made with 100% estate-grown Chardonnay. Aged for a minimum of 36 months on lees. Bright green apple and fresh citrus notes with layers of brioche and yeast complexity. An excellent balance of acidity, creamy mousse, and textures that persist with a long and elegant finish.
Pair with any special occasion. Make a Tuesday dinner special. Enjoy with mild cheeses, scallops, or serve as an aperitif.
Mt Monster Shiraz is 100 percent Shiraz
Deep purple in color. Ripe cassis and black plum fruits on the nose with violets. Varietal fruit-driven palate, with cassis and dark berryfruit and spice flavors. Soft tannins compliment the fruit with mouth-filling generous finish.
French & American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.
Our Shiraz is fermented in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7–10 days on skins to aide in the extraction of soft fleshy tannins and build wine structure.
