The wine region of Toro is in Zamora, which is a province of Spain. Just northwest of Castile and Leon, Zamora is located in the southeastern corner of Toro and includes the area’s known as Tierra del Vino, Valle del Guareña and Tierra de Toro. Toro also borders Tierra del Pan and Tierra de Campos.
Wine production in Toro dates back to the end of the 1st century BC when ancient Greeks taught wine making to the Celtic Tribes. During the Middle Ages, Toro wines were the first to be traded in the Duero River region. King Alfonso IX granted lands to several religious orders with the understanding that they would plant vines, and many of the 40 churches that exist in Toro today were built thanks to the the wine trade.
Toro experiences an extreme continental climate with long, hot summers and cold winters. Temperatures can vary greatly and range between 12° in the winter to 98.6° in the summer. Rainfall is late with Toro receiving about 2,600 hours of sunlight every year.
The soil in Toro is formed by sediments of clay, sand, and lime-bearing puddingstone that produce dark lime-bearing topsoil, with coarse and fine sand.
Harvested from over 30 years old vines, this wine fully expresses the fruit's liveliness. Fresh and fruity on the nose with aromas of cherries in alcohol, fresh figs, raspberries and plums. These perfectly integrate with hints of aromatics such as thyme and eucalyptus in addition to subtle notes of hazelnuts, tobacco and cinnamon. The mouthfeel is fresh and balanced, with a predominance of fruit flavors.

Review:
"Biscuit-like aromas with grilled nuts and chocolate oak-influence, across ripe dark berries. The palate has a very succulent, sweet-fruit core with plenty of ripe mulberries and plums. Supple tannins. Drink or hold."

Finca Sobreno Ildefonso Toro is made from 100% Tinta de Toro
Very Old Vines (Minimum 80 years of age)
Aged in 100% new French Oak Barrels for 18 months + 12 months in the bottle
The wine is produced in very limited quantity from the estate's oldest vineyards (80 years old vines) and is fermented in 2,000-liter open-top fermentation vats. Our winemaker punches down the cap by hand three times a day using the traditional pigeage method to ensure optimal extraction.
The name of the wine is the surname of the San Ildefonso family, father Roberto and daughter Paloma, and represents the apex of their winemaking tradition.
Tasting notes
Deep cherry color.
Very expressive, elegant and complex with ripe fruit, mineral notes, sweet spices, chocolate aromas and intense toasts.
Powerful, tasty, round and very smooth. We find again black berries, mineral notes, chocolates with roasted aromas. Very long after taste.
Soil types:
The soil is formed by sediments of sand, clay and limestone, which produce a dark lime-bearing topsoil, with fine and coarse sands.
This year we had low rain falls getting very healthy bunches. Besides, cool nights and not very hot days at the end of the cycle were excellent for a complete ripening of the grapes, full of nuances.
Winemaking and aging
The fruit is manually selected and picked in small cases. After destemming the grapes are stored in 2.000 liter open fermenter tanks and cold maceration at 8ºC during 8 days. Three times a day the cap of the skins is submerged manually (pigeage) and after the alcoholic fermentation is finished at a controlled temperature, the wine is macerated until the wine maker determines the appropriate extraction polyphenols. The malolactic fermentation is carried out in new French oak barrels. The wine was aged in new French oak barrels for 16 months, followed by another 12 months minimum in the bottle.
Ideal for red meats, lamb, roasted meat and strong cheeses
Review:
Black fruit and power from lots of new flashy oak. Coconut, coffee and mocha flavours; ripe and soft palate with an earthy texture. Long finish.

Weingut Prager Stockkultur Achleiten Gruner Veltliner Smaragd is made from 100 percent Gruner Veltliner.
Franz Prager, co-founder of the Vinea Wachau, had already earned a reputation for his wines when Toni Bodenstein married into the family. Bodenstein’s passion for biodiversity and old terraces, coupled with brilliant winemaking, places Prager in the highest echelon of Austrian producers.
Smaragd is a designation of ripeness for dry wines used exclusively by members of the Vinea Wachau. The wines must have minimum alcohol of 12.5%. The grapes are hand-harvested, typically in October and November, and are sent directly to press where they spontaneously ferment in stainless-steel tanks.
Stockkultur is a 0.3-hectare plot at the top of Achleiten and was purchased by Toni Bodenstein in 2005. The name refers to the old style of training each vine to a single stake; the traditional method of vine cultivation in the Wachau before the 1950s. The vines planted in 1938 are among the oldest in the Wachau.
Tasting Notes:
Prager’s stylistic signature is that of aromatic complexity coupled with power and tension. High-density planting and long hang times ensure ripe fruit flavors and concentration, yet allowing leaves to shade the fruit lend vibrant aromatics of grasses, herbs, and wildflowers. Minerality is a constant feature of any Prager wine.
Food Pairing:
With minimum alcohol of 12.5%, Grüner Veltliner Smaragd is a concentrated and full-bodied dry white wine. Its intensity of flavor and ripeness of fruit make it ideal with high-integrity ingredients such as seared white fish or sautéed spring vegetables. Grüner Veltliner is a classic accompaniment to Wiener Schnitzel.
Review:
From vines planted in 1937 and picked as the first of the Smaragd wines, the 2020 Ried Achleiten Grüner Veltliner Smaragd Stockkultur (planted with 15,000 vines per hectare) opens with a spectacular deep and complex but refined, fresh and flinty bouquet with intense, ripe pear and biscuit aromas. On the palate, this is a dense and lush yet pure, elegant and complex, wide and powerful but also mineral Achleiten with a long, finely tannic and still sweet finish (due to more than 30 grams per liter of dry extract). Tasted at the domaine in June 2021.
At Prager, I could not determine that 2020 would be inferior to the 2019 vintage; on the contrary, the 2020 Smaragd wines fascinated me enormously in their clear, cool, terroir-tinged way. A 38% loss had occurred mainly because of the hail on August 22, although predominantly in the Federspiel or Riesling vineyards. There was no damage in the top vineyards such as Ried Klaus, Achleiten or Zwerithaler. "Interestingly, the vines are in agony for about two weeks after the hail. There was no more growth, no development of ripeness and sugar," reports Toni Bondenstein. The Veltliner then recovered earlier, while even picking a Riesling Federspiel in October was still a struggle. "Why Riesling reacted more intensively to the hail, I don't know myself either," says Bodenstein. Whole clusters were pressed to preserve acidity and to compensate for the lower extract, and compared to 2019, the 2020s were left on their lees longer. In June, however, the 20s in particular showed outstanding early shape.
