Each year, Sea Smoke's goal for Southing is to create the ideal marriage of complexity and elegance. The ever-changing nose of the Southing exhibits fresh currant, slight strawberry and rose aromas with notes of dried fruit, fennel, clove and nutmeg. The fine tannins and minerality are enhanced by the estate vineyard's characteristic cool climate acidity.
I feel this wine expresses the greatness of California and its hidden pockets where Cabernet can excel. The cold Pacific Ocean running the entire length of the state presents maritime influences – and with each small distance eastward the climate warms. Stony soils, south facing slopes and moderately warm conditions are the keys to producing dark, rich and good tasting Cabernet.
This third vintage of Caymus California Cabernet bears all the hallmarks Caymus is known for – rich, ripe, round and supple, with luxurious tannins. Not bitter, and balanced.
It performs at the table, particularly with steak and red meats. While Napa brings a style all its own, Caymus California has a similar character, and Caymus is equally proud to release this wine.
