The Saijo prefecture is renowned for its sake and it is a beautiful region that boasts of cool temperatures and famous sake breweries. The prefecture features eight breweries that sit close to the Saijo Station. During the months of brewing, a fine sake scent will drift through the air in the region. In the 16th century, the wine has been produced in the region, but the region started bustling as a center for sake production in the last century. The Saijo prefecture has seen the invention of several varieties of sake techniques that were discovered in the region. Since the region’s best water sits on a tiny part of the region, many of the breweries are situated near that area. These breweries are packed together and feature a characteristic look, including a high chimney and black and white buildings. Breweries in the region combine the water with rice grown in Hiroshima, which produces distinguished Saijo sake that features light flavors. Every year, the region hosts a Sake Festival where almost 1,000 varieties of the wine can be tasted. Every brewery will join in on the 2 day event and the festival draws in almost 200,000 visitors. Visitors can also take a tour of a sake brewery and sample varieties of the wine.

Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.
Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.

Babylons Peak Chenin Blanc is made from 100 percent Chenin Blanc.
Babylon's Peak winery, situated on the highest weathered granite slopes of the Paardeberg Mountain, is privately owned by the Basson family who has passed down the tradition, passion and art of winemaking over four generations. Predominantly low-yield dryland bushvines are selected to produce these excellent wines with distinctive character.
The Chenin Blanc grapes were picked from very old dryland bushvine vineyards. The vineyard grows on weathered granite soils, contributing to the flavor of the grapes and mineral character of the wine. Production is limited to 5 tons/ha.
The grapes were harvest by hand at 22.1°B. The grapes were destalked and lightly crushed. Only the first 450 litres free-run juice per ton were fermented in stainless steel tanks at a cold temperature (10-12°C) for 21 days. The wines was left on the fermentation lees until bottling.
