Pinot Noir is a variety of black wine grape that comes from the French words “pine” and “black.” These dark grapes are grown mostly in France’s Burgundy region, but it is also grown all over Europe, and in parts of South America, Canada, and the United States, and Pinot Noir vines thrive in cooler weather. The variety is especially sensitive to wind, frost and diseases. Although it is considered as a variety that produces the finest wines in the world, this variety is difficult to grow and cultivate. Pinot Noir wines are popular, with black and red cherry aromas, currant notes, and berry flavors. Depending on the growing conditions, Pinot Noir wines can also produce earthy tones, tomato aromas, or a wood-like flavor. The variety is also used to create Champagne, rose wines, and vin gris wines. The versatility that this wine has when pairing with food makes it very popular. It is one of the lightest red wines in its class. Pinot Noir is an excellent companion to various poultry dishes such as chicken, pork, ham, duck, or goose. This wine is also perfect with Filet Mignon, Boeuf Bourguignon, and various cheeses. The wine is one of the versatile food wines in the world.

Beautifully complex and alluring, this remarkable wine embodies the majesty of the Anderson Valley, offering tantalizing aromas of Luxardo cherry, blackberry compote, white pepper and sweet baking spices, as well as hints of star anise and sea breeze salinity. On the palate, luxurious black and red berry flavors are framed by plush tannins and bright, balanced acidity. Beneath the fruit, subtle layers of earthy minerality emerge to create a lush and sophisticated finish.

From the best lots on the Golden- eye Estate, this wine aged in French oak for 16 months. Scents of wild cherry and sage are off the charts. Undeniable vibrancy, generous fruit, and floral notes create a mael- strom of flavor and texture that complements the wine's intensely high energy. Earthy, salty notes manifest in a kiss of soil, balsamic, cinnamon, and cedar.

Limpid ruby-red. Fresh red berries, blood orange, floral and baking spice qualities on the incisive nose. Juicy, focused and lithe on the palate, offering subtly sweet raspberry and cherry flavors and building spicecake and cola nuances. Closes long and nervy, with discreet tannins framing repeating floral and spice notes.

This mountain grown wine shows expresses ripe fruits of the warm days and the acid balance from the cool nights. Vibrant fruit aromas of blueberry, raspberry, and plum are the hallmarks of the aromatics along with a subtle cedar/cigar box note. These aromatics lead into voluptuous flavors of berries and spice in this structured, yet lively Pinot Noir.
In the Anderson Valley of Mendocino County the local residents speak an obscure dialect of English known as Boontling, developed in the late 1800s. The “Muldune Trail” was a term used in Anderson Valley lore o¬en describing the road traversing the ridge to Ukiah. There are other definitions of hitting the “Muldune Trail” that we will leave to the drinker to discover!

Pouring a deep ruby, the 2021 Pinot Noir Muldune Trail is more extracted with kirsch, polished leather, lavender, and pine. Full-bodied, this is the most powerful wine in this lineup, while having a luxurious feel, a velvety texture, and plushness throughout. Offering notes of turned soil and wooded earth, with meaty berry fruit and black tea, it’s a substantial wine but is well-made. Drink 2025-2040.

Single vineyard Pinot Noir with a dark red brick color. Lots of ripe raspberries, wild strawberries, forest floor, cedar and a salty whiff of pine on the nose. The palate adds both herbal and peppery components as well as roasted coffee notes with a bit of caraway seed. Recommended to serve it slightly chilled in a round glass.
Braised beef with dumplings, lamb crown and brussels sprouts, roasted veal liver with pumpkin squash or tagliatelle with blue cheese.

Hickinbotham Trueman Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
Trueman represents Cabernet in Clarendon at its best. Its purity, its elegant style, its supple, polished nature ... it’s a wine of its own.Distinct in character, this is not like Cabernet from the Vales below or the hills to the east. From its pretty, delicate florals and musk, through to its silky blackcurrant and kalamata juice and down to its dark carbon soul - Trueman is a modern Cabernet that encapsulates all the toil and antiquity of Clarendon. Echoing the unearthed prose of wine writer Ebenezer Ward from 1886 on theCabernet sown from this very land – Trueman is “an excelled wine, of very marked flavor and bouquet”.

Deep garnet/purple, the 2012 Cabernet Sauvignon Hickinbotham Vineyard has a classic nose showing pronounced fresh blackcurrant and blackberry highlighted by cloves, menthol, pencil shavings and earth notes. Medium to full-bodied, taut and muscular, the palate has grainy tannins, nice freshness and a long finish.

Corinne Perchaud Chablis 1er Cru Fourchaume is made from 100 percent Chardonnay
Elegant citrus aromas. Concentrated and finessed, combining flavors of dried fruit with slight hints of woody notes. Perfect balance between body and acidity, long and persistent finish. This one is drinking great now, but as with all exceptional Chablis, it is possible to pay it down for years to come.
Made from 35 year old vines. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.
Pair with Scallops Jacques cream, roast veal with oyster mushrooms.
